Couple of subbing questions ~natural sweeteners

Hey Grainlady~(I know you'll peek in.) but really anyone...

I just printed off some recipes using coconut flour and Virgin Coconut Oil (which I happen to have because I make lotion bars with it)..anyway..

some of the recipes call for Brown Rice Syrup and whole sugar.

Can I sub the Agave for the Brown Rice, or should I use Karo?

And I have C&H Raw sugar..is that whole sugar?

googled it myself...

Looks like molasses or maple syrup at lesser quantities for the brown rice syrup.

Hmmm and the only thing I could find on whole sugar subbing is date sugar.

Guess I'll just have to figure this out on my own.

You can use cane syrup for the brown rice syrup. Just a personal opinion but I no longer use Karo because they now put as much as 50% High Fructose Corn Syrup in it. It used to be 100% natural corn syrup until a few years ago. I have started substituting cane syrup for all recipes that call for corn syrup. For raw sugar I use either regular white sugar or the granulated brown sugar (not the wet brown sugar).

What is your take on the track and snow amounts on the storm tomorrow? Every forecaster is different. I've seen or heard everything from 1-3 inches for us to 9-13 inches. One forecaster said the two main computer models are almost 200 miles off on the predicted track. Sorry, we were doing kid stuff yesterday afternoon & I was off-line. I was surprised to hear the 1-3" forecasts yesterday, as the low hit the coast way down over SoCal and no evidence of a northerly track, and you see it today over SoNM and making TX unhappy. The old guys who taught me were always skeptical of model runs and relied on patterns and their memories - our forecast meetings always had a question for the experienced forecasters: 'what was your first guess' and much more often than not the first 'guess' was the one that verified. That said, the next bad boy out there off the coast has somewhat less energy as the one last week, not quite as deep or moist but could have winds that rival last weeks' if it doesn't fill while over water. Folks with animals need to start watching the forecasts closely as they'll start to be vulnerable if these next ~two weeks' worth of storms start to swing up north of Albuquerque and take the spring storm tracks, which should come earlier this year. The Aleutian low looks like it wants to set up too far offshore, and that means the surface lows that come ashore come south and swing up thru NM. So far they've been way south, but as time goes on they move N. If you are running short of hay and were going to go in a couple weeks, you may want to think about going sooner rather than later if you have room. That's how it looks like it is shaping up today. sub lingual Vit. B12 anyone...?

People take B12 for energy boosts but it rarely does that to me. Sometimes I can notice a sense of healthiness the next day after taking the pill or when I sometimes do the liquid (also kept under the tongue). My doctor does very thorough blood work so I monitor the levels once or twice each year. They were having trouble getting the dosage right for my Thyroid medicine so I had to do a lot of lab tests in the course of a year so I got to double check my vitamin levels often. I was told by another doctor that sub-lingual was not as effective as injection. There is even a medical hot line where you can ask a question and they will call you back with the answer within a week (I think it is operated with Med students). I asked the question there and was told that sublingual is a third less effective, or more. But, you can take a pill every day if you need so I think it works out fine. In my case it wasn't giving myself the shot it was the amount of stuff I had to inject into the muscle that was a problem. Now all I have to do is take one pill per week. The liquid B12 is usually near the pills at the drug store, if you don't want to take a pill.

I'm going with Thermador for the same reason as @Kelley Dockrey. I had Thermador columns in my previous house and never had a problem in 12 years. I wanted a Subzero this time because I'm going with a 36" over under and really like the layout of theirs but I won't wait over a year, especially when the company isn't up front about how long it will take. To answer your question, I think SZ is the only one that makes a built in 42" french door fridge.

So I just talked to another mutually connected neighbor, and learned something very interesting. Some years ago the owners tried to sub divide and build houses in the back of their lot (what I want) without doing any zoning or City planning, and someone reported them and it got nixed. In my neighbor's words, they wanted some 'quick cash' for the land. However we're not planning on building housing, nor providing any sort of utilities or car access to the land. I would also go through proper channels so likely won't have the same issue. But the point is is that they seem willing to part with the land based on what I was just told. @pennfire thank you for the advice. I will look into any sort of minimum lot sizes. I'm hoping there won't be very many regulations given the lot is not going to be developed and it's more of just moving fences. Our municipal government is very small and does not have too many restrictions in general, but you never know til you check. @lyfia very interesting point about apples to apples comparisons. In my head, I was just dividing their lot by acreage to get a general price. But you are likely correct that the land is worth more than that due to the value of a small lot in this area. The only saving math in my direction is this lot would be completely landlocked by many other properties and I think it's unlikely they could develop there without selling the entire property. The lots around here are a ridiculous mishmash of shapes and sizes, I wish I could share a map just for the fun of it but I don't give out my address online.

Brown Rice Syrup - is half as sweet as sugar, so equal amounts of agave nectar would be way too sweet, but 1/3 or 1/2 that amount would probably work.

Brown rice syrup is also much thicker than agave nectar, so you may have a hydration difference you'll need to correct in the dough/batter.

A 50/50 mix of agave nectar and molasses or 100% cane syrup would work. The mild-flavored agave nectar would help cut the taste of molasses or cane syrup which are very strong to be using in large amounts. Especially compared to mild-tasting brown rice syrup.

I'd be inclined to use Golden Syrup (Lyle's Golden Syrup is one brand). It's another cane sugar syrup and is thicker than honey/agave nectar/maple syrup and has a mild flavor like brown rice syrup, but will be a little sweeter than brown rice syrup.

Dancinglemons suggestion to use 100% Pure Cane Syrup is a good one (I use Steen's brand), but it adds a lot more flavor than you find in brown rice syrup.

Personally, I just plain disliked the flavor of brown rice syrup.

* Raw Sugar - is refined to produce pure sucrose (which is still plain old sugar). Turbinado or your C&H Raw Sugar will work well as a substitute. Sucanat would also work. Sugar is sugar (sucrose). The size of the granules is what you'll find different in this case, plus a little of the natural color and minerals. If you find the more "natural" forms of sugar aren't dissolving well, you can give it a quick zip in a blender or small food processor and it will become "powdered" sugar and will dissolve better.

Raw date sugar isn't a good substitute in my opinion, since it doesn't "act" like sugar in cooking and baking. It's okay to add to a topping, such as a crumb topping, but the chemistry of sugar just isn't there for baked goods. It doesn't dissolve readily (you usually need to dissolve date sugar in water before use and it still leaves a large amount of solids that never dissolves), it will ALSO add a great deal of date flavor, and it burns VERY easily.

I'm with dancinglemons, I also avoid high fructose syrup and wouldn't use Karo (and haven't for many years now). From past experience using brown rice syrup, Karo would also be much sweeter. White Karo would have the least flavor, but more sweetness than brown rice syrup.
