Rice Flour and Wondra

I'm very curious if any of you use rice flour or Wondra and how you use it.

A while back I read that many Scottish bakers use rice flour for at least some of the flour in shortbread cookies. I tried and we liked it. They had the sandy texture I often think is missing when using only regular flour.

I made a tempura batter recently that used rice flour and beer as the main ingredients and we thought it was really good.

Tonight I'm going to substitute half rice flour for the flour in a batch of corn fritters and see what happens.

And as for Wondra, I read about a chef who uses Wondra to flour chicken wings, chicken thighs, etc., before frying them. I've tried it with several things from chunks of chicken thighs for Asian dishes to fried fish and fried zucchini (although here I mix it with cornmeal).

I've not used either of these two items much in the past, and I'm curious if and how you use them. Thanks!
