Baked Rice-A-Roni for 50

Hi

I want to make Rice-A-Roni for 50 teens.

My current recipe calls for sautéing a small chopped onion and 3/4 cup vermicelli pieces in 2 tbl butter until the onion is translucent and the pasta is starting to turn brown. I then add 2 cloves of chopped garlic and 1 cup of rice and sauté for an additional 3 minutes before adding 2 1/4 cups of chicken broth.

To bake in the oven, I plan on sautéing as above, transferring the mix to a steamer pan and adding the hot broth - - cover and bake.

I have 3 questions:

1) Do you think I can do all the sautéing the night before? The next day, I will be finishing this on site  but if I can do the sautéing the night before, I will save myself time and dirty pans. Will sautéing the rice and then refrigerating it with the onion, butter, etc. overnight have any adverse affect???

2) How many times would you multiply the above recipe for 50 hungry kids? This will be one of two side dishes being served with chicken. But the other dish is a broccoli dish, so I donÂt know how many of the teens will eat that. :-)

3) Should I reduce the liquid because I will be baking this?
