Help! Red Oak flooring finish

We just installed early 70's red oak flooring that we had originally removed from another level of our house. I ran it all through the planer to remove the old bevel and finish and now we have sanded it all down and it's ready to be finished. The problem I'm having is that I can't find anything that won't give the boards a "yellow" tone. The picture attached is as it is now - which I really like. I bought Vermont Natural Coatings polywhey with a satin finish, but now I'm worried that the more red/pink boards are REALLY going to look pink when they're finished. I really like the more muted look - does anyone have any suggestions? All I can think to do is give it a white wash and then apply the poly. We've got about 1300 sq. feet to finish.
