Soaking Dried Pinto Beans?

I've read that it is wise, from a nutrition stand point, to soak Pinto Beans over night before cooking them. How will this affect the time?

Below is my families favorite recipe. This is an easy "dump into the Crock Pot on the way to work in the morning and serve with cornbread when everyone gets home at night" recipe.

But should I shorten the time it is cooked on High? Or perhaps I can still cook for the 8-10 hours but use low?

Easy Crock Pot Beans

1 pound dry pinto beans
Smoked Ham Shank (more yummy meat)
6 cups chicken broth
1 large onion, chopped
1/2 fresh jalapeno pepper, chopped
2 cloves garlic, minced
1/2 cup Salsa Verde
1 teaspoon cumin
1/2 teaspoon ground black pepper

Throw everything into the Crock Pot and cook on High for 8-10 hours. About an hour before serving, remove Shank bone, return the shredded meat to the Crock Pot.
