bread starters

Hi all you bread bakers! I have a question or two about using starters. I do understand that starters will be different based on many factors including geographical location, but I am wondering if there are different ways to make starters that influence the final bread product? For example, is a "sourdough" starter different than any other starter? If I made one starting with (no pun intended) 1/2 C flour, 1 C water, a bit of yeast - will that make bread that is "sourdough" like? Should I keep several different starters going to have different types of bread?

Most importantly - since this is what I want to do very soon - what sort of starter do you all use for making English muffins? Oh, and while I'm on the subject of E. muffins - can I use rings for fried eggs instead of specific muffin rings or will they not be deep enough?
