A neighbor told me that u can freeze cucumbers and that u can use them in a cold salad.

I don't think so. They would be too mushy!

Do any of you freeze cucumbers?

I don't think so either.

And you can't grill them, either. I know....my sister in law tried it! LOL

I agree. Sounds like a slimy, mushy mess! Yuk!

Maybe...ground up, then used in a relish or something, but I don't think I'd bother!

I blanched and froze excess kale per the BBB instructions. I spread the kale in freezer bags and stacked them in the freezer. Whenever I don't have fresh kale for our smoothies I just break off a chunk. It works great. As you point out, you don't need as much ice. I did the same with swiss chard. Can't really taste either as we add berries.

Freeze cucumbers - make relish later?

Cucumbers are 90% water. Freezing ruptures the cell walls. When thawed they will be VERY mushy so the relish will be quite soupy. Draining the thawed cukes prior to use will help some but the total amount will have to be increased to compensate. Using pickling cukes rather than slicing cukes will also help as they have much less water in them. Try freezing and then thawing a couple to determine if you find the end result acceptable. Dave

Cucumber Marmalade

I don't know about cucumber marmalade, but have another suggestion, cucumber frozen slushes. I don't follow a recipe and you can adjust to taste, but this is a way to serve up a lot of cucumbers without any use of the stove. Peel and cube a volume of cucumbers. Freeze until not quite ice hard. Toss into a blender with lime juice (or lemon, or a combination), sugar or sweetener to taste, and ice cubes. About 3 parts cucumber to 1 part ice. Buzz it together, serve in a glass with a straw or ice teaspoon. This drink accepts alcohol, too, if you like. Quite refreshing for summer. A sprig of mint on top is nice.

We bought our first home in 1976 and our second home in 1979. I know I had the Cuisinart at the first house so it's gotta' be something like 32 or 33 YO. Mine is the CFP-5A--'off & on' is controlled by the lid assembly. Still ticking along but I did pick up another vintage Cuisinart at an estate sale a year or so ago as back-up insurance. One of the disks started to break--the plastic stem part--so I JB Welded it back together--probably 10-15 years ago! The fix isn't pretty but...

Are you sure she wasn't talking about making freezer pickles, or freezing them in brine? You could use those in a salad, but of course, they would be quite different from fresh cucumber.

I have frozen cucumbers by accident when they were placed in a spot in the refrigerator that got too cold. They were awful!! Even lost that cucumber fresh flavor.
Nope! Nor me!

I'm pretty sure your neighbor was talking about those frozen pickles/cucumbers. Perhaps she didn't understand they were pickled. Many here have tried them and liked them. I don't have a recipe handy but I'm sure someone here does or you can always google.

My Mother makes cucumber freezer pickles every year. They come out great, but they have to sit in the pickling solution for some time before you can freeze them or they get nasty.

Many moons ago, on a family holiday in a rented cottage, it had a kerosene- powered refrigerator which got way too cold at the back where the cucumbers had been placed. They froze. On defrosting they were pretty nasty, slimy and mushy. Mom tried sauteing them in butter to use them up, but nothing could make those cucumbers palatable.

OK, here's Mom's freezer pickle recipe.

It's the pre-salting that really makes the cukes able to withstand the trip to the freezer. It pulls water out of the cells so that when the cuke freezes the cells don't burst. The sugar also helps in that regard.

I'm not 100% sure, but I THINK Mom lets these sit in the refrigerator overnight before freezing so that the vegetables really infuse.

2 quarts sliced cucumbers
1 sliced onion
1 chopped green pepper
1 1/2 teaspoon salt
1 3/4 cup sugar
1/2 cup vinegar

Combine cucumbers, onion, pepper and salt and let set 2 hours. Drain. Boil mix sugar and vinegar and add to rest of items. Cool and put in freezer containers. Freeze.
