Several things come to mind....meatballs and BBQ sauce, hamballs and a sweet mustard sauce, little smokies in BBQ sauce and a hot nacho dip.
Here's a recipe for meatballs I like, you can heat them int he crock pot after you get there...and you can add a bottle of BBQ sauce if you wish.
LindaÂs Swedish Meatballs (Köttbuller)
1 C. fine, dry bread crumbs (3 slices), divided
1 lb. round steak, ground twice
½ lb. lean pork, ground twice
½ C. mashed potatoes
1 egg, beaten
1 tsp. salt
½ tsp. brown sugar
¼ tsp. ground black pepper
¼ tsp. ground allspice
¼ tsp. ground nutmeg
1/8 tsp. ground cloves
1/8 tsp. ground ginger
3 Tbsp. butter
Lightly mix together ½ C. bread crumbs, steak, pork, potatoes, and egg. Add a mixture of salt, sugar, pepper, allspice, nutmeg, cloves, and ginger. Shape into balls about 1 inch in diameter. Roll balls lightly in remaining ½ C. crumbs. In large, heavy skillet (having tight?fitting cover), brown meat balls on all sides over low heat. Shake pan frequently to brown evenly and to keep balls round. Cover and cook about 15 minutes, until thoroughly cooked. Serve hot. Makes about 3 dozen.

For the hot nacho dip...I mix a pound of velveeta and a can of Rotel tomatoes. If you like it hot, use the hot variety of Rotel.

Everything Linda mentioned is generally extremely popular and easy, particularly if you use frozen meatballs. I like them with grape jelly and cocktail sauce. The recent thread for yummy Queso sounds very good to me at the moment.

You could also do artichoke dip or wings in a crockpot.

But if I had to pick one item, I would do a nacho dip with chips. I would make a really good one but if you want a super easy one:
1 can of meat chili, block of velveta, half a jar of salsa. This does sound gross, but it's actually very tasty.

I took the meatballs to the superbowl gathering. Made sure they were hot before putting them into the crock pot, added a jar of BBQ sauce. They went over very well even though DH must have eaten half of them. Crockpot with nacho cheese and tortilla chips was a great treat also.

Dee, here's a dip that I make when I need to make something ahead of time.

Hot & Spicy Chicken Dip:
2 lg. cans of chicken (drained)
2 cups of shredded cheddar cheese
1 - 16 oz. jar of salsa
1 pkg. taco seasoning
1 cup sour cream

In crock-pot mix all ingredients and heat until cheese is melted. Stir in sour cream just before serving. Serve with tortilla chips or crackers.
You can adjust how hot it is by using hot salsa or taco seasoning that is labeled hot. I've also shredded up leftover chicken if I have some instead of the canned.

Just a little tip for the meatballs (if you make those) - take a bag of pretzel sticks along and use the pretzels to spear a meatball, that way, no toothpicks are left to pick up and throw away.

Beans and Greens

Use a large pot because you will start with a large volume of greens before they cook down. Amounts of ingredients are not critical. Use your judgement and make it to your taste.

Saute chopped garlic briefly in extra virgin olive oil.

Add a small can of chicken broth and fill the pot with washed greens. I prefer escarole but sometimes spinach, kale or chard are used.

Simmer until greens are very tender. Stir occasionally.

Add cooked cannelini beans. Other beans can be substituted. A pound bag, soaked and cooked is about right.

Season to taste and dress with a little more olive oil if you like.

Canned (Progresso brand) escarole and beans (drained and rinsed) can be used, but I prefer everthing fresh. There is not a lot of work to this.

Cut up, fried pieces of Italian sausage can be added but that is gilding the lily in my opinion. The dish can be made vegetarian by using vegetable broth instead of chicken broth.

Beans and greens will complement other dishes which are likely to show up at a pot luck.

This past weekend for a Superbowl party I made a crock full of Norwegian Meatballs, that were a big hit. (They were supposed to be Swedish meatballs but they turned out slightly different than what I intended. :-) The sauce turned out fantastic, but was a little too thin.

I bought two large bags of frozen fully-cooked meatballs (making sure they weren't italian style meatballs) and microwaved them.

The sauce was as follows:

3/4 stick butter
1 large yellow onion chopped fine
1/2 teaspoon ground black pepper
1/4 cup flour
6 cup beef stock
1/4 cup medium dry madeira
3 dashes worchestershire sauce
1 pint sour cream

melt butter over medium heat, add onion and pepper, cook for about 15 minutes making sure the onion doesn't start browning.

Add flour cook for another minute or so.

Add remaining ingredients except for sour cream.

Cook until sauce thickens.

Use stick blender to puree sauce until onions are

reduce heat, add sour cream, stir until well blended, pour into crock pot over meatballs.

The sauce was really good, but a little thin. I think perhaps a little more flour and also perhaps some paprika for color and flavor.

This is a grrreat recipe!

NEW MEXICAN CHILE DIP
from the kitchen of Jim Myers
Makes about 3 quarts

2-3 pounds ground beef
2 pounds Velveeta cheese cubed
2 large onions, chopped
1 - 28 ounce ounce can crushed tomatoes
4 cloves garlic chopped
2 - 4 ounce cans chopped green chiles
1 tablespoon chili powder
2 teaspoons cumin

Brown ground beef with the onions and drain. Add remaining ingredients and simmer 20-30 minutes. Transfer to crock pot to keep warm. Use large corn chips for dippers.

My personal easiest favorite :

1 bag frozen meatballs
1 quart jar Duck sauce
2 tsp. sesame seeds

OMG, Woodie that Chili Dip looks fabulous. Even if I don't bring it, I would love to make it on a snowy weekend and sit by the fire with a bag of chips! Hog heaven! LOL!!

Guess I will have to wait for the chilly weather or make the dip anyway and eat it outside on my deck next weekend, though it may not be too romantic for a Valentine Weekend! lol
