Mexican Leftovers

I really don't care for leftovers. But Mexican is one of the few exceptions.

I made Pork Carnitas with homemade corn tortillas for dinner Tuesday.

This morning, Moe had Migas for breakfast. Fried tortilla strips, eggs, cheese, salsa, avocado and cilantro.

And I fried tortillas just enough to shape so they weren't "hard crisp" and filled them with leftover pork, salsa and cilantro.

Oh, Yum is right. Can I live with you?

My favorite food, and I'm not especially good at cooking it. We eat out, Mexican, about once a week and always bring my leftovers home, reheat in the morning :)

leftover dill pickle juice

I know that followers of homespun folk remedies have strong beliefs. No need to disturb that, There's no magic in pickle juice. Many people have night cramps because they are partly dehydrated; drinking more water during the day often solves the problems. A lack of salts can also play a part, drinking a sports drink supplies several electrolytes and bananas supply potassium. If you want to eat more vinegar, pair it with olive oil and eat more salad.

Left-over Pork Roast

I had a lot of leftover pork so I ginned up a "pork stroganoff" that came out tasty. I sauteed onion, garlic and crimini mushrooms, then added the cubed pork with 1 can beef broth and 1 Tbl tomato paste, 1 tsp worchestershire sauce, 1 tsp caraway seeds, 1/2 tsp marjoram, S&P to taste. I let that all simmer nicely and stirred in 1c sour cream and sprinkled in paprika before serving over egg noodles. Very fast and easy, and it all disappeared. I served that with tossed salad, oven roasted broccoli and pumpkin bread.

I had Mexican leftovers yesterday also, but I had smoked chicken breast instead of carnitas. I prefer pork but seldom buy it because Kevin won't eat it. I should probably buy small quantities just for myself.

Migas is one of my favorite breakfasts to make, and Kevin likes it too, but I only make on week-ends. Avocados have been cheap lately, which is always good!

Anyone can make delicious food by following T&T recipes and using good ingredients.

Not many can make delicious leftover food.

Good job Ann.
