Ann, Costco is my go-to butcher. It isn't convenient so I only go about every 3 months.

I made a prime rib that looked like yours for Raymond's birthday this week. It was wonderful with the horseraddish crust. I made mushroom beef soup with the leftovers. I made the soup in the Dutch oven that I roasted the prime rib in to capture all off the drippings and fond. It was spectacular.

I have been getting Costco skirt steak lately to try different recipes. It has had a good flavor.

You thought wrong Khandi. But you aren't alone. I've read many articles that imply that salting before hand will dry out the meat. But that isn't the case. Ever since I found Judy Rogers pre-salting method a couple of years ago I have used it for just about every cut of meat. Chicken/Turkey/Beef/Pork/Lamb.

I'm doing the whole (12.9 lb.) roast for our Valentine Dinner. Thawing as we speak.
Very, very rare! Then I cut thick steaks from the leftovers and freeze for later meals. When I "reheat" I just sear quickly in a very hot cast iron pan. Yum!!
We have a favorite homemade rub. Maybe I'll add some pureed garlic to it...does that count for the virtual dinner??? Eh, probably not.
Sides: Roasted sweet potates, and maybe some red or golds.
Either a big green salad or roasted asparagus, haven't decided yet. We have a busy Saturday running errands so it'll depend on my time and how I feel. :+)

I stocked up before Christmas when my daughter let me know the boneless Prime Rib was on sale for $2.99/lb. Unbelievable price!! I'd rather have the bones, but at that price, I wasn't going to argue!

Looks good Ann. We have a lot of Costco's in my area and I'm fortunate (or maybe not:)) that one is about 7 miles from my house. I love their meat and seafood and I buy quite a bit of it and bring home and seperate out just like you did.

That really looks good. I buy most of my meat from Costco and it is always cheaper and better quality meat than the grocery stores offer here.

The closest Costco to us is in Victoria. But it at the north end of Victoria (Langford) so it is only a 25 to 30 minute drive.

Well, I would have to drive 70 miles to Orlando to get to a Costco. Won't do it because I don't eat beef. Too bad, it looks really good.

Back before the store opened in the Monterey area, I'd trek up to San Jose once a month or so, and stock up. We lived way back in Carmel Valley then, and it was maybe 80 miles each way. But I didn't go that often, I took an ice chest, and I kept a shopping list. It was always worth the trek.

We have the same thing for dinner tomorrow. One we froze back on New Years' Eve.

I've never even been in a Costco but I go to Sam's Club about 4 or 5 times a year and stock up on laundry soap, yeast, sometimes coffee. It's about 50 miles one way and while I'm in Grand Rapids I go to Penzey's, Russo's, Mediterranean Island. And that's why I only go 4 or 5 times, it's EXPENSIVE, LOL.

I don't usually buy beef there but once in a while I picked up a steak and it was always good. Actually, my Sam's Club has really good prices on cheese and wine. No Trader Joe's for 200 miles!

I am another that really likes Costco beef and we really like their baby back ribs too. Here in SA, my beef purchases are limited to Costco and Sun Harvest.

Dang it, now I want to go to Costco for meat! :) Guess I'll have to go out to the freezer instead, because Costco's not open yet.

Those are lovely steak/roasts Ann. I guess because they move such a large volume, they can keep great meats on hand!

We love Costco meats too!!! Every cut is tender and always is fresh and much cheaper that anywhere else. The Tri-Tip is really great for grilling. That Prime Rib looks excellent; in fact we always buy Prime Rib at Costco for Christmas Eve dinner. I fixed Eggs Benedict for breakfast this morning with asparagus and plan on steaks for dinner tonight.

I vote for Costco beef too; just stocked up last weekend.

I also got some pork chops (with the bone) and grilled them with Montreal Steak Seasoning OMG so wonderful, tender and juicy.

What a timely thread. DH just finished cutting a roast into bite size pieces for more of Karen's Chili and he had a really tough time removing most of the fat. We buy our chicken and pork at Costco, but since we rarely eat beef I usually just pick it up at the grocery store. I'm going to look into buying beef at Costco's now. Maybe it will be a little leaner.

Beverly, choice meat usually has more marbled fat in it. If you want leaner meat, I'd try a different cut that what you've been using.

I love Costco beef, but don't go often because we can't get out of there without spending a fortune, in large part do to the case of wine, beer, toilet paper, etc., that seem to be a must. And call me anal retentive (how does that work, exactly, anyway?) but I've been to the laundry forum, on my own (nobody sent me), and that Charlie's soap is the best!

We enjoy Costco's short rib meat. Since there are just two of us, a couple of strips will do for our supper, so I brown all of it and freeze the rest in ziploc bags for future meals.

We've had good luck with their filet mignon, and the pork chops too.

It's best for me to go into Costco without a cart, and I try to stick to my shopping list, but it's not easy.

Sushipup, marbeling is good, it's the huge hunks of fat that are bad.
