So I bought my first Le Creuset, now...

...help me love it.

I bought the 7.25 quart dutch oven, in red. Like all of their enameled cookware, it advertised its ability to sear, but also came with strict instructions not to cook above medium unless boiling water or you can damage the pot. The salesman was very adamant about that as well.

Last night I made a goulash. I set it on medium, and it grayed the meat but wouldn't brown it. I inched up the heat till it was at about 70%, with barely noticable improvement. Here are the facts:

- Cooktop is smooth electric, burner was appropriately sized and 2500 Watt.

- Per instructions, I used enough oil to just cover the surface.

- Preheat time was not the issue. By the second batch the heat had been on for at least 20 minutes, with several minutes at the highest setting I used.

- I'm certain that at that heat my All-Clad skillet would have browned the meat and left a nice fond.

As such, I'd consider the performance lackluster. Can I really not crank the heat up further? If not, I plan to try returning it.
