UN-stained wood?

Hi all- I am a newbie and just plunging into this process so please bear with me......and thanks in advance for your help! We are finally purchasing a home (hooray!) and are doing extensive work before we move in. It is a one level 1950 square foot home outside of Santa Barbara. We love wood floors and would like to put them throughout if we can afford it. My preference is a medium dark uniform looking wood.

A few questions: we have 2 seven year old boys and a dog, so I'm wondering if I can go that dark or if every speck of dirt will show? I hear lighter shows less, but I hope for the darker color- if possible. One of my sons is very chemically sensitive and I'm looking for low to NO- VOC products. Is there a way to lay down wood and not stain it at all, but simply oil it and and let the natural color show through? It seems like scratches on that would be preferable to scratches where a dark varnish is torn away to reveal a lighter wood underneath. ??

Anyone have any advice for me?
