My Valentine's Day Dessert

We are having 4 couples over for dessert on Saturday. I have tried, and failed at, so many desserts lately! Tried this one the other day and it is a keeper.

I love that it easily be doubled, or even tripled. I also loved that I just took it out of the freezer and popped it into the oven (baked 15 minutes per the reviews).

If I had to rate it I'd say 8 out of 10 stars. It could be slightly sweeter I think. The consistency and texture were right on though.

Rich and fudgie? Soft cake exterior?

Thank you wizardnm -- yes, it was cakey on the outside and fudgey, creamy on the instead (it did spill out, more of like a pudding middle).

I wish I knew how to make them a little more dressed up on the plate. My husband suggested a drizzle of Hershey's Syrup but I am not a big fan of it. I did top it with (canned whipped cream) - don't know how, or have the time to make my own. I think I will fan a strawberry (if I can find some decent ones in Feb) on the plate too.

I see we're not alone! Seems to be a lot of this going around. I have had my share of gastroenteritis in years past (lovely dorm food) but I have never seen anyone as sick as she was. 3 days now without food. She's feeling better today and is drinking enough finally. I offered her every bland food I could think of and she still wanted nothing. Mandyk, enjoy your Valentine's Day! We have opted to have ours next Thurday. I will give everyone their choice of recipes!

I just finished making little molds of raspberry gelatin. Don't worry - it tastes as much like the packaged Jell-o as a homemade apple pie tastes like a frozen Mrs. Smith's one. FRESH RASPBERRY GELATIN 2 cups fresh or frozen unsweetened raspberries 2 cups water 3/4 cup sugar 1 envelope unflavored colorless gelatin Bring the raspberries, water and sugar to a boil; reduce heat and simmer for about 20 inutes or until the fruit has dissolved in a mass. Line a large strainer with cheesecloth and place the strainer over a bowl. Pour the fruit mixture through, straining so all the seeds are removed and only the clear red liquid remains. Soften gelatin in a little cold water. Return the liquid to the saucepan and add the gelatin. Stir the gelatin thoroughly so that all the grains are fully dissolved. Bring the liquid to a boil for one minute, then remove from the heat. Pour into a mold of the proper size (about 1 1/4 pints) or into small individual cups, and chill in refrigerator. When gelatin has set, unmold and serve. Garnish with whipped cream if desired.

Instead try a baby-sized scoop of a good vanilla or coffee ice cream and decorate with a few chocolate covered espresso beans.

A light dusting of powdered sugar and a fanned strawberry will do wonders for the look...

Sure, I'll try.

If you are starting a thread. like Stir_fryi did this one, you need to wait to add the link. So just do your post, without the link (you can refer to it however) then do a preview. Page down on your preview until you see the message box again. Under the massage box is a space called 'Optional Link URL:' that's where you paste the link that you copied on the actual page from the address bar.

Under that is the 'Name of the Link' space where you can give the link a name which will show up at the bottom of your post.

Click on 'Preview Message' under the Name of Link and your message will show up with the link included at the bottom. You can even try the link to make sure it works, just be sure to arrow back after checking so that you can submit the post.

If you want to add a link in a thread that someone else started....forget the first part of these instructions ...just paste the link in the URL that is already under the message box.

There's also a way to insert the link in the body of the message and/or do multiple links. I have those instructions written down somewhere..... I just usually do it this way, 'cause it's easier.
