Tehre are people who think cheese needs refrigeration. It doesn't. It will get more well aged and if there are mold spoors around it will get moldy....but it won't "spoil" in the sense that it will grow bacteria and make you sick. It's a CYA maneuver....like the wool sweater that says dry clean only. Do you refrigerate a cake that contains milk? or rolls made with egg yolks? How about a danish with a cream cheese filling? Or those wedding mints made with cream cheese? If you leave a cream cheese frosting out in a very warm room it may get too soft and sink into the cake....the way a butter cream will do. By the way....do you refrigerate a buttercream frosted cake? That contains dairy. How about chocolate truffle candy?

Here's her post: SPECIAL CORNBREAD (RavenCajun@KT) I also love cream cheese cornbread, so easy to do. make up your regular fave cornbread batter, pour half of it into your pan then drop dollups of soft cream cheese here and there in the pan, then pour the rest of the batter over that so the dollups are sandwiched in the batter, do not stir, bake as usual. When you bite in to the cornbread and hit a pocket of that warm cream cheese it is like heaven.

chi, I make them for Amanda every year and I don't add brandy at all. I sometimes use my home canned brandied cherries and sometimes I just use maraschino cherries with no alcohol. It still comes out fine and is Amanda's favorite holiday treat. If I had to choose, I'd go with the Irish Cream or the southern Comfort, although I think Amaretto would be good if you have some. The almond and cherry mixture is something I like. Oh, and I don't always have butterscotch chips so sometimes I do them all chocolate. Still good! Annie
