A question about cream cheese

For a dessert tonight, I wanted to make something we haven't had in awhile and with stuff that was readily on hand. I decided to make crepes with ice cream with an apple pie jam that a friend made. I was thinking of incorporating cream cheese into it though. Not sure if I could cream the cream cheese and then add ice cream and refreeze. Would this be a bad idea? Or maybe I can make a cream cheese drizzle? Should I leave it plain. I went and put cream cheese on the brain but really want the crepes too. Thanks.

I would beat up the cream cheese with sugar and vanilla and spread some on eht crepe before you put on the apple filling, and roll the crepe and serve with icecream.....sort of like a pie with ice cream.

There's an idea. Thanks. I haven't made crepes in years. Should I put some whip cream with the cream cheese?

If we can have a sour cream angel cake, why not sour cream & *chocolate* angel cake? Hmm... now that I think of it, that does sound good with the cinnamon swirl. Build it up as with a torte, putting luscious cherries between the layers. Pidge - one of the best things about cooking in VR is that there are no calories, therefore, no weight gain. Thank goodness.

About those cream cheese stuffed strawberries

Thank you. Linda, the slice is a no-bake from joyofbaking.com and I've provided the link below. I used a ganache instead of the topping listed in the recipe. It's very sticky to make - I press it into a parchment lined pan using more parchment between me and my hands when pressing it in. Refrigerating for a few hours before slicing helps. Our peaches have to be almost a pound each! HUGE! Last year was our first year with the peach tree. The former owners didn't prune or cull, so we had so many peaches (record rain year after 4 year drought) the branches were breaking. We had the tree properly pruned this year and culled a lot of the baby peaches and this years crop is less peaches, but bigger and sweeter!

IMHO the BEST crepe has a little butter melted on the top and a sprinkling of sugar. Simple and wonderful.
