have ya ever made smoked salt??

I like salty/smokey flavors. Know you can buy smoked salt... pricey!?! I have a stove-top smoker (Camero) and a 1 lb bag of flaky sea salt... very inexpensive at Asian market.

Have you ever made your own smoked salt?

Yes, but not with a stove-top smoker. I have a Big Chief and I just put the salt in a shallow pan and toss it in the smoker when I'm doing something else. Very easy. Shake it to stir once in a while. You can make it as strong or mild as you like.

I use mine in beef dishes, especially with tomatoes. Bean soups, savory dips (carmelized onion with smoked salt is good), sprinkled on meats at serving time.

I find that it changes flavor after some time, so do small amounts and use it up!! Mine is not stored in an ideal location though, so possibly would keep better in fridge or freezer. Seal well, it tends to permeate everything!

I was just at West Side Market in Cleveland OH this morning. One of the vendors has hickory smoked and applewood smoked salt. The hickory was $3/oz and the applewood was $2.50 or $2.75. It lasts me quite a while. I have never tried making my own. Usually my smoker is too full of meat to do something like that, even if I had thought of it! Mine is stored in plastic containers with snap on lids.

Yes, but if you read my post, what they told me was total crap. ths short of it was: do not have a 34.99 atl. by looking up truck model .(phone) then: DO have it by part no. i gave them (phone) 10 minutes later: do NOT have it by part no. (in store) 2 minutes later? DO have it by truck model (in store) I go to advance not expecting the most knowlegable counter people, and not expecting the best parts. Most seem to last about a year that i have bought. I always say ADVANCE is the best place to go if you need to replace a part on a vehicle you are about to sell. But too, i have bought MOOG TRW, and other brand name stuff there that didnt last either. SO i blame a lot of it on crappy manufacture of parts by what used to be decent companies. Seems most stuff is made/rebuilt in China/Mexico, and none if it is worth bringing home.

Thanks for all your replies. Sorry it took me so long to get back to the forum. My children and their children ended up spending most of the day with us yesterday, and two granddaughters spent the night. Anyhow, I'd like to try making smokey hot smoked salmon -- not lox. Cheryl thanks for the sauce recipe. Sounds good! My smoker doesn't really go lower than 200 degrees, but I think I'll just start some experimenting. I've purchased professionally smoked fish that was dry as sawdust, so I'm sure I can do as good as that. The smokey flavor of meat coupled with a tasty but salt-free sauce adds amazing possibilities to our menus. I figure I could do the same thing with fish. By the way, I have one really important question: Does smoking fish in an smoker make everything else smoked afterwards taste like fish? I regularly clean my smoker after each use, but it's hard to perfectly remove every bit of grease. The smoker is cleaned but not out-of-the-package pristine any longer. Do fish odors linger? Would it be OK to smoke the fish in a baking pan to contain the fatty drippings? What do you think? Thanks again!

Haven't made kale chips, but will have to try. I have been using the Trader Joe's bagged kale in my green smoothies. I use a frozen banana, a scoop of vanilla protein powder, some low cal juice, and lots of kale. It's a beautiful green color, and tastes yummy.

Hickory, Alder or whatever, I LOVE it! I use it on meats, chicken and fish, but it's best as a finishing salt. Yesterday Whole foods Facebook page recommended sauteing chunks of avocado sprinkled with smoked salt. DH is dubious, but I might give it a try later this week. I'm not a fan of liquid smoke, but since my seasoning options are very limited, this fits the bill! While I love Penzey's, I'm not a fan of their salts. However, like Sally, in Portland I discovered a spice store (in the downtown area) whose salts were wonderful. Subsequently I discovered another store here in Costa Mesa which has alder salt with fantastic texture. I plan to visit again near the end of the month to try out some other items. I love the flavor of smoked salts. I have a pack from the Spice Exchange in Portland that I bought almost 2 years ago --Alder and Hickory. Both are delicious on grilled meats! I use them more as a finishing salt to capture the most flavor. Perhaps I should order some more for a fresher batch :-D

I have never made it, either, but I love the Apple wood smoked salt from Maine Seal Salt Company. It is amazing on pizza especially. I haven't tried the Hickory yet... why mess with perfection?

My DH and I toured their greenhouse evaporators a couple of years ago when camping nearby. Very cool.
