OMG have to share: Clay pot cooking (pic heavy)

Thanks to theresa in NC for sharing her recipe for Baked Chicken and Artichokes.

I was inspired to pull out the Romertopf from the basement and make it.

I soaked the pot for about an hour and a half and cooked, started in a cold oven, at 450 on Surround heat in my Miele. I also used Brown Rice Flour in place of AP flour to make it Gluten free for DH

Served over Brown rice. My kids loved this, everyone begged for more, unfortunately there was nothing left LOL.
