OMG have to share: Clay pot cooking (pic heavy)

Thanks to theresa in NC for sharing her recipe for Baked Chicken and Artichokes.

I was inspired to pull out the Romertopf from the basement and make it.

I soaked the pot for about an hour and a half and cooked, started in a cold oven, at 450 on Surround heat in my Miele. I also used Brown Rice Flour in place of AP flour to make it Gluten free for DH

Served over Brown rice. My kids loved this, everyone begged for more, unfortunately there was nothing left LOL.

The pot fit perfectly in the sink:

Ready to bake:

Lovely CRISPY chicken ( can't believe how the brown rice flour crisped the skin

Postal code in Canada but I get the jist! Lol, Cindy! I will feel much better when all those babies are in the ground and tucked in for winter. I'll start worrying about them in about April. Maryl ~ God I hope you don't get as crazy as me! I can do it temporarily here cause I have the room and am waiting for beds! If, on the other hand, I have inspired you to be true to yourself and follow your heart, then by all means enjoy! I'll post pics and names as I plant them starting tomorrow. I have quite a few larger roots to put directly in the ground and we are expecting a nice, warm day! The dogs like to help by licking the sweat off my brow and lying around making sure I am doing it right! Shelties are such workaholics! :)

Glad you enjoyed 'My Finds', Ladies and Thank YOu for all the nice compliments. I really wish we ALL could have gone there together. That would have been such a blast. Imagine comparing and admiring each others purchases afterwards! Magpie... The lady that I bought the Yellow dishes from, DID have them in Green!! She was trying to convince me to buy them too. She had 7 - for $3... A great price. I already have green so I didn't need those... All the dishes were Never Used!! ncnana...That's exactly what I had in mind with those pink dishes and glasses - Valentine's Day!! :) Luvs...'Cute As A Bug's Ear' !! LOLOL...I've been called many things...but Never that...Love it, Thank YOu. karen...don't think of it as 'jealousy and sinning'... Gosh girl..We would ALL meet down below one day, for that.. Think of it as 'Greatly Admiring' all my Stuff! ...hehehe DD.. I'm in love with that Gravy Boat too. Been wanting one like that and this one is in Perfect Condition. It has such pretty, raised detailing on it. Those hurricane candleholders are a great size..and are smaller than ones I already have. I think they'll come in very handy too. Now ladies, if ONLY I had Magpie or DD's Dish Storage to put them away in. That's what I'll be doing today...rearranging my space and looking for More Space!! jane

Thanks everyone. I'm still eating it.... I would call this a success, but I did learn some things for next time. At least use onion powder if I don't have an onion, and be a little more generous with the salt. I'm adding both of those each serving now, and it really helps. I'm glad other people wondered what coarse meal looks like, that made me smile :o) Sewhappy, thanks for the suggestion.... Plastic wrap is not my friend, and I think for me at least using it in that manner would be harder than cleaning the worktop surface of the portable dishwasher. I scraped the dough off with a plastic pan scraper, and then just brushed the loose stuff into the trash... so much easier than trying to wash with a sponge and getting a gluey mess everywhere! Duane, I agree. I have made things before (think pumpkin stuffed ravioli) that were not worth the effort to cook them, nor the clean up process. When I make something big, it is because I want to, I never force myself to.... sometimes I am very glad I did, and other times, even halfway through the process, I mutter, "why oh why" or "never again!" I hate finishing a project and thinking "Man, I should have bought that, it would have tasted better and saved me all this work!" Annie, you like every food, don't you? :o)

So glad you all enjoyed this thread! RHome, we have a space above the island facing the cooktop....I was thinking about doing some word art there (a phrase or saying), but photos could be fun! Kate, happy anniversary! I *love* the scene you've described and agree with Caroline that this is a great movie to see with your DH/DW. I went with a girlfriend becaue DH was out of town but I am definitely going again with him! BTW, I haven't read Julie and Julia either but I can strongly recommend My Life in France. Judy, ah yes, the butter. I couldn't believe how much we used too, for the entire meal. The chicken alone is sauteed in one stick of butter, and when you make the sauce from the drippings (which of course has rich and lovely egg yolks), Julia suggests you add two to three tablepsoons of additional butter to the sauce! LOVE the fact that Julia and Paul both lived to a ripe old age. I also love some of her thoughts on food: "Eat well and drink well," says Julia Child, "everything in moderation -- and never snack." And this on butter: "If you're afraid of butter, as many people are nowadays," she said in one of her more recent television shows, "Just put in cream!" she proclaimed, with a twinkle in her eye. Apprently she believd that the secret to a long and happy lfe, along with the moderation, was red meat and gin. My kind of gal! :-) Regardless of what and how you eat, it really does make you realise that the act of sharing good food is really one of life's great pleasures. As she said..."Dining with one's friends and beloved family is certainly one of life's primal and most innocent delights, one that is both soul-satisfying and eternal." Bon appetit to that! Eliz

ann_t [blush] your photos are oh soooo much better but thanks for the compliment. Photo tips are always appreciated

Annie and shaun - yup love the pepper mill. It's a peugot, bought on a whim, hand painted by a lovely lady in Canada. I consider it a piece of art. I know she also sells them on ebay :)

Mustangs - I sure did ;)

I'm glad you like the recipe! It's one of my favorites. Do you realize you don't have to soak the pot and lid that long? The manufacturer recommends 15 minutes, but soaking longer won't hurt anything.

YUMMM!!!

I make one very similar (basically the same recipe) but in a casserole in the oven. I think Clay pot looks better...

The pics are great!! Does the chicken just fall off the bone?

It was good. I'm going to add it to our monthly rotation and keep an eye out for other recipes as easy and tasty to make in my clay pot. Nancy any suggestions?

I hate cleaning the thing though. Chase if you're lookig, see if you can find one that's glazed on the inside bottom. I don't think it effects the way it cooks but it sure makes it easier to clean.

Compumom, DH bought the brown rice flour. I wasn't with him but it either comes from Trader Joe's or Whole foods and is about 1/2 a pound. I'm going to try it on the Chicken picatta for dinner tonight

Shellm, what's BSCB?

boneless, skinless, chicken breasts.Sorry about that.I guess they will work fine.

If you use a glazed clay pot, you are canceling out the steam cooking coming from the clay pot. To clean mine, I run hot tap water in it and let it sit for a good long time; then I use a bristle scrub brush to clean it.

Has your pot been used much? They will build up a patina on the inside and the outside the more they are used. The patina aids in the cleaning of the pot.
