Here's the exact peirogi maker that I have that makes 18 of them. It also shows how to make them. The link I posted in the previous peirogi thread is for small ones. (No need to moisten edges of the dough.)

Only because these come under so many different names, it is a daunting task to decide which would work the best. With my very old Victorio, the shaft had no seal, and slides in and out while cranking tomatoes through. I used to have to place a wad of paper towels on the floor under it to catch the drips. All the units I used had cast aluminium housings with stainless screens and red plastic augers. The Villware (actually ROMA) I use now, has a little bit shorter shaft and the small clear O ring that is set in a groove on the shaft, with an E ring clip holding the shaft from moving in or out. That little O ring has not leaked yet. I do like the twist on screens as those wing nuts need to be snugged dwon equally on both sides, or the sieves will not seat properly in the housing. Yes, mine had a 4 inch long clear plastic cone that snaps onto the open end of the sieve, and a bowl fits under it very nicely. Because the output trough is quite low in height, I place a big flat pan under it like a 9x13 cake pan or larger to catch the pulp and juice. The link below shows several 'brands' and several prices. As seen, most also show that clear cone on the output end. The one I have is the model 200 (as most were referred to that same number). I also have the motor unit in that photo, that slides on the strainer. Mine has no screw to hold the crank on, as it just simply slides into a keyed hole in the shaft. The descriptions also mention that the screens are not compatible with the older Vitantonio- Victorio machine (thats with wing nuts). The more expensive unit ($129) at the top of the page has the stainless steel body, while the others are cast almuminium. The middle choice has the suction cup attachment method. The third choice is the exact same one I have, with the motor (added later). I also have all the optional screens. Before getting the one I use now, I had bought a Back To Basics model, that had a similar wing nut and leaky shaft as compared to the older Victorio (and probably the older Squeezo). I bought my ROMA from Johnnys' seeds which now features the 'Sauce Master' machine, with yet ANOTHER style of screens, but they still carry the ROMA screens too.. Good luck, in your choice.. Recommend the one in the Kasba House web site (model 200), which is the best of all worlds. The Brewmatic is great! It connects to a receptacle behind it in the backsplash wall and is fed by a 1/4" line that runs in the wall and pokes out behind the unit as well. I ran the water line in a piece of 3/8" flexible electrical conduit that extends to the basement where I have the water filter. This provides protection to the water line as well as providing the means to replace it if needed in the future. I simply grouted around the water line as it comes through the tile and that seems to be working well. Extra cord and water line are coiled and tied and tucked up behind the unit.

Wow, thanks for the response everyone! Perogies certainly are a labor of love. I know my Polish grandmother was smiling down on me when I was making them. I made them fresh with the potato and cheese filling, then froze them raw, so I think I will boil and fry them tonight, then reheat them tomorrow. I do have a large, electric skillet that I will reheat them in, so I think that will help keep them from getting soggy. I definitely need to update my perogie making technology...maybe Santa will bring me a pasta roller for Christmas this year. :-)

Caliente, thanks so much, that makes a lot of sense, I'll look extra carefully at burner sizes/location now. robotropolis, thanks for the pictures and advice its very helpful. The fridge cannot be moved, the doorway leads to a small mudroom. I will probably have a pantry in the mudroom so I'm Ok not having a tall one. I might turn the fridge 90 degrees, that's how it is now, but I cant fit a cabinet next to it if I want to keep a 36" walkway around the island there. Anyone else care ease my mind that my prep sink is in a good spot?! Or where to put a wall oven if I separate it from the cooktop? LWO, Thanks I appreciate your feedback. Im going to a GW highly recommended cabinet shop. I assume they will be perfectly capable of telling me what is or isn't possible when I go meet with them. I was just hoping to have the best idea of what I want when I go, because I'm not sure how much creative advice they give. I was just hoping to get some of the gw members' opinions on any nice features you could envision in my layout as well as point out any red flags if I placed anything in a less than ideal spot. Typical things people ask on this board, no?! As I tend to do, I think I asked too many broad questions in one post. Im still learning ;-/ I can't afford a separate KD. The custom quote was a little less than the kitchen design shops I've been to, but not enough to justify me hiring a separate designer. If this meeting doesn't go well and he is an "I only build it, nothing else" type person, then perhaps I'll head back to the Brookhaven/Medallion dealers around here so I have a KD to work with.

A friend gave me both sizes. I prefer the large ones so I got rid of the small maker a long time ago. I found them to be too small for what I wanted my peirogies to be... but that's just me!

I recall a number of years ago there being a little tempest in a teapot about the Hunky Bills company name where some Ukranians found it derogatory being a contraction of bohunk. That's all for today class LOL

My MIL's pierogi tend to be wider (longer?) and flatter than the "homemade" ones I've seen being sold, so I don't know that a pierogi maker will be of much help to me :-(

When you want things to taste "just like you remember them," size, shape, texture, thickness, are just as important as flavor. It would be nice to try a time-saving device though!

cat_mom, that's why I like the large maker. They're longer and you can fill them more! I used to use a round container to cut my dough circles, fill by hand, and seal them by hand. The large maker resembles them more than the small maker. IMO, the small maker resembles the bought peirogies... which I don't like! Too doughy cuz they're so small.

As much as I love gadgets, pierogies are so easy to make by hand that this isn't a gadget that I would want. But I can see why it would be a popular.

I like using the maker cuz when I make peirogies, I make 100+. It saves me time and energy since I have rheumatoid arthritis. It was hard to make them by hand and it took 2 days for me to make 120+ peirogies. But, I have a confession to make... I had the maker in my cupboard for a couple years and I still made them by hand cuz I was used to making them by hand and didn't like how the maker worked.

HOWEVER, when making them this Christmas, I used my Polish aunt's recipe and it worked beautifully with the maker. When I tried it with my usual dough (from my other aunt's recipe with the sour cream), I didn't like it with the maker. I will be using the maker with my Polish aunt's recipe from now on. The dough spreads and cuts beautifully! and, I will be making them more often.

Forgot to mention...

I think the reason I didn't like the maker with the sour cream dough might be because the egg and sour cream was cold. It made the rolling a little tough for me.. but then it could be because I don't have much strength in my hands. Not sure! Because I don't remember the dough being that way at all. I remember it spreading nicely! Oh well... memory is going!

With the Polish dough, the hot water really does something to it to make it so tender and spreadable!

OK, I just ordered the large size maker from the site you linked to. I showed it to my husband online and he said to order it if I will make pierogi more often. I usually make 5 or 6 dozen at a time and freeze them in meal size portions, that way I only have to make them a few times a year. I can't wait to get it and try it out! While I was there I also picked up a spaetzle maker for $7, great deal. Thank you for posting this Khandi!
