I missed the whole last WFD ! Get sick for a few days, and it's gone! I will go back and read it...

A little Valentine's dinner..early I know...practice for the real day..

Shrimp Cocktail Heart, Spinach Salad with Goat Cheese patty, Chicken stuffed with mozzarella and ricotta over linguine with wine sauce, and Choc layer cake...

    Oh Sharon, what a photo.

    Nancy, breaded chicken, mashed potatoes and gravy. YUM!

    Had a craving for Mexican. Put a pot of black beans on to simmer and slow roasted pork rubbed with ground chipotle pepper for Pork carnitas. Served with homemade corn tortillas and washed down with Sangria.

    The FD would give you more fridge space with everything at eye level. The freezer will be more like using an ice chest in that things get piled in and stacked on top of. The SxS will be narrower in the fridge. With the ice maker on teh door, the freezer will be easier to organize. Samsung has always rated well. IIRC, CR's only issue with them is that they can be somewhat of an energy hog. Have you looked at the Sammie 4-door models? the extra 'door' is a refrigerator drawer. It's deep enough for canned drinks and large enough for things like sandwitch stuff and condiments, the idea being that you're not constantly opening an upper door to get at small things.

    I'm back from dinner. It was great visiting with our snowbird friends and we talked for over two hours. We were neighbors when we both lived in the boonies and they moved back to Ohio shortly after we moved. We went on a cruise together with others from the neighborhood and had so much fun with them once. So now we e-mail and get together once a year :-( Dinner--not so good. I ordered the fettucini alfredo with bacon-wrapped sea scallops. The salad that came with it was very good,the scallops cooked just right but the alfredo was disappointing, to say the least. It was a big plate of angel hair pasta with a huge glob of alfredo sauce out of a jar. Ick, ick, ick! What could be easier than alfredo sauce? It's just a little butter, cream, garlic and lots of parmesan. They had little rolls that came with the salad that looked a little like those biscuits at Red Lobster, but were floury and dry. Now I remember why we don't like to eat out. Harry had fried oysters, baked sweet potato and hush puppies. He said on the way home it wasn't very good, but if it's dinner time I swear that man would eat plastic! Guess we won't be eating there again any time soon!

    We were visiting my wife's family in Vermont which ends up being a large group, with most of her brothers and sisters, and their spouses and kids, and this year even several girlfriends of the kids. All told we were about thirty. Meals were split up with one or two people volunteering for each meal. New Year's Eve was my night. I was stumped at first as far as what to make, but the co-volunteer Eric (a foodie BIL) came up with the suggestion of top-your-own tacos. We actually went with tostadas, and made black beans, three different meat toppings, and about a dozen other topping options, with side dishes of Mexican-spiced rice, and homemade cole slaw. Logistically the meal worked well, although some people didn't realize that they were supposed to be able to pick up the tostada after they made it, and instead they buried it beneath a 2-inch deep mound of toppings. Also we forgot to put out the guacamole until after half the people had served themselves. Food wise, some parts of the meal worked better than others. The shredded chicken verde was good but would have been better with more of the tomatillo salsa, however the co-op closed early, and the normal grocery store had no green salsa. The beef/chorizo was good but could have used a bit more of something, Eric and I couldn't decide what it needed. The shrimp was a big hit, the only problem with it was it disappeared so fast, the recipe (as well as I remember it) for the shrimp is below. Chili-Lime Shrimp 2 lbs peeled uncooked shrimp (31-40 count -- cut into thirds) 10 cloves garlic (minced) 1 4oz can diced green chilies 2 limes chili powder canola oil Liberally cover raw shrimp with chili powder and the juice of 1 half of a lime, and let rest for 10 minutes. In small pan, heat oil over medium heat, add garlic and green chilies, until garlic is softened and fragrant. remove from heat. In large pan, heat oil over high heat, until it is smoking hot, add shrimp stirring occasionally to make sure all the shrimp are getting cooked, and none are burning, after about 2-3 minutes the shrimp should all be cooked, add the garlic and green chilies that you set aside, and the rest of the juice of the limes. Stir for about 1 more minute, and place in large bowl to serve. Overall the meal received rave reviews.

    Shambo, I'm so sorry to hear about your husband. I know he had some health issues and you were cooking low salt and healthy meals for him. I'm sending hugs and strong thoughts and prayers to your and your family. Jack, we are kindred spirits, I swear. When I make twice baked potatoes I'll make a whole sheet pan full of them, mine usually just has cheese, butter and sour cream, occasionally I'll add bacon. I freeze them and then package them usually two per package, Mother loves them and they're easy to heat up. Of course someone is always digging through my freezer to see if I have any, all of the grandkids and the kids love them and they make a fast and easy supper. Jasdip, as you know, I love potatoes in just about any form, so being able to grab a package quickly is a luxury. They are quite durable too, LOL. Neely, I have a pile of butternut squash in storage, if only I had a pile of prawns too! sleevendog, that looks pretty to me! Delicious too. No pictures here, today we had hamburgers! Tomorrow we're making sandwiches and having cake and ice cream for Madison's 9th birthday. No party this year, of course, but we bought her a hoverboard, so she'll be happy, even with just her folks and Elery and I. I baked a strawberry cake too, with sea turtles on top, her choice. I'll try to remember to take pictures, and hopefully she won't break an arm or a leg, riding the thing around the kitchen island or something... Annie

    Sharon, it is not fair to post that picture in the middle of winter. But is sure is beautiful.

    Kathleen your shrimp looks divine.

    Ann, your Mexican dinner would just hit the spot. I NEED a tortilla press just like yours.

    It was dinner for one here last night. But that did not stop me from baking off ONE roll from my batch of Artisan Bread in 5... dough. I baked it on my little stone in the Cuisinart toaster oven - 400° on convection. Next time I would bake it 450° and pour a half cup of water into a preheated small iron pan (I used a half cup of boiling water in a SS measuring cup for this one and it did not create much steam). BTW the purple line under the baking stone is the RED hot heating element in the TO - I hate taking pictures at night. It took 22 minutes to bake, rose beautifully, had a nice thin crispy crust and I was pleased.

    The rest of my dinner was an embarrassment - a small bowl of some kind of Progresso soup and a dish of cut up papaya.

    Sharon, I'm calling foul, too. Those pics are too pretty, when Will walked out the door and proceeded to have his feet fly right out from under him. ice ice baby.

    Ann, That photo is amazing. Did I ever tell you the very thought of cilantro makes my mouth water? And your potato chips are always beautiful. I always say that, though.

    Lee, I like the looks of that bread. I got the same book a few weeks ago, and it's become very popular among foodies. I've been really eager to make their Almond Brioche and Spinach Feta Bread. But, they'll have to wait until after Valentine's Day.

    Stacy, the book is called "Artisan Bread in Five Minutes a Day" by Jeff Hertzberg and Zoe Francois. It doesn't have a lot of pictures, but the recipes sound good and simple.

    Well, I've been trying to post dinner pictures, but I keep losing my connection.
    I'm never online on weekends, but I had to make an exception for the virtual pizza party. I'll be back later, hopefully.

    I've done it again. Thought I remembered how to, with the 6 strands.
    But I didn't, so I created another Monster. It is 20 in.
    long by 9 inches.

    But it was good tasting, even though I let it raise too long.

    I think I saved the Link for the 6 Stranded Braid, if anyone has it,
    could you put it back in " just in case " I don't.

    I lose everything , even my mind !!! But that catches up with me, now & then.

    Wow Lou, that is one big loaf. I bet it is delicious. Love the wonderful colour you got on your crust.

    Grilled a small New York Strip roast and served it with yellow cauliflower puree, green beans and parisienne potatoes.

    We had pinto beans, roasted pork sirloin roast and a green salad. The boys had biscuits.

    Tomorrow will be pizza day. And maybe a few other things.

    I forgot - I was inspired by hiMonkey, and made a batch of chocolate truffles tonight. I'll take them to a girlfriend tomorrow - we did snag a couple to sample though.

    I bought generic dark choc from Sprouts market and it's quite good. I added a Tb of butter to Monkey's recipe. I didn't have any flavored liqeuers, so I used a Tb of vanilla extract and a Tb of Bailey's. I rolled the truffles in coconut, walnuts and shaved choc.

    Too simple. I'm going to run out and buy some foil candy cups for them tomorrow.

    Thanks Ann, it was really kind of fun to pull off one little piece of dough and bake it in the Toaster Oven. I like cauliflower puree too, in fact I like your whole plate.

    Lou, I'm not ready for the BIG stuff like your braid, but it looks just wonderful.

    Gina, the polenta pies and truffles both sound YUM-O (yes I caught that the truffles aren't from RR, but still YUM-O).

    I wanted to do pizza tonight but after spending most of the night in the ER on Thursday, getting home at 5AM, I have been too wiped out to do anything but the simplest things (like pulling off one piece of dough and opening a can of soup last night). Thursday morning I had oatmeal with six walnut halves chopped into it. By noon I was coughing a little, by dinner I was coughing more, by eleven at night I discovered that I could not stop coughing if I laid down so I sat on the edge of bed watching TV with headphones so Max could sleep until 2:00 AM when I woke him and said I couldn't stop coughing and my esophagus was swelling. We went to the ER and three hours later after an Albuterol treatment and a heavy dose of Prednisone, they sent me home with more Prednisone and cough syrup. They tried to get me to take Vicodin thinking it would slow the irritation that was causing the cough and a cough syrup with Codiene - both make me throw up so I refused. The probable dx is a newly developed allergy to nuts. I hope not but can't be tested for it for several weeks until this is cleared up. I don't have any food allergies but about five years ago I developed an allergy to fur, so no more cats or fur bearing dogs in the house. Fortunately there are enough breeds of dogs that have non shedding hair that we can have a dog.

    So because I still feel awful, coughing a lot, rib muscles hurting and feeling very wiped out, I did a simple dinner instead of the pizza party.

    We had the Spanish Chicken from the chicken thighs thread, tweaked a little, less raisins by half, added capers and if my throat would have tolerated it, I would have added red pepper flakes and a finishing drizzle of lemon. Fortunately the red pepper sauce (with no tomatoes) was not acidic and didn't hurt. With those little changes, we liked it a lot and I would make it again.

    Oh Lee I am so sorry to hear that. I must compliment you for making any dinner at all much less one as nice as your chicken!

    Oh Lee..I'm so sorry to hear about your er experience. I have a dear friend who sighed and said her body is letting her down a good bit these days. There certainly are continuous changes, aren't there?

    And we also had progresso soup this week. Dick was thru his beefy ones, so he took one of my tomato - seems like it had some interesting name, Roasted? - so I had to settle for a mushroom. They filled us and we both went back to a sluggish afternoon, but all in all I should have had my old standby of 'desperate food' - ravioli straight from the can. ;-)

    One of us is off his feed


    but the other one of us has her appetite back

    with LOTS of these to nosh on.

    I plan to make Dick some scones today. He rarely loses all of his sweet tooth and while it may be carb energy, it's still energy. In the end I did talk him into two poached eggs also but only reluctantly.

    I'm going back to last Thursday when my friend Anne and I went after shopping for a drive down the coast to a fish restaurant and walked along the seawall where the wind was blowing strongly, the waves were crashing and the sun was shining. It was wonderful. So I've made a little story with photos over on the Gallery, and uploaded as well three short videos of a few seconds each at the end of an optional slideshow. There you can see and hear the sound of the Atlantic waves smashing onto the black volcanic rocks.

    Here's what we were eating:

    Friday I made my World's Best Meatloaf....yummy and took some samples to my Pilates class with the recipe translated to Spanish for the girls who had asked for it.

    Must get going on those pizza pics. Well actually I did a Mallorcan Vegetable Coca.....no cheese, no meat....delicious though!
    I also decided to do mine today(Sunday) as Saturday ended up being too busy and Wolf wanted to go out for lunch. Till later.

    Gina, I like the look and the sound of your Tarragon-Cream Chicken and Polenta Pot Pies.

    Sharon, Your lunch out with Anne looks delicious. But it always the potatoes with the two different mojos that I would really love to taste.

    Dinner here tonight was suppose to be Pizza. I was getting ready to make the dough this morning before leaving for work, when Moe put in a request for pasta instead. So I put a pot of my favourite pasta sauce (Sausage and Rosemary) on to simmer before going out the door.

    I've been having a serious beef craving for the last few days, so I took a Tri Tip out of the freezer yesterday. I never had Tri Tip before I moved to the valley from the coast...never seen it in the store even. Oh, it was probably sold, as some other cut, or as stew beef...but I'd never known it.

    Gosh though, meeting Tri Tip of Beef is one of the best things about moving to the valley!

    In the summer time, of course, it goes on the barbecue. But this time of year, it's too yucky (not to mention too cold----it interferes with the heat from the grill) so it's done in the oven on a high heat. You slice it across the grain and serve it as rare as you can stand it, and it's beefy heaven on earth.

    Anyway, I had some leftover quasi-succotash (limas, white beans,corn, onions, garlic, celery tomatoes, spices and a dash of maple syrup..actually, I should have said a cross between succotash and baked beans!)

    I've been trying to get away from a lazy habit of just serving veggies with a dollop of butter, salt and pepper. So tonight, I made some broccoli with garlic, ginger, fish sauce, soy, water, sugar & s/p, and some roasted beets with olive oil, toasted fennel seeds, mirin and red wine vinegar.

    We had all this with Tamaki Haiga rice and a glass of white wine.

    Yeah, I know, I know, red with meat, white with fish etc...phooey, I drink what I like! :D

    Saturday night was dinner out with friends - Italian served Family Style. It was really good. Sunday was game day and lots of appetizers and cooking on the grill - BBQ and chicken.

    Kathleen - NO! "Fry Me to the Moon" - you've got to be kidding! LOL!

    Canary - you live in the most beautiful part of the country. I see your pictures and keep telling my husband that we need to vacation there. That fish is outstanding looking as well as the meat loaf.

    Ann - We love Mexican and your dish looks great as well as the steak (besides Ribeye, NY Strip is one of my favs.). The pasta looks great too.

    lsr - Nice Artisan roll. Sorry to hear of your scare. I hope you are feeling better.

    Hawk - Great looking bread & huge.

    Gina - good looking chicken pie's & clean up as well too!

    Tonight for us will be some leftovers from yesterday (not complaining - I can't stand food going to waste).

    Mind if I just drool a while before I contribute? Honestly, you folks get better and better all the time and those of you whom I don't know (I've been away quite a while) are terrific additions to this on-going food-fest. Hopefully I'll get back in the grove and cook instead of talk. Minewhile, those are some scrumptious looking meals, breads, sides, and desserts.

    SharonCB, I love that cliff picture, almost as much as the kitty weather report.

    Duane, it looks like no one is going to adopt you, you'd better get cooking! (grin)

    As many of you know, I spent Thursday night through Sunday night with Dad and Stepmom, the two invalids, LOL. Dad had two surgerie on the arteries in his leg, then a heart attack after. Stepmom had her rotator cuff repaired on Wednesday. Those two kept me going all weekend, waiting on them. It seems like the two of them are busy seeing who can be the sickest. Sigh. Between the two of them, I'm whipped. Everyone needs a drink of water and a hot cup of coffee, stepmom couldn't get out of the recliner by herself, LOL. I did the laundry, scrubbed the bathroom, cooked, cleaned, did dishes, fed stock, filled water tanks, gathered eggs, filled bird feeders, changed the bandage on Dad's leg and made sure Stepmom got her pain meds. And, I lived to tell about it, LOL.

    Actually, I went there Thursday night, the docs had given SM Vicodan. She was throwing up, crying, she was a wreck. And all by herself. I spent the night with her in one recliner and me in the other, giving her pain meds and blankets and cleaning her up. Dad came home Friday morning, but he left his meds at the hospital in Grand Rapids. I finally got those all replaced and spent another
    night in the recliner next to SM. By Saturday she was taking Tylenol 3 and not throwing up, but Dad didn't feel well and took an extra Lasix so he was up all night Saturday night in the bathroom. I went to visit Amanda and the kids on Saturday and baked "tuptakes" with Makayla for about two hours. Chocolate with pink frosting and chocolate hearts, they were "very yummy". Dad was already calling after the first hour, asking where I was, I was only gone two hours and I had to pick up meds for both he and SM in that time. I spent Saturday night sleeping on the floor in Dad's living room while he moved from bed to couch to wheelchair to recliner. If he'd just stay in one place, I could have slept in the recliner or on the couch, but he was up and down, moving from place to place. Yesterday I came home, started laundry, did the dishes and just breathed a big sigh of relief. I came to work to rest, LOL. Ashley and Amanda both went today to check on the "old people", emptied the cat box, did some laundry and the dishes, generally made a fuss. Dad and SM are both happy now, their grandchildren love them. :-)

    The worst part, though, was the coffee. Dad only drinks Folger's and he makes a 10 cup pot of coffee with TWO scoops of coffee, it's just hot water but it's brown. I came home and promptly made myself a nice cup of sludge, LOL, I only drank tea while I was out there.

    Dad had pancakes for breakfast two mornings, Stepmom and I had strawberries and blueberries with my homemade yogurt and a drizzle of honey, ala SharonCB. Friday night I made some panfried catfish, steamed rutabaga and homefried potatoes. Saturday night we had cabbage rolls, mashed potatoes and roasted cauliflower. Sunday night I made pork chops, steamed broccoli, more homefries (Dad and SM both love them), and some chunky applesauce with the last of our apples and some brown sugar splenda. I boiled extra potatoes so SM could just make quick homefries. Dad's got that Irish background along with our Native American, so he has potatoes every day, and always has.

    There, that should catch me up on what's for dinner. What's tonight? I don't know, I'm pretty full, I drank nearly a whole pot of coffee today. (grin) I might just skip supper altogether and run on the caffeine!

    OMG Annie, I knew your weekend was going to be hard, but I couldn't imagine how hard it would really be. I think I would have said I was going to work today and then checked into a hotel, unplugged the phone, put the do not disturb sign on the door and slept half the day and then either read magazines while eating chocolate or gone for a pedicure. My hat is off to you.

    Thank you all for being concerned about me. I can't get tested for two weeks so I'm just avoiding nuts for now. I've stopped wheezing with the Prednisone and feel a lot better but picked up a cold so now I have a different cough - but not one to worry about.

    I finally made my pizza for lunch today - it was planned for dinner (a larger one) until Max called and said he was going out for pizza for lunch.

    I made dog food this afternoon, Brockley will be dining on a stew of chicken thighs and carne adovada with carrots, green beans, broccoli, apple, refritos negro and a mixed lentil bean brown rice pilaf. I love that I can clean out the fridge and freezer on "dogfood" day and he is a happy dog.

    I'm making a chicken veggie soup and two Artisan rolls for our dinner - love that I can bake one or two in the toaster oven. I'm wondering if I will ever actually make a loaf of bread from the dough.

    Lee, glad you are doing better with the allergy! and then a cold on top of it? Feel better! Brockley eats better than a lot of people I know :)

    Annie, you should be very proud of your girls for going over to your Dad's to help! They are terrific :) and so are you! I hope you got a nice rest at work, LOL! The tuptakes sound great!

    There's no way I can catch up after 80 posts, I have been reading and reading but not keeping up, no time lately to post to this thread, it's been busy, but good busy! Everything always looks great!

    Last night was wings with Cherry Chipotle BBQ Glaze and Chicken Chili. I got the recipe from Susan at GB, but it is very close to the one Elery makes. It's great. I topped it with sour cream, cheese, avocado and salsa. We didn't have leftovers.

    Everybody's food looks so good!

    Last night, I sold out. I used canned soups, packaged stuff and jars. Wondering when I'd start making tablescapes, I was somewhat disappointed to find out... it was good! Beef tips with burgundy mushroom sauce. I was embarrassed to take a picture of a canned/jar meal, but felt guilty afterwards that I hadn't given the meal the respect it deserved.


    Hubby couldn't believe it took me 20 minutes to make it. Honestly, I couldn't believe it. Elegant and tasty, I'm keeping ingredients on hand for whenever I need a quick but satisfying meal.

    I wanted dinner to be easy, so that I could focus my time and energy on dessert. Everyone's awesome quotes have so many nods to dessert. And Eileen's thought on mini food (me too!) made me think of tarts. But I ended up with chess pie that had a different sort of crust. I hate pie crust. It's hard to do right and pretty much tasteless. This was perfect! Ed and I would take a bite, then look at each other with thoes OH my gosh eyes. Heaven. I'm even considering using it for all "pie" crusts in the future. You could even use it savory dishes since it was cream cheese, butter and flour.

    I made Osso Bucco and a risotto for dinner last night. I still have a freezer full of blackberries so I made another blackberry cobbler for dessert.

    Lee that pizza is adorable (can pizza be adorable?). I grill pizza all the time at the cottage. Letting everyone build their own is an easy way to entertain. BTW , I ordered the Artisan Bread in Five Minutes bread book

    Annie, all I can say is you are a VERY good person. I am not a nursing soul, I will cook, clean, do the chores, but I really don't like the nursing part. I guess no one really does..but you do it graciously..I would have to force a smile...

    Kathleen, if you mean a recipe, here are the two I combined into one.

    DIL's Chess Pie

    Ingredients
    3 oz cream cheese, room temp
    1/2 cup butter, room temp
    1 cup flour

    1/2 C margarine, room temperature(the one and ONLY recipe I actually margarine because it changes the taste dramtically)
    1 1/2 C sugar
    3 eggs
    1 t vanilla
    1 T vinegar

    Combine the cream cheese, butter and flour. Refrigerate for 1 hour. Press on the bottom and sides of an ungreased pan to form the crust. Mix all the remaining to form the pie. Bake at 350 for 45 minutes-1 hour.

    adaption of Margaret North's recipe

    As you can see, I divided mine into four containers (8 ounce, I think). It worked just fine to divide the crust and divide the pie filling. Still took an hour.

    Rob, the truffles were so easy, I ran out and purchased candy cups and silicone molds. So compulsive, am I! Anyway the truffles were very rich and sweet - and I don't plan to make them for myself or DH. But they make nice gifties. I perused the web and found recipes with more cream and even yogurt. So I'm going to start experimenting. I love giving food gifts - my girlfriend and her hubby were all "you MADE these?" I think the co-workers will be my next victims, uh, I mean recipients - nyuk, nyuk, nyuk...

    Last night I made crab ravioli with a creamy tarragon tomato sauce. They were just "okay". Not worth the trouble. I used wonton wrappers - which I've used before for ravioli. But they must have been old or something because they got gummy quickly. And the crab filling was bland. My sauce was good and DH liked it.

    Jeez, trying new recipes is like kissing frogs looking for a Prince!

    Osso Bucco looks delicious. I never had that before! It looks so good.

    Sole looks good, Chase. I really wish my family would eat fish, I see the pictures and then I get a craving!

    Rob, the pies look great! I can't tell what dinner looked like, but it must have been excellent :)

    Tonight is skirt steak, and I have a pork thing in the frig I want to use. I sent Larry out for a tenderloin, he called from the cell, and between the crackles and the noise, all I could make out was loin. So now I have a pork loin. What do I do with that? Roast it? It looks like it could be sliced into pork chops or something. I had leftover Cherry chiptole glaze, San said it was good on pork, use it on that and roast it?

    We ate early tonight. DH had cataract surgery early this morning (he is fine, thank you) so we ate early tonight. Good thing, because this thread creates major stomach rumbles. Everything looks so good above.

    No photos but we had a salad of Romaine, endive, avocado and cherry tomatoes with a balsamic dressing. A simple baked potato and steamed buttered string beans. I roasted scrod fillets coated with a combo of grapeseed mayo, mustard seeds, and a 13 spice blend that I keep on hand. I served this with a savory roasted corn condiment (Napa Valley Co.)

    Dishes, those wings look awesome. Please share the recipe. I don't know where you live but where I am they charge an arm and a leg for chicken wings. I just don't understand.

    Hawk - I love shrimp and your dish looks great. We had shrimp tonight also.

    Rob - the chess pie looks super in the ramikins. I bet you enjoyed it.

    Ann - what can I say, that Osso Bucco looks incredible. I have not had that dish in ages and your picture is really making my mouth water.

    Chase - Nothing wrong with a plate of vegetables for dinner. In fact, during the summer time when everything is really fresh, it is one of my favorite meals.

    Bubbe - I've never eaten Scrod. What type of fish is it similar too?

    Tonight was shrimp scampi over pasta in our house. I've eaten too much meat the last few days so needed a change. Salad and crusty bread went along with it. YUM!

    Thanks, dixiedog, LOL, an arm and a leg for a wing? :) I'm on Long Island. I prebake the wings for about an dhour or so until they're pretty much done, Dh has a little habit of grilling until charred, so now it comes out perfect, bake them with salt and pepper at 350, finish them on the grill, glazing them with the sauce on a medium low heat.

    Chipotle-Cherry Barbecue Glaze
    2 tablespoons unsalted butter
    1 medium onion, finely chopped
    8 ounces cherry preserves (3/4 cup)-- I used more
    1/4 cup minced seeded chipotle chile in adobo sauce
    1/4 cup ketchup
    1/4 cup cider vinegar

    In a small saucepan, melt the butter. Add the onion and cook over moderate heat, stirring occasionally, until softened, 5 to 6 minutes. Add the remaining ingredients and cook over moderate heat, stirring, until bubbling, about 5 minutes longer. Transfer the mixture to a food processor and process until fairly smooth. Transfer to a bowl and let cool before using. The glaze can be refrigerated for up to 2 weeks.

    NOTES : Use this spicy, smoky, sweet barbecue sauce to glaze grilled meat or poultry in the last few minutes of cooking. It can also be served on the side.

    my notes I used 2 3 chipotle's, and left them whole itll get pureed anyway, I used a stick blender right in the pot, then I left it to simmer on the stove for a bit.

    Tonight I used up the Cherry sauce on grilled skirt steaks and the threw some Mexican burgers on the grill. I used the recipe from Debbie from the Virtual burger party. Baked potatoes and String beans sauteed in walnut oil.

    Since today is the last day before Lent, it's the day to enjoy all the comfort foods that are absent from our usual diet or will be no-no's until Easter!

    So....

    It's grilled filet mignon with Thrice Cooked Potatoes, and asparagus.

    Me, I say that's good, cher!

    ...the fatted calf for the Mardi Gras feast before Lent.

    The recipe for Thrice Cooked Potatoes (from Joel Dondis, who is now a noted chef in New Orleans and a good friend):

    Thrice Cooked Potatoes

    New potatoes, about 3 per person
    Olive oil
    Salt and pepper

    Peal the potatoes, but not too carefully, leaving some skin on. Boil them in salted water until just tender. Drain the potatoes.

    Add olive oil to an oven-proof skillet to coat and heat. Add potatoes, and cook, turning frequently, until they begin to brown. In the meantime, heat oven on broil.

    When the potatoes are beginning to brown on all sides, transfer skillet to the oven. (Remove excess oil with a paper towel, if necessary.) Broil until the potatoes brown a little more, cher.

    Bon appétit!

    We had Linda's Spicy Chicken cakes again tonight. And I made extra risotto last night so I could make Arancini di Riso. Wrapped the cold risotto around a cube of mozzerella, a basil leave and a small cherry tomato. Dipped in flour, egg and fresh bread crumbs and deep fried. Not exactly healthy eating, but oh so so good.

    Dinner tonight was good..I just ate it alone..I've been running since I walked in the door at 3:45..came back in at 7:20...The men are all at various basketball things. In between I had to drop off 2, take 1 to a Speed and Agility Camp, return him to basketball, take oldest to HS for Boys Basketball game..Left hubby and younger two at his basketball practice...Phew...

    Anyway dinner was Chicken Fried Chicken, smashed garlic yukons and corn. Oh with a liberal helping of GF chicken gravy.

    Well as usual everyone's meals and dinners sound and look wonderful! Hubby has been out of town for the past week, so not a whole lot of cooking going on. Did make a slow roasted chipotle pork boston butt roast the other day. Ended up having people over for dinner last minute, so I prepped some toppings,(onions, feta, cheddar, tomatoes, guacamole, cucumbers, cilantro, black beans, corn, peppers,salsa,sour cream etc) and put them in a bunch of bowls on the table. Big bowl of salad, and an electric griddle in the middle of the table. People could cook their veggies, or their taco wrap, make quesadillas or make a salad with topping of their choice. Made for a really nice leisurely dinner, and the guests seemed to enjoy it. Last few days has been soup made with all the leftovers, and one day we had gruyere biscuits, wich are a favorite around here, and yesterday I made gruyere gougeres. Tonight will probably be something simple as hubby and son have to work.
    I really have been enjoying all your wonderful meals!

    Scrod is really not a separate species, but a relative of Cod, perhaps just "baby cod" as the cashier at the fish monger said. Any way, it's a very adaptable fish as comes to recipes. It's flakey and never fishy. I love it and have a few different ways of preparing it. Besides, it is not crazy expensive..although if you asked me a year ago if I would spend 18.50 per pound for scrod, I would have laughed. Fish in NY is very expensive.
