Malagueta?

I visited Terceira Island in the Azores many years ago and every restaurant there served a cheese and malagueta appetizer. It was better at some places than others, and I always wondered what cheese(s) they used and how the malagueta was made.... I was certain it didn't contain tomatoes, was sure it was peppers, but the taste was somehow different. I never found anything on-line about it until today -- according to this site it's made with fermented sweet red shepherd peppers!

So now that I know how to spell it, has anyone ever made malagueta? have a good recipe? can it be made successfully with other sweet red peppers? what cheese would have been served??? I assumed it was made with cow's milk and most had a texture like goat cheese, if I remember correctly.
