It's Grandma's recipe, but....

I don't have many things that belonged to or came from either of my grandmothers, but I do have a hand-written recipe on old recipe cards from my paternal grandmother. She gave it to me before I got married in 1974.

I have never made this, because I'm really not much of a cake lover. But I ran across it recently and thought it would be fun to make it. However, upon reading it, it just doesn't seem right. Tell me what you think. This is typed up exactly as written on the cards.

Coconut Oatmeal Cake

1 cup oatmeal

2/3 cup shortening

1-1/4 cup boiling water

Mix and let stand 5 min.

2 eggs

1 cup brown sugar

1 cup granulated sugar

1 tsp vanilla

1 tsp soda

1/2 tsp salt

Beat eggs and sugar together, add oatmeal mixture to sugar mixture. Stir in vanilla, beat well. Sift dry ingredients together & add to batter.

Bake in 9x13 greased & floured pan 40-45 min in 350 degree oven.

Topping:

2/3 c brown sugar

6 Tbsp melted or soft butter

1 cup coconut

1/2 to 3/4 cup nuts (I use walnuts, chopped)

Beat well till spreadable. Add a little cream. Spread on cake & set under broiler till bubbly and brown.

Shouldn't there be some flour in there somewhere? And if so, about how much do you think? I can't see this ingredient list coming together to make anything that resembles cake. But I may be wrong.

I know there are some fabulous bakers on this forum that will know if the recipe is okay as written or what it needs.

Thanks~Linda
