Chicken Gumbo recipe

Here's my chicken gumbo recipe. It makes about 10 servings. Browning the flour and adding it to the vegetable saute helps keep the fat content down without giving up the taste of the roux or the thickening power of the flour.

Vegetable cooking Spray

3/4 pound Turkey sausage, sliced

1 1/2 pounds Chicken Breasts, skinned, boned

1/2 cup flour, browned, can take a while - see directions

1 T. vegetable oil

2 1/2 cups celery, chopped

2 cups onion, chopped

2 cups green pepper, chopped

1/2 cup gren onions, chopped

4 cloves garlic, minced

1 T. Creole seasoning

1 T. Worcestershire Sauce, Low sodium

2 t Hot sauce, optional

1/2 t fresh ground pepper

3 bay leaf

45 oz. chicken broth, salt-free

Gumbo file (optional)

6 cups cooked rice

Place flour on a baking sheet in a THIN layer. Bake at 400 for 30 minutes till dark brown checking frequently. Make ahead as this can take a LOOOOONG time if your oven isn't hot enough or your flour layer is too thick.

Coat a large non stick skillet with cooking spray and cook sausage 5 minutes on each side till browned. Set sausage aside.

At the same time, coat a large Dutch oven with cooking spray, add vegetable oil and place over medium hot heat until hot. Add all vegetables and saute 8 minutes or until tender.

Add browned flour and creole seasoning to vegetables and stir until vegetables are well coated with mixture. Add Worcestershire sauce, pepper and hot sauce if using. Stir well.

Add broth, sausage and bay leaves and stir well. Bring to a boil, reduce heat and simmer uncovered for 1 hour.

While this is simmering, go back to your non-stick skillet, spray if needed and cook chicken breasts 5-7 minutes on each side till done. Cook in batches if necessary and spray pan between batches. Remove chicken from skillet and let cool slightly, shred and set aside.

Add chicken to sausage mixture after it has been simmering for an hour and continue to simmer for 30 minutes.

Remove and discard bay leaves. Stir in gumbo file if using.

Serve 3/4 cup rice with 1 1/2 cups gumbo spooned over.
