'Gamey' taste in venison

The first time I tasted venison, I hated that 'gamey' taste. I now know why some people don't know what we are talking about. They have never tasted the bone-in kind.

When venison is processed, it is important to cut out all the bones. A boned-in cut will definitely taste strong. Boneless venison tastes very little different than beef and the ground meat (if fat is added) has a taste no different. We usually add fat to our ground venison except for a good portion that I want to use for jerky. That is best if it is very lean.

The secret with cooking venison steaks, chops and roasts is either cook them quickly (medium or med. rare) or do a long stewing. Venison will be tough if it is over-cooked unless it is WAY OVERCOOKED. A slow cooked venison pot roast is awesome.
