Healthy Soup

Bought some Mr. Goudas Soup Mix which contains navy beans, kidney beans, black beans, rice, lentils, yellow split peas, etc.

Couldn't find a recipe on the bag or at the website so I made up my own after reading various soup recipes online. This is what I made twice and hubby and daughter absolutely loved it. It's very healthy too... 92% fiber and 50% iron (soup mix).

Olive oil

1 small onion, chopped (used red/purple onion first time)

1 celery stalk, chopped

1 large clove garlic, minced

1 cup diced canned tomatoes with herbs and spice

1 large carton of Campbell's Vegetable Broth (4 cups)

1/4 tsp cumin

1/4 tsp chili powder

1/4 tsp ground coriander

1/2 tsp fresh ground pepper

1/2 cup Mr. Goudas Soup Mix

I didn't add salt because of the Campbell's broth and was going to add some carrots but didn't have any on hand.

Washed the soup mix 3 times to get rid of any foreign matters, like it mentioned on the bag.

In large pot, sauteed onion and celery in a little bit olive oil until translucent, and then added garlic. After a minute or two, added the soup mix and stirred it all up for almost a minute to coat it all. Then added the vegetable broth, diced tomatoes, spices, etc.

Brought to a boil, covered it, and simmered it for a couple hours till beans were cooked.
