Yahoo! Oven Roux

From my first trip to New Orleans - I have been in love with gumbo. It would definitely be my last meal - had I the choice. Until now, it has been an all day Sunday type of meal, as it is pretty time consuming. I happened across the Deep South Dish website, where lo and behold there is a method for making roux in the oven. I made a double batch today and it's fabulous; an hour and 20 minutes, stirring only every 20 minutes for a beautiful dark roux. I've also made a double batch of the chicken/shrimp broth so will put the extra roux and broth in the freezer. This way, I can make gumbo on a work night - as all the time consuming parts are done. Excuse the carpy phone picture - my daughter is using my camera to video her Lord of the Flies project.
