Feeding a Crowd

I am in charge of feeding about 60 volunteers, mostly woman in their 30-50s. I have pizza that is being donated, but want to offer chicken soup, rolls and salad. I will also have veggies and dip, fruit, and some desserts.

How much soup and salad should I figure?

Is the pizza being served with the soup, salad etc.? I would think there will be people that will eat pizza and salad, but no soup. And people that won't touch the pizza but have soup, fruit and salad.

If so, 3 gallons of soup should be enough. (3 gal. = 48 - 8 oz. portions) Maybe go 3.5 gallons to be safe.

A couple of other factors. Is it a green salad? If so, what other things were you planning to add to the salad? Is this lunch or dinner?

Thanks for your help, this is lunch.

Yes it is a green salad. I will keep it pretty simple, I'll be purchasing bagged salad with lettuce, carrots and red cabbage, and adding cherry tomatoes. On the side I'll have some croutons and dressing.

I'm less familiar with the Miele ovens, but do know about cooking for mobs. I'm impressed with your use of the single 24" oven. I could only manage meat for a couple of dozen with my old oven, with simple veg on the stove, and a lot of cold sides, or borrowed a portable oven from my mother. Because of the small size of the cavity in the Gaggenau combi-steam, I also got an Advantium, which holds a lot, (instead of a portable). It's fantastic having the three ovens. I don't use a microwave for mobs, at least not at time of service. If you have room for the oven, speed oven and steam oven, and if you can use the steam oven for some of your time of service cooking (e.g., a fish course, dumplings, or veg), then having the three spaces would be great. If you don't have that use for the Miele steam, and/or if you use a microwave when you're entertaining, then you might as well get the Gaggenaus that you were dreaming of, and use the combi- as a second oven. For me, the roast(s) go in the big oven, the secondary main goes in the combi- and the sides go in the speed oven on convection oven setting. The warming drawer is great for stovetop dishes that are finished before company comes. When I've gotten better with the speed oven settings, I might use that for the secondary and swap things around. Also, if I'm having a smaller group and baking potatoes I'll do them in the speed oven. I have to admit that when it gets to be more than 50, I'm all for calling the caterer, at which point they'll bring whatever additional equipment they need. In your situation, I'd look back on the last few menus, plus look at the things that I'd wanted to make for company but couldn't manage before, and figure out the capacity and timing on each of the suites. That should give you a good idea of which works best for you.

You say you want a "stock pot"....but what you are taking about is a Dutch oven. If you really want a stock pot, to boil up bones and stuff to make stock....go with the 16 quart...which you have. Get the 8 qt spaghetti pot with the insert....and make sure it has a clad bottom so you can use it for soups as well. Linda c

They should have already asked if they could contribute...so I think the jar in a very prominent place would be the ideal solution. Some ideas (to keep it easy and casual)... 1) A stack of paper plates, loaves of white and wheat bread, luncheon meats or prepared tuna, chicken salad, or pimento, mayo, mustard, and chips. 2) Big bowl of salad greens, bottled dressings, croutons, cherry tomatoes, grated cheese, green onions. 3) Plate of taco shells, bowl of cooked ground beef, shredded cheese and lettuce, and salsa. 4) Big plate of crudites (broc, cauli, carrots, green onions) and dip. 5) Rotel dip and chips. (It's filling!) I think all these are quick, easy, and after all, they aren't there for a full meal, right? Help yo'self, folks!

I think you are wise to make it simple. That menu you described in your first post... sounds like more than $2/person. Someone was forking out some bucks from their own pocket to cover that! I've been involved with a project that required feeding about 200 people twice a day for a week. But our situation was different, we didn't have to travel with the food. The fact that you need to travel with the food is another reason to keep it simple. Lately I volunteer to prepare food for gymnastics events (three meals a day for about 30 people all weekend). But I don't plan the menu. I just do what I'm told. ;o) Knowing teens, I second the pizza! It's so easy to find a chain location in the town you're traveling to that will DELIVER the pizzas to the site. That's be my kind of plan! If you call ahead, they can probably give you one heck of a deal, too. Prepare small bags of fresh fruit and/or vegies to serve with it. Kept in a cooler, they can just be pulled out for each meal or available for snacks. When I take sliced oranges to my kids' events, they are gone fast. I'd have lots of fresh fruits that keep available, apples, bananas. These are teens, I'd find easy foods they like, with nutrition also a priority, and convenience and cost, but NO priority on the themed menues fit for a wedding reception. Chili is good with toppings each kid can fix it up the way they like. Maybe baked potatoes. You could load the oven up with those and have a lot easy. Individually wrapped in foil and kept in a cooler for hot food, they'd be good a while, wouldn't they? Serve with choices of toppings. Next to pizza, my teen likes baked potato bars. Different flavored chicken wings- kids love those. I'm curious how this works out for you, too. I'm sure the majority of your booster parents will agree: keep it simple. There are always a couple who like to show off, but speak up for common sense and I bet the majority will back you. I was in a marching band that traveled to competitions like that. Leaving at 0.early and arriving home very late. It was the best time, I loved every minute of it! What committed parents to organize good food for the kids! I wish I was going!

I would plan on one cup of each. Some will eat less, some more. It also depends on the serving bowl for soup and the ladle, unless it is already in a bowl/cup, which I would recommend, btw for the soup.
I am assuming the salad will go next to the pizza on the plate and I think if they are serving themselves, one cup of lettuce using tongs to serve, (not counting tomatoes or croutons) is close.

I agree with Bumble on the salad. And 3.5 gallons of soup would be 56 one cup servings.

And you said you will have veggies, fruit, dip and desserts. You did not say how many pizzas were being donated. But (with the pizza) I think you would be covered with the amounts suggested.

I'd omit the soup. Pizza, salad, veggies and dessert is more than enough and quite nice for a volunteer lunch. How will a guest juggle a bowl of soup in a buffet line, assuming it is buffet? And it's not necessary and imo does'nt 'go' with pizza and salad.

I chaired a Room Mother's Lunch for 125 ppl and we had salads (green and pasta), bread, and dessert. Nice party and everyone was happy. Catered, and a generous budget.
