RECIPE: Orange Cake

Received a box of oranges and am trying to find a recipe before they go bad. Wondering if I can substitute oranges for lemons in a lemon pound-cake recipe?

Any suggestions?

Just a follow-up in case anyone is interested - made Ina Gartens Lemon Cake recipe, substituting orange juice and orange zest. Turned out unbelievable. Didn't change a thing.

I think her lemon cake is the best ever, now the orange cake is tied!

I looked up the recipe, it sounds really good & I have copied. I've been looking for a good lemon cake & will try this one as soon as I can. The orange version sounds good too. I really get a craving for lemon cake in early spring.

Ann Better Homes and Garden, Jan/2003 Orange-Champagne Cakes PREP: 30 MINUTES BAKE: 30 MINUTES STAND: 10 MINUTES COOL: 1 HOUR 1 1/2 cups polenta cornmeal or yellow cornmeal 1 cup all-purpose flour 2 tsp. baking powder 1/8 tsp. salt 1 1/2 cups unsalted butter, softened 2 cups sugar 6 eggs, beaten 1 cup orange juice 3 cups finely ground almonds 1 Tbsp. finely shredded orange peel 1 1/2 cups champagne, or sparkling wine 1/4 cup sugar Finely shredded orange peel 1. Preheat the oven to 325[degrees] F. Grease and flour two angelette pans (see page 122) or twelve 4-inch muffin cups; set aside. In a bowl combine polenta, flour, baking powder, and salt; set aside. 2. In a large mixing bowl beat buffer with an electric mixer on medium to high speed for 30 seconds. Add the 2 cups sugar; beat until well combined. Add eggs, beat until combined. Beat in orange juice (mixture may appear curdled). Beat in polenta mixture just until combined. Fold in ground almonds and orange peel. 3. Spoon batter into pans (about 2/3 cup batter each). Bake for 30 minutes or until a wooden pick inserted near the centers comes out clean. Cool in pans on wire racks for 10 minutes. 4. Meanwhile, in a saucepan combine champagne and the 1/4 cup sugar. Bring to boiling, stirring to dissolve sugar. Reduce heat; simmer, uncovered, about 10 minutes or until mixture is reduced to 1 cup. 5. Remove cakes from pans. Transfer cakes to a large platter, placing cakes bottoms-up. Prick cakes with wooden toothpick. Carefully spoon or brush champagne syrup over cakes. Immediately cover cakes with plastic wrap; cool completely. Serve cakes at room temperature. Garnish with additional orange peel. Makes 12 cakes. EACH SERVING: 715 cal., 44 g total fat (17 g sat. fat), 171 mg chol., 127 mg sodium, 67 g carbo., 6 g fiber, 13 g pro. Daily Values: 24% vit. A, 18% vit. C, 15% calcium, 17% iron.

I have no clue why this is doing it but I'm dying to make this; however, I need a little help here. Under the cake's ingredients, I need the amount of oil and nuts. Under the glaze's ingredients, I need the orange juice amount. There's some type of funky symbol only on the above quantity of ingredients. I'd be so grateful if someone would be kind enough to help me with the correct measurements. Have a good one and thanks again! There are may versions of the Better Than Sex Cake.This recipe was given to me by an aunt. I made it once many years ago to take to work. It was a hit. 1 (18.5 oz) yellow cake mix 1 (1 lb 4 oz) can crushed pineapple 1 C sugar 1 ( oz) pkg vanilla pudding mix (not instant) 1 C whipping cream, whipped & sweetened flake coconut, lightly toasted Prepare cake mix according to directions on pkg. Pour into 13 x 9 pan and bake as directed. Cool. Combine pineapple & sugar & bring to a boil. Cool slightly. Poke holes into cooled cake with a fork. Pour pineapple mixture over the cake. Prepare pudding mix according to directions. Cool. Spread over pineapple & chill. Just before serving, cover with whipped cream & sprinkle with coconut.

Both cakes are so good. The lemon is lemony (not sweet), but so good. If you love lemons, you'll love it! I think it is the best lemon cake I've ever had. So glad the same recipe worked with oranges.

This is an old favorite-- very moist-- quick to put together.I remember Mom teaching me when I was 12 or so, long before I had even heard of a food processor-- used the old foodmill.

INGREDIENTS
Cake
1 orange
1 cup raisins
1/3 cup walnuts
2 cups Pillsbury BESTÂ® All Purpose or Unbleached Flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1 cup milk
1/2 cup margarine or butter, softened, or shortening
2 eggs
Topping
Reserved 1/3 cup orange juice
1/3 cup sugar
1 teaspoon cinnamon
1/4 cup finely chopped walnuts
. DIRECTIONS 1. Heat oven to 350Â°F. Grease and flour 13x9-inch pan.
Squeeze orange, reserving 1/3 cup juice for topping; remove seeds. In
blender container, food processor bowl with metal blade or food mill,
grind together orange peel and pulp, raisins and 1/3 cup walnuts. Set
aside. 2. Lightly spoon flour into measuring cup; level off. In large
bowl, combine flour and all remaining cake ingredients at low speed
until moistened; beat 3 minutes at medium speed. Stir in orange-raisin
mixture. Pour batter into greased and floured pan. 3. Bake at 350Â°F.
for 35 to 45 minutes or until toothpick inserted in center comes out
clean. Drizzle reserved 1/3 cup orange juice over warm cake in pan. 4.
In small bowl, combine 1/3 cup sugar and cinnamon; mix well. Stir in
1/4 cup walnuts; sprinkle over cake. Cool 1 hour or until completely
cooled. High Altitude (3500-6500 ft) Increase flour to 2 cups plus 2
tablespoons. Bake at 375Â°F. for 35 to 40 minutes.
