Valentine's Day Cocktail and Cupcakes Julibee

I think it would be so fun to have a Cocktail and Cupcakes Jubilee for Valentine's Day which is Thursday February 14th!

We could decorate cupcakes and make cocktails for that special someone. If you don't have a special person then you can celebrate with us!!

Anyone want to play?

Ooops I mixed up the "l" and the "b" in Jubilee...LOL!!

Oh well, I hope this does not discourage anyone from participating.

I promise to decorate my cupcakes better then I spell.

sandi, thank you. We waited as long as we could for him, but he had to work late, and you are right, they had already had their day together, he has to work extra hrs sometimes, but DD and I were OK with this. patty, oh that is so aggravating to get home and find the items broken, that has happened to me too. The only place I have seen the candle holders like mine have been at Macys. Once Walmart sold out of them after Xmas, they did not bring them back, I suppose it was a Christmas "type" of item rather and a regularly carried thing in their store. Mary, thank you. I had purchased the lotus candle holders at Walmart during the Xmas season, figureing that I would use them for a few different things, they look pretty holding a small cake or holding decorated cup-cake too. In this case I just used them as a charger/throne for the footed bowl for the shrimp cocktail. I like to think of ways I can use something for a different use. You can even turn them upside down for a different "footed look". luvs, thank you for the complements too. Work and it's issues sometimes gets me down and I just have to step back a bit, retirement can't come soon enough LOL I'm not sure what you mean by 2 chargers. I used the round mirror placemat and the silver flower edged tray as a charger, and the rest were just my china plates (probably hard to tell by my photos). Believe me the candle light really adds immeasurably to the atmosphere, and the real flowers make me happy too. purple moon, thank you, LOL, they are all easy to clean, if not then it would be a whole other situation, even the silver just gets washed in hot soapy water, a good rinse and dry and WaLa, done! In fact washing china is easier than washing stoneware, china is very light, but sturdy. Yachter, thank you, I have aquired alot of things over the years and interchange them alot. Plus, I tend to put my "extra" money into dishes and such, I don't have an extensive wardrobe and such, and most of all the DD is finally out on her own, so I have a few more pennies to spend than I had in the past, but even I have to slow down, I have some major house fixing to do coming up. As far as storage, well I can take over all the closet and shelf space I want LOL, since I'm alone now. I do plan on doing some major shelving in the garage this summer for the less delicate things.

Stacy, this chicken dish is really good and is only about 30 minutes from start to serve. You could serve it over rice or orzo that you prepare in advance and just warm up. Creamy Tarragon Chicken From Fresh Market-Grand Rapids, MI 4 boneless, chicken breast halves Salt & pepper to taste 3T all purpose flour 2T olive oil 1T onion, finely chopped 1/4 c white Bordeaux wine (you could use any white wine) 1T fresh tarragon, chopped 1/4 c chicken broth 3T butter 1/4 c heavy cream Season the chicken breasts with salt & pepper, dredge in flour. Set aside chicken and remaining flour. In large sauté pan, heat olive oil over mediumh igh heat. Brown the chicken 2-3 minutes per side until golden brown. Set aside and keep warm. Add onion to pan and cook 1 minute. Pour wine into pan and increase heat to high. Deglaze pan by cooking until almost all the liquid has evaporated, stirring to loosen browned bits on bottom of pan. Reduce heat to medium low and add reserved flour, stirring to form a thick roux. Stir in tarragon and broth. Return chicken to pan and cook until chicken is cooked through and juices run clear, about 10 minutes. Remove chicken to plates, add butter and cram to pan and heat through. Spoon sauce over chicken and serve. Joe's Seafood lasagne is rich, and super elegant. You can use any combination of seafood you like, really, and it can be made ahead. WHITE WINE SEAFOOD LASAGNA Makes 6 good portions; 8 for the smaller ones 2 pounds bay scallops 1/3 cup butter 1 cup green onion \-\- chopped 1 clove garlic \-\- minced 1/4 teaspoon thyme \-\- dried 1/3 cup all\-purpose flour 1 cup chicken broth \-\- regular strength 1 cup whipping cream 1/2 cup dry white wine 8 ounces lasagna noodles 1/2 pound crab meat \-\- cooked, shredded 1/2 pound swiss cheese \-\- shredded Rinse scallops well and drain; if using regular scallops, cut into 1/2\-inch pieces. Melt 1 tablespoon of the butter in a 12\- to 14\-inch frying pan. Add onion, garlic, and thyme; stir on medium\-high heat for 1 minute. Add scallops and cook, stirring often, until they are opaque in the center (cut to test), 2 to 3 minutes. Remove from heat and pour scallops into a large strainer positioned over a bowl; let drain 20 to 30 minutes. In the same frying pan, melt remaining butter on medium heat. Add flour and stir until it turns a light golden color. Remove from heat and smoothly mix in broth, cream, and wine. Return to high heat and bring to a boil, stirring. Set aside. Fill a 4 to 5\-quart pan 3/4 full with water and bring to boiling over high heat. Add lasagna noodles and boil, uncovered, until tender to bite, about 10 minutes; drain. Rinse lasagna with cold water until cool; drain again and set aside. Pour scallop juices into a 1\- to 1\-1/2\-quart pan and boil on high heat, uncovered, until reduced to about 2 tablespoons; stir near the end to keep juices from scorching. Mix juices and crab meat with cream sauce. Line the bottom of a 9\- by 12\-inch buttered baking pan or dish with 1/3 of the lasagna noodles. Spread noodles with 1/3 of the sauce, top with 1/3 of the scallops, then with 1/3 of the cheese. Repeat layers twice more, ending with cheese on top. Cover pan with a lid or foil; if made ahead, chill up to one day, then bring to room temperature. Bake lasagna in a 350 F oven for 20 minutes. Remove foil and bake until cheese is golden, about 20 minutes longer. Let stand 15 minutes before cutting; lift out portions with a wide spatula. Makes 12 servings as a first course, 6 as an entree. I've made these - very good! Note: I did leave out the coconut as my family does not care for it. From Emeril.com OOEY GOOEY STUFFED CUPCAKES Ingredients needed: 1 1/2 cups all-purpose flour 1 cup granulated sugar 1/2 cup sifted cocoa powder (for chocolate cupcakes) 1 teaspoon baking soda 1/2 teaspoon salt 1 large egg, cracked into a small cup or saucer 1 stick unsalted butter, softened 1/2 cup buttermilk 1 teaspoon vanilla extract 1/2 cup hot water Chocolate Sauce OOEY GOOEY FILLING: 6 ounces cream cheese 1/4 cup sugar 6 ounces bittersweet chocolate chips 1/4 cup flaked sweetened coconut Preheat the oven to 350 degrees F. Line 1 (12-cup) muffin tin with 12 paper muffin-tin liners and place 4 paper muffin-tin liners inside another muffin tin. Add 2 tablespoons of water to each of the paperless muffin wells. In the bowl of an electric mixer, combine the flour, sugar, cocoa powder, baking soda, and salt. Add the remaining ingredients, adding the hot water last. Beat with an electric mixer until smooth. Divide the batter evenly among the paper muffin-tin liners. In a small bowl, beat the cream cheese with the sugar. Fold in the chocolate chips and coconut. Drop the cream cheese mixture into the center of the cupcakes. Bake for 20 to 25 minutes, until the cupcakes rise and a toothpick inserted into the center comes out clean. Remove from the oven and transfer to a wire rack to cool completely. Drizzle chocolate sauce over cupcakes when serving. Yield: 16 cupcakes

Lou, it's been a busy few days for me, so I've been sporadic in posting..I'm sure it's the same for most folks.

There are a few gluten free cake recipes I want to try, so maybe then is the time. :o) Most of them only make a dozen cupcakes anyway..so not to much waste if they aren't to good..
LOL

Okay I've decided I'm in..one way of the other.. ;o)

Since my sweetie is in Iraq, and I can't send him cupcakes (MUCH LESS a cocktail!), I'll make cupcakes for my daughter's class and maybe some lovely red punch.

How's that for participation?

That was the angle I was thinking too Pat..LOL But if I do one, I've got to do two Classrooms..may just make it for my favorite staff...(that's usually what I do.)

I think it sounds really cute Michelle - I'm just toying with the idea of having a small dinner party on Friday or Saturday of that week, and don't want to stretch too thin. I've done that for a couple of years and do everything with a valentine theme...

I'll keep this in mind, though! In case we don't.

I pop in for minutes here and there..all though didn't touch the computer all day Saturday..and only briefly on Sunday. Boys finally left for school 2 hours late...and hubby decided not to commute..He can drive in snow just fine..it's the other idjiots!

Lucy and I already have been baking and freezing our cupcakes for the big day. And I think Lucy is making tarts too.

I think we may have Margaritas, one of my favorite cocktails.

I've been wanting to buy the larger 6 muffin tin...this will give me the excuse to just do it!

After my last stem cell transplant, I lost the taste for alcohol...so I'll celebrate with a cup o'joe. A splash of Baileys always sounds so yummy though. Hmm, we'll see...

Wanted to do the "Swap', but then realized, that I dont even post enough to participate. Well looks like I better pick up the pace......

I would love to join in.....don't to any decorating of cakes of any kind....but can do a lovely "Sweety Cocktail".

I won't be getting back to the Denver airport until after 11:00 PM on the 14th so I can't do it. Even though I don't bake and I don't decorate, I would have participated if I was going to be here. It sounds like fun and I'll love catching up on what everyone does.

Michelle - those cupcakes are so cute!

But I'm going to copy the ones someone(?) made and posted a while back with the dove hearts on them. Erin (my daughter) and I went to Hobby Lobby last weekend and bought chocolate sprinkles and special Valentine cupcake liners too.

Just plain old simple chocolate cupcakes with pink icing, chocolate sprinkles and those Dove hearts outta make those kids buzz around in circles for a couple of hours!

I don't like cake/cupcakes so all I would have would be cocktails and you know how I get after a few of those! LOL

I'm going to have to opt out of the actual event - we are having 2 families over for a valentine dinner next Saturday and I'll most likely be preparing for that.

I think I'll sit this one out too. I'm not big on cupcakes and I must confess that the idea of Cocktails and cupcakes just doesn't do it for me.

Sorry, but this won't work for me either. It's DMIL's true birthday and she doesn't drink and I don't think she'd be thrilled with a cupcake either. Maybe, but she's not a big sweet eater. Heck, maybe that's why she's gotten to her ripe old age with more energy than me! LOL!
