My daughter Ariel and I had the day off today so we decided to cook something together for dinner. She received a new slow cooker cookbook for Christmas and wanted to try a recipe from it. Southern Brunswick stew sounded good to her and I said fine. I should have read what the ingredients were, never having made it before.
I don't like green veggies in my stews. I don't know what it is about them but I just don't care for the texture or taste when they are put in stuff. I don't put peas in my deep dish chicken pot pie either. No green beans in stews, yuck. I can eat green veggies as a side dish, just not in stuff. Yea, I know, strange. So we changed out the lima beans, corn, and okra to parsnips, sweet potatoes, and I allowed a handful of green beans(I'll pick those out). All other ingredients are true to the recipe. So I guess it isn't Brunswick stew for real. Just a modified version of it. lol She also wants to make a Mexican chocolate lava cake in our smaller slow cooker. It only takes 2 hours so that won't be to bad. Any one do cakes in a slow cooker? How did it turn out? NancyLouise

At a potluck I was at recently someone brought Brunswick Stew. I got a bowlful and started eating it, and found lima beans in it, which aren't my favorites. I thought I'll just eat around them. Then I heard the cook telling someone that in order to be authentic Brunswick Stew, it had to have squirrel (or other game in it). She said it she didn't want to overdo it, so she only put one squirrel in it.

After hearing that I couldn't eat another bite, and fed the rest to the trashcan.

Yup, Fannie Farmer says that Brunswick Stew CAN have rabbit or squirrel (or 'coon), and lima beans and corn, potatoes and tomatoes. Her recipe has chicken.

Had it for the first time 37 years ago in Durham, NC at Bullocks Barbecue, along with barbecue, cole slaw, hushpuppies and SWEET tea.

I love it, though I make it with chicken, and usually with spoonbread.

I love Brunswick Stew. The first time I had it was when we lived in Durham, NC and always got it with the barbeque at our favorite place. I use the recipe in Fanny Farmer Boston Cooking School, though I only use chicken, not the squirrel or rabbit suggested. Brunswick Stew Vary this famous Southern dish in many ways. It is often made in huge quantities for an out-of-doors get-together and can be made of squirrel and rabbit as well as stewing chicken. Sometimes pork spare-ribs and pieces of stewing beef are cooked with the chicken, and other vegetables are added, such as green beans, okra, diced potatoes and peas. Cover with boiling water 1 stewing chicken, cut in pieces Cover and let simmer over low heat for 45 minutes. Add 2 teaspoons salt Cover and continue cooking until tender (about another 45 minutes). Take out the pieces of chicken. Remove the bones and cut the meat in l-inch pieces. Put back in the kettle and add l can condensed tomato soup, 8 tomatoes or l cup canned tomatoes (I use diced tomatoes) I onion, sliced thin l cup green lima beans 3 potatoes, sliced thin l tablespoon sugar Salt and pepper Cook until the beans and potatoes are tender. Add I cup corn, cut from the cob, or canned whole-kernel corn 1/4 pound butter Cook 5 minutes. Serves 6 to 8.

Nope. In Georgia we do not put lima beans in our Brunswick Stew. I remember a BBQ restaurant that opened here that served it with Lima beans for a very short period of time before they figured out we wouldn't eat it that way. LOL! Here's my recipe. BRUNSWICK STEW Brunswick stew is a traditional dish served at Southern barbecues. It is a favorite because of the flavor combination of chicken, beef and pork. The dish is long on flavor and short on leftovers. 1 baking chicken (2-3 pounds) 1 lean pork roast (1 1/2 pounds) 1 beef roast (1 1/2 pounds) 1 28 oz can crushed tomatoes 1 can (6 oz) tomato paste 1 can cream style corn 1 1/2cups frozen whole kernel corn 1 large onions, diced 1 Tbsp Worcestershire sauce 1 Tbsp butter or margarine 1 Tbsp. Vinegar 1/2 tsp crushed red pepper 1 tsp roasted garlic Place chicken in a large kettle, cover water and cook until meat comes off the bone easily. Remove meat and de-bone. Strain broth through a cloth and return it to the kettle. Season pork & beef with olive oil, salt, pepper & garlic powder and smoke on grill. When meats are done grind in food processor. Rather than telling them, I would have marked where they were to put the panel, as well as putting everything in writing. You told them it was a closet, so they wouldn't have thought you then wanted to add a further enclosure. They should have realized about the ceiling. However, it looks like they can drop the whole thing--or just the top box--to clear the ceiling. Place in the insulation--foam board or rock wool only, no vapour barrier needed. You want the panels mounted on something solid, not drywall.

What's sad is I have 2 other gardens amended ready to plant in !! But on the s. side of my yard in full, direct, all day sun.. ugh! dahlias won't survive here - they need afternoon shade in my heat :( My hubby said just dig the holes - I knew better!! but thought how I will be pulling weed & grass clumps out of the area for the next 2weeks before I dare to plant one tuber in :( even after digging up the top area of sod. I feel stuck :( I dont want my tubers to stay out of the ground another minute but also know what it's like to do something half @s$ in the beginning and regret it until I fix it ! Now that u have me thinking ab it !! It's harder work to go back n fix it verses doing it right in the first place. I have 47 tubers waiting to be planted - my fear is, if I go ahead & do the bed right, it might take a while. I dug individual holes bc I've been physically sick lately & haven't had the energy to do my normal gardening - I counted 4 bags of black cow & 3 bags of potting Mix - far from enough to amend this area. But I can use soil from one of my open gardens I only have some kelp & bone meal in it - I'm an avid gardener. I know amending a small area for a plant does nothing good for it - I honestly think it's better not to ammend at all unless enough area is amended to accommodate the root zone @ maturity. I was trying to convince myself it'll b ok this way & I'll fix it this winter. Do u have any ideas for a quick solution ?? I wish I had the money to hire help to get this done asap!! Ugh- So how far apart on center should the tubers b planted ?? and in between rows ? I went by online recommendations. I'm beyond upset with myself I didn't start this early march!! Grrr !!!! Very upsetting... Along the south side of my house there's a hillside that stretches out past the right side of my back yard & circles behind it. The hill dips into a valley, which is were my "immediate" backyard is. The lowest point of this " valley" is behind the area I picked for my dahlias 2b planted. My backyard is a little valley but the ground closer to my house is higher than the rest of this valley area. I chose to plant my dahlias in this area closer to my back lanai for afternoon shade & higher ground. Bc the dahlias are at a higher point than the rest of the " valley" if it rains & floods, my dahlias won't be sitting in it. My yard is weird & uneven. I'm upset I waited way too long to get this started!! Do u think I will have blooms this fall if I get them in within a week ? This recipe called for chicken thank goodness. Don't know where we would get squirrel meat! Reading more about it I found different meats that the original recipe called for. And also different areas that claim to be the originators of Brunswick Stew. NancyLouise

Small world: I first encountered it, also at Bullock's in Durham, also 37 years ago. I had just moved to Durham in the summer of 1976 and people said that was THE place to eat.

As I understand it, Brunswick stew is like a burgoo: often made for a large number of people with whatever was available. Squirrel and rabbit made it into the pot, but as we got more civilized game got supplanted by stuff you could get at the market. Lima beans, tomatoes and okra are traditional ingredients, though.

Goodness. Did we know each other! Probably ate there at the same time. We loved it and could afford it on my XH salary as an intern at Duke.

Our Brunswick stew also had either rabbit or squirrel and the choice depended only upon what Dad or my brother happened to shoot that day. Both were good, and I don't mind the little baby limas, it's those big ol' honking mealy ones I don't like. We never added okra, I wasn't the only person in the family that didn't like it, LOL.

Cake in the crockpot? I've tried that once, a hot fudge pudding cake. It worked fine, not something you want to turn out and frost but perfectly acceptable dished out with a spoon, topped with the hot fudge in the bottom of the cooker and with some ice cream on the side....

I was thinking the same thing Annie, a scoopable cake. We didn't get to it the other night. Will try the choc. recipe this weekend. We did make the stew thou. Chicken and ham were the meats called for. Followed the recipe and was a bit disappointed for a first try. Chicken was chewy and there wasn't much in the way of seasonings so not a lot of flavor. Will have to tweek it some the next time.
Bumbelbeez, I have watched a few episodes of DD. Those guys are great fun! It seems the women rule the roost though. lol NancyLouise
