Re-use braising liquid/sauce?

As mentioned before, I made a short rib recipe for Christmas that I loved. There was a ton of sauce left over which I promptly froze. My thought was to thin it out with a bit of water and then use it to braise new beef for a second meal. Is there anything inherently wrong with doing that? Please see linked recipe.

ps - Lars, if you're reading, here's another use for your tamarind paste beyond Pad Thai. Can't remember if you guys eat red meat though.

I would definitely like that recipe, but Kevin won't eat beef. At some point, I might buy a short rib for myself and a turkey (or chicken) thigh for him and cook them the same way but in separate pans.

As for reusing your braising liquid - I personally would do it, but I would also add a bit more onion and garlic, as their flavors will have faded by now. The other flavors should hold up well - except for maybe the celery, but that won't make that much difference.

Thanks Lars - Yeah I was thinking since it was never a marinade I'd be ok. I like the idea of freshening it up a bit. Will definitely do that. I don't expect it to be as good as the first time around, just hoping for "still quite good."

Hey Joe watta ya know: I thought I was the only one who made a little fuss over Pizza Sauce. You do pretty good too !!!!! Might as well put in my recipe AGAIN. Don't know if anyone will try it ??? Might be good !!! Lou Pizza Sauce and Spaghetti Sauce ( Gravy ) You can use canned tomatoes but make sure they are Italian or a deep red color. Some choices are Contadina , Red Pack , HuntÂs , All Red, = Tutto Rosso, Chento Pizza Sauce 1 Large can of Tomato Puree and Crushed Tomatoes I use Powdered Spices now, and get the same results 1 level teaspoon Garlic pwd. (add more later to taste) 1 tablespn. of onion powder. 1 teasp. Salt. 3 teasp. Sugar ( add more if it tastes too acidy ). An Italian pinch of pwd.cloves. 3/4 teasp. Oregano ( or to taste ) it is strong. 1 teaspoon of Parsley, 1/2 teasp. basil. 1/4 teasp. black pepper. Â½ teaspoon + of ( Chicken flavored Soup Base ) Large handful of Parmasan Cheese, when done , after 1/2 hour. Continue for Spaghetti Sauce This recipe can be used for Spagetti Sauce ( maybe you would want to cut down on the Oregano ) also just add a can of Tomatoe Paste and water to thin a little , if it is too thick it will burn easily. It will thicken as it cooks. Â½ cup of fine chopped Onion. And 3 bay leaves . Don't forget the Chicken flavored Soup Base. Add uncooked Meatballs, Sausage and Chicken Thighs, when you start cooking. (cook at least 1 Â½ to 2 hours ) Take the chicken out when it is done. ( About 1 hour ) Add the Parmasan Cheese after the sauce is cooked & stir ALSO !!! season to your own taste. Add more or less of what you like.

I made this one a few years ago for my Passover crowd (in Lori316's stoneware that she sent me in a swap, ah, memories). DS #2 demanded it again! I used lamb shanks instead of chops. Lamb Chops with Dried Cherries and Port Bon AppÃ©tit : April 2008 Bon AppÃ©tit Test Kitchen Yield: Makes 2 servings 2 teaspoons olive oil 4 4-to 5-ounce loin lamb chops 1/3 cup chopped shallots 3/4 cup ruby Port 1/2 cup low-salt chicken broth 1/2 cup dried tart cherries 3 tablespoons cherry jam 1 tablespoon balsamic vinegar 1/2 teaspoon ground cardamom Chopped fresh mint or parsley Heat oil in heavy medium nonstick skillet over medium-high heat. Sprinkle lamb with salt and pepper. Add lamb to skillet; cook to desired doneness, turning often, about 10 minutes for medium-rare. Transfer lamb to plate. Pour off drippings from skillet. Add shallots to same skillet; sautÃ© 1 minute. Add Port, broth, cherries, jam, vinegar, and cardamom; boil until cherries plump and liquid is syrupy, about 6 minutes. Season with salt and pepper. The kids don't like fish, yet, although one wil eat shrimp and calamari, and the other one took a bite of tilapia which apparently sent her into a grand mal seizure of the teenaged girl kind. Well, we just wunged it. Cut up chicken, salted the pieces, set them aside. Boiled potatoes in chicken stock. Mixed honey and sesame oil, painted half the chicken pieces and started them over medium heat in a heavy pan, got one side nice and dark, turned, re-painted, repeat, then heat to low and deglazed with stock whenever the pan started getting too crusty. Mixed honey and Dijon mustard, painted the other chicken pieces and set them in another heavy pan, added chicken stock, covered to boil, then simmered, re-painting occasionally with honey-mustard. Drained and mashed the potatoes with garlic, half and half, and butter. Should have tried some honey in that too, but didn't think of it. Removed chicken pieces, made pan sauce with the honey-Dijon, which came out too thick. Cooked some carrots in the honey-sesame that was pretty saucy already. Here are blurry pics in the teeny little plates I am using in an effort to lose weight. SWMBO liked the honey-Dijon braise, was less enthusiastic about the honey-sesame. Both need to be prettier but have promise. I have to make dinner for four of SWMBO's high school friends, on my birthday no less, next Monday, and I think the braise will go on the menu. @ larsi There actually may be optical brighteners in Tide HE Total Care. If you look at the ingredients list on the US site, there are no OBAs in Total Care. However, if you pull the same ingredients list from the Canadian Tide web site, you will see a more complete ingredients list including OBAs. Regardless, if Total Care contains OBAs, I don't find that they fade darker clothing. I've been washing most of my clothes in Total Care. If anything, my colors appear to be getting richer and black garments are having no trouble retaining their blackness. I know you're probably not supposed to use Total Care on silks or other protein-based fibers since Total Care contains protease, but I used it on a load of silk dress shirts. Previously these shirts had been washed many times with Vaska, which has not removed certain light stains. While the shirts felt soft after washing in Vaska and ironing, they have become stiff after hanging in the closet for a week or two. Washing once in Total Care (w/ fabric softener) removed the stain and left my silk shirts feeling like new. I dried them in the dryer on delicate, pulled them out while still slightly damp, and hung them in the closet to dry. No ironing needed and the shirts all look and feel much better than they did before.

I think it will be better than the first time.

The first time, you were starting out braising in water. The process turned the tasteless water into a tasty sauce.

The second time, you will start out braising in a tasty sauce. The process will turn it into, I dunno, liquid love?

I suppose in theory you could keep repeating this process, starting with a tastier liquid each time. I don't see any food safety issues since the liquid is either frozen or simmering at essentially all times. Refresh the aromatics, of course.

The precedent would be the pots of stock that used to live on the fire permanently in the old days (really old days), as liquid was taken, water was added. Isn't there some restaurant that has supposedly used the same pot of stock for many decades? When I was making tare, I read about some Japanese place that has also supposedly been using the same pot of tare sauce for decades.

I wouldn't hesitate to reuse the cooking liquid. It would also be good with an uncured pork shank.

That must have been a fabulous Christmas dinner.

I would use it to make a sauce for a pasta dish.

The next new braised beef should be flavorful enough all on its own without this wonderful sauce.

I use my braising liquid as a soup base. We almost like the soup better than the initial meal!
