Shrimp-crab dip need suggestions please

I was going to make the following dip, but FOAS reported that he has made it in the past and wasn't impressed. Soooooo I can certainly add stuff (I am leaving out the C of Shrimp soup, I couldn't find it at the local grocery) but I am now open to suggestions. I have a hot clam dip recipe that I guess I could use the shrimp and crab in, but if there is a better suggestion I would love it. BTW it is for Happy Hour today to celebrate that we are finally plowed out.

Shore Is Good Seafood Dip

Ingredients

Ã¢ÂÂ¢ 2 tablespoons butter

Ã¢ÂÂ¢ 1 medium green bell pepper, diced

Ã¢ÂÂ¢ 1 medium onion, diced

Ã¢ÂÂ¢ 2 stalks celery, diced

Ã¢ÂÂ¢ 1/2 of a 10 3/4-ounce can cream of shrimp soup (discard top half and use bottom part of soup)

Ã¢ÂÂ¢ 1 cup mayonnaise

Ã¢ÂÂ¢ 1/2 pound freshly grated Parmesan

Ã¢ÂÂ¢ 1 (6-ounce) can crabmeat, picked free of any broken shells, drained

Ã¢ÂÂ¢ 6 ounces shrimp, fresh or canned, drained

Ã¢ÂÂ¢ 1/2 teaspoon white pepper

Directions

Preheat oven to 325 degrees F.

Melt the butter in a skillet over medium heat. Add the bell pepper, onion, and celery and saute for 2 minutes. In a bowl, combine the soup, mayonnaise, Parmesan, crabmeat, shrimp, and pepper. Stir the sauteed vegetables into the seafood mixture and spoon this mixture into a lightly greased 8 by 11-inch casserole dish. Bake for 30 minutes. Serve with toast points or crackers.

Here's one that is so easy, it's deceiving!
I got it from Allrecipes a number of years ago.
It has been requested every Christmas Eve, ever since.

While it calls only for shrimp,
I would imagine adding crab would make it even better.
(If you like crab)

Best Shrimp Dip

Ingredients
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
1/4 cup chopped onion*
1/4 cup chopped celery*
1/2 pound cooked and peeled shrimp, chopped fine

Directions
In a medium bowl, mix together cream cheese and mayonnaise. Mix in onion, celery and shrimp meat. Cover bowl, and refrigerate before serving.

*I use my small food processor to chope the celery & onions very VERY fine.

Alexa - I just looked on FN and see it got mostly good reviews so maybe it was just me. And now you've got me thinking about seafood dip. I've not made this but it but it's another simple one that sounds pretty good. Opposite of TRO's, this one doesn't call for shrimp but I'm sure it would be good added.

Crab Dip
Legal Sea Foods Cookbook

8 oz whipped cream cheese with chives
2T heavy cream
3T minced Berumda or sweet onion (optional)
2t bottled horseradish
1/2-1 t Old Bay
3T sharp cheddar
1 pound fresh lump crabmeat, undrained, picked over

Preheat oven to 400 deg. In a large mixing bowl blend cream cheese and cream until smooth. Mix in the onion, horseradish, Old Bay, and Cheddar. Stir in crab meat and its juices. Place in a medium ovenproof dish, like a 9 inch pie plate, and bake until bubbly, 10-12 minutes. Serve immediately.

FOAS's note: As I typed this up I remembered that you despise Old Bay. Tough - I already typed it!

Ki, where is your imagination? I saute or grill shrimp in massive amounts of garlic all the time. I also often just cook up a pound of shrimp in Old Bay, make my own cocktail sauce and snack on them. The only reason these big, bad boys are "special" is that they were almost the same price I usually pay for "large?" shrimp. I eat a lot of shrimp. Although I normally loath fried fish, I have a really good recipe for beer batter fried shrimp if anyone is interested. I only make it maybe once a year, but it's super yummy. Some where around here, I have a really good recipe for stuffed shrimp. I should try to find it. Did I say I eat a lot of shrimp? I've also been getting large lobster tails for $4 each, every couple of weeks, at the grocery store this summer. Been eating a lot of them too. Lobsters go really well with asparagus. (Kevin, drooling is unbecoming:) Okay, back to the quiche, I think I'll try that. Freezing small amounts is a great idea. However, although I can cook, I don't bake and don't own muffin pans. I don't even own a cookie sheet. Can I buy little pie crusts or something, maybe tart shells, or would they be too sweet? I have phyllo dough, is there some way I can use that? That's a good idea Kevin, about pre- sauteing mushrooms and freezing them but I eat mushrooms the way most people eat chips. I even put them in scrambled eggs. If they go bad, it's because they got "lost" in the back of the fridge. Yum, Vietnamese spring rolls. What is that sauce they give you with everything in Vietnamese restaurants? Now that would be super yummy too. It's the consistency of broth and maybe the color of beef broth. Does anyone know what I'm talking about? I don't think the dip included with Mark's link is the same sauce I'm thinking of. I think the sauce I'm thinking of has fish stock as a base, maybe. Mimi, Arthur can't say anything about buying food in "pounds". They sell everything by the kilo over there (2.2 pounds). The heads of lettuce in the grocery stores there were the size of basket balls. The fish market I would go to didn't sell prawns in small, smaller, tiny, super tiny, and too damn small to clean. They just sold the big, bad, super jumbo sized prawns. Okay, they still had their heads, and that may have skewed my perception of their size. Nah, I didn't eat the heads. Okay, tonight for dinner, I sauteed green onions, garlic, mushrooms, scallops and crab meat. Then I made a Marsala sauce and at the last minute added some fresh spinach leaves and gorgonzola. I served this over wild rice (pasta wasn't doin' it for me tonight, oddly) and had asparagus too. It was pretty yummy but needs some work. This weekend, I'll try the recipes you have suggested when I have more time.

Cream, Here is a recipe that Sue shared on the forum a few years ago. I haven't tried, but I know that if Sue recommended it it must be good. Hot crab dip ============ Sue's Recipe I made this hot appetizer for our tree trimming last night and it was very good. It's a Kraft recipe that came with a periodical I get from time to time (don't know why) from Kraft. It called for canned crab, I believe the kind you buy in the grocery store. I used Costco's canned Blue Fin crabmeat and it was delicious. 8 oz. reduced fat cream cheese, softened 1/3 C. mayo 1 C. Shredded swiss cheese 2 chopped green onions Fresh ground pepper . Mix ingredients and spoon into an ovenproof crock. Bake at 350Â° for 15 minutes, stir and bake another 10 minutes. To brown the top, broil for 2-3 minutes. Serve with hearty crackers and celery and endive dippers. Yu can also top this with toasted sunflower seeds to give it a bit of crunch. i am sure there are a million things you can do to vary the recipe.

Been making these for years: Shrimp & Vegetable Egg Rolls 2 Tbls vegetable oil 8 cups finely shredded green cabbage 2 cups coarsely grated carrots 2 & 1/2 Tbls soy sauce 3 cloves of garlic, finely minced 1 Tbls ginger, finely minced 6 green onions (or scallions), cut into very thin slices 3/4 lb salad shrimp (can substitute chopped, cooked, chicken) 1/2 cup coarsely chopped fresh cilantro 1/4 cup finely slivered fresh basil Salt - to taste, if needed 12 egg roll wrappers (10 oz) 1 egg, lightly beaten 1 & 1/2 cups vegetable oil 1. In a large, heavy pot, heat the 2 tablespoons of oil. Add the cabbage and carrots; cook over medium-high heat for 3 to 4 minutes, until cabbage is wilted and bright green. Stir in soy sauce. 2. Add the garlic and ginger; cook for 1 minute, stirring. Remove from heat and stir in green onions, shrimp, cilantro, basil and (if desired) salt. 3. When working with egg roll wrappers, cover them with a damp kitchen towel so they donÃ¯Â¿Â½t dry out. Stuff wrappers one at a time: Place one tip facing you like a diamond shape on a flat work surface. Place 1/3 a cup of filling 1 inch from the bottom point and across the wrapper to within 1 inch of each side. Fold bottom tip up over filling and roll away from you halfway up. Brush egg over exposed edges with a pastry brush. Fold in 1 inch side tips and finish rolling TIGHTLY (very important - or egg rolls will absorb more oil and taste Ã¯Â¿Â½greasyÃ¯Â¿Â½). Place on a plate seam-side down. Repeat procedure with the rest of the wrappers. Keep finished egg rolls covered with a damp towel. 4. Heat 1 & 1/2 cups of oil in a 10 inch skillet until it begins to bubble a bit on top. (To test for temperature, drop a cube of bread into oil; it should brown within one minute). [I use my deep fryer - @ 370 degrees - drop in 3 or 4 egg rolls - cook 1 minute and turn and cook for another minute, or until golden brown.] 5. Add 3 or 4 egg rolls at a time to the oil and fry for 2 to 21/2 minutes on each side, or until golden brown. Drain on paper towel. Serve immediately. I like mine with ketchup and hot Chinese mustard. Hubby likes his with sweet & sour sauce. Makes 12 egg rolls Sweet & Sour Sauce 1/2 cup packed brown sugar 1 tablespoon corn starch 1 can (13&1/4 oz) pineapple chunks 1/3 cup vinegar 1 Tbls soy sauce 1 small green pepper, coarsely chopped Mix brown sugar and cornstarch in skillet. Stir in pineapple (with syrup), vinegar and soy sauce. Heat to boiling, stirring constantly; reduce heat. Cover; simmer, stirring occasionally, for about 5 minutes, or until sauce thickens to your desired thickness. Stir in green pepper. Cover and simmer for about two more minutes.

I grew up in Arizona, and we only knew of two kinds of shrimp. One came in cans, the other came from restaurants-via the freezer. Here are a couple of good uses for canned shrimp. Add it to potato soup. My mother made "chowder" using canned corn and shrimp. Her chowder was essentially, a thinner version of potato soupk. It had a milk-based broth flavored with fresh celery and onions. Everybody loved it, included my brother's vietnam buddy, who hated seafood. My mother also made a cold gazpacho-like soup that she called shrimp cocktail and served for a first course. It was tomato juice, a can of Veg-All, and canned shrimp seasoned with a little hot-sauce and served with fresh lemon. Canned shrimp added to a salad as suggested before, is wonderful. Serve it with fresh tomato wedges, saltine crackers and "Louie" style dressing. (Similar to Thousand Island, I'm sure you could find an easy version on the internet. We grew up with much less than people have today, but my mother was a great cook who always made the most of what we had. One last thing . . for those who would give undesirable cans to the food bank . . remember that when people are having hard times they don't suddenly start craving peculiar food from cans with faded labels--anymore than they desire stained clothes or ratty furniture. If you want to really feel good about the donations you make, remember that the people you are giving to, may be people just like you--trying to make it and take care of their families as best they can.

Probably too late...but here is one we really like

Chutney Shrimp Spread

12 oz. cream cheese
1/3 C sour cream
1/4 tsp. garlic powder
1/4 C chutney
1 C cooked shrimp, peeled and chopped

Place cream cheese, sour cream,garlic powder and chutney in bowl of food processor. Process to combine but don't over process as you want small pieces of the chutney to show.
Place in small bowl and stir in shrimp.

Chill and serve with crackers. Makes about 2 cups.

LMAO! I was just about to rail on the Old Bay... but I actually read to the end of your post before I responded. LOLOLOL!

They both sound good. I don't have any cream cheese with chives, but I have lots of plain cream cheese so I suppose I could go out and dig under 18" of snow to find my chive clump LOLOL! Anyway, I think I will be using both recipes for inspiration, onions, celery, crab shrimp, cream cheese AND NO OLD BAY! LOLOLL!

If anyone else has suggestions, I haven;t started mixing anything yet.....

Cream cheese 8oz, sour cream about 1/4 cup, to make softer, worchestershire...just a dab, rounded Tablespoon of Chili sauce, horseradish to taste and fresh lemon to brighten it up...I use juice of half a small lemon...your lemons may be bigger.
Sometimes I leave out the horse radish and chili sauce, add some garlic powder and a couple of tablespoons or dry sherry.
