This is a general dipping sauce, pot stickers, steamed pork buns, etc.

GINGER AND SCALLION DIPPING SAUCE

4 Tablespoons Toasted Sesame Oil
4 Teaspoons Minced Fresh Ginger
4 Tablespoons Minced Scallions, green and white parts
6 Tablespoons Soy Sauce
2 Tablespoons minced Fresh Garlic
1 Tablespoon Thai Garlic Chili Paste, more to taste
4 Teaspoons Rice Vinegar
� Cup Chicken Stock
2 Tablespoons Sugar

In a small sauce pan heat the Sesame Oil, add the Ginger and Scallions and saut� until just fragrant. Add remaining ingredients and bring to a boil. Serve at room temperature

I use this for shu mai or pot stickers. Easy and really complements the flavors of the dish.

1 part low-sodium soy sauce
1 part water
1 part seasoned rice wine vinegar
1-2 garlic cloves, minced/pressed
thin-sliced scallions

Nuoc Cham (Vietnamese Dipping Sauce)

Keep a jar of this sauce in the refrigerator; it will last for a month. You can find ground chile paste (my favorite is Rooster brand) and fish sauce at many supermarkets but always at Asian groceries. Yields 1-1/2 cups.

1 clove garlic
2 to 3 Thai bird chiles (or 1 small jalapeño or serrano chile), cored, seeded, and minced; more or less to taste
1/2 tsp. ground chile paste; more or less to taste
2/3 cup hot water
1/4 cup granulated sugar
1/4 cup fish sauce
2 Tbs. fresh lime juice
2 Tbs. shredded carrots (optional)

In a mortar and pestle, pound the garlic and fresh chiles to a paste. (Or mince them together with a knife.) In a small bowl, combine this garlic and chile mixture with the chile paste, hot water, and sugar. Stir well. Add the fish sauce and lime juice and combine. Float the carrots on top. Let sit for at least 15 minutes before using.

This is a favorite - good with chicken nuggets, dim sum, spring rolls, or chicken wings:

Asia Sauce

2 TB peanut oil
2 cloves garlic, minced
3 green onions, finely chopped
1/3 cup catsup
3 TB soy sauce
1/4 cup red wine vinegar
1/4 cup brown sugar, packed

Heat oil in a saucepan and saute garlic and onion for 3 minutes. Add rest of ingredients. Stir well to combine. Heat over on low. Serve right away or cool and reheat when needed. Keep refrigerated to store.

This is my favourite dipping sauce. I use it with a number of different things, from Lettuce cups to Deep Fried Prawns to won ton dumplings.

1/2 cup rice vinegar
1 or 2 tablespoons of garlic chili sauce
and/or Thai sweet chili sauce.
minced ginger
minced garlic
sesame oil to taste

Dipping Sauce

3 Tbs soy sauce
2 Tbs orange juice
2 Tbs dry sherry or mirin (sweet rice wine)
1 Tbs finely chopped green onion
1 Tbs sugar
1 tsp sesame seed

Mix all ingredients.
