What timing - we had peanut butter on sourdough toast this morning as part of our breakfast and I have a loaf of Peanut Butter Quick Bread in the freezer I could take out on such an occasion. -Grainlady

If you want something a little different, you might like this recipe. I use to make this peanut butter and chocolate cookie tart all the time to take to the school bake sales when my son was young. The teachers would buy up the trays before they ever made it too the bake sale table. I'm not a peanut butter fan, so I've adapted the recipe over the years to make a shortbread cup for the chocolate filling. This is what the cookie looks like as the shortbread version. The peanut butter version looks the same except the cookie dough is a more golden brown. Home Cookin Chapter: Recipes From Thibeault's Table Peanut butter and chocolate cookie Tarts ======================================== Dough 3/4 cup butter 3/4 cup peanut butter smooth 3/4 cup brown sugar 3/4 cup white sugar 1 egg 1 egg yolk 2 tsp vanilla 2 1/4 cups flour 3/4 teaspoon baking soda Chocolate filling 4 oz semisweet chocolate 1 Tablespoon Milk 2 Tablespoons cocoa 1/3 cup butter 2 cups sifted Icing Sugar . Cream butter with peanut butter until very smooth. Beat in sugars. Beat in egg and yolk. Add vanilla. Sift flour with baking soda and mix well. Stir into butter mixture. Press balls of dough into well buttered mini muffin tins. Each ball of dough should be about 3/4's the size of the muffin tin - when you intent the centre it should form the shape of a pudgy little tart shell. Bake in preheated 350ÃÂ°F oven for 15 minutes or until outside is baked but inside is still chewy. Do not over bake. Cool five minutes on rack and then remove from tins. Cool completely. Filling Combine chocolate, cocoa, milk and butter in small saucepan. Melt over low heat. Mix until smooth. Cool. Beat in icing sugar to give consistency of icing. Pipe about 1 tablespoon of filling into each tart. Note: YOu can spoon the filling in to the centre, but it looks nicer when piped.

My IBS developed after my gallbladder removal. I can eat peanut butter but I have to watch the total fat at any sitting. When I eat peanut butter it is only one, or at most two, tablespoons and the latter is rare. But there are many healthy foods that set me off. High fiber, nuts, seeds and berries all are which things I love but have had to limit for the last 36 years or so. Lately I have been trying to retrain my digestive tract to accept some of those things by eating small quantities and making sure I balance them with foods that I can eat freely. So if Imstillchloecat says she can't tolerate peanut butter believe her. Everyone is different after losing their gallbladder.

Around here (Western Pa) its labled **ribeye delmonico* Strips are labled **New York Strip** First and only time I ever had FM was a few years ago we were guests at a Disney Producers house for Christmas dinner. .it was all you could eat FM. OMG it was the most tender piece of beef ever to enter my mouth. I think about it often and have even had some dreams. LOL. Truthfully I've never been successful at cooking steak...maybe because I prefer more on the done side..pink is fine but can't do red. I'm not much of a meat eater but a few times a year I crave a good steak which I've been thinking about porterhouse lately from the other thread. LOL. Eventually I'll get some and cook like you all do...with salad and baked potato oozing butter. .gosh I have myself drooling.

Kings Arms Tavern in Colonial Williamsburg makes the best....may need to do this for dinner!

Colonial Williamsburg, Williamsburg, Virginia

Serves 10-12
Ingredients:

* 1/4 cup (1/2 stick) unsalted butter
* 1 medium onion, finely chopped
* 2 celery ribs, finely chopped
* 3 tablespoons flour
* 8 cups Chicken Stock* (or low-salt canned chicken stock)
* 2 cups smooth peanut butter
* 1 1/2 cups light cream or half-and-half
* Finely chopped salted peanuts, for garnish

Instructions:

In a large saucepan or soup pot over medium heat, melt the butter. Add the onion and celery and cook, stirring often, until softened, three-five minutes.

Stir in flour and cook two minutes longer.

Pour in the chicken stock, increase the heat to high, and bring to a boil, stirring constantly. Reduce the heat to medium and cook, stirring often, until slightly reduced and thickened, about 15 minutes. Pour into a sieve set over a large bowl and strain, pushing hard on the solids to extract as much flavor as possible. Return the liquid to the sauce pan or pot.

Whisk the peanut butter and the cream into the liquid. Warm over low heat, whisking often, for about five minutes. Do not boil.

Serve warm, garnished with the chopped peanuts.
