Since I've never had one of their sandwiches, I'd ask him to bring one home. That would be your biggest clue to figuring out yourself what he likes about it. I did find someone's ''review'' of Starbucks egg salad sandwich and found it has multi-grain bread, fresh lettuce, celery, mustard and dill. Of course I'd have to add onion, and I like tarragon too, but that's a personal preference.

I'm with Claire on the tarragon, but without the dill. Just a tiny pinch of tarragon, salt, mustard, onion is all you need, with plain mayo, not salad dressing. I love it on rye bread with caraway, fresh lettuce. I sprinkle a little celery salt on hub's sandwich because he likes it - I don't, particularly.

Mine won't be anything like Starbucks (I'm guessing because our Starbuck's only sell breakfast foods). It's chopped hard boiled eggs, chopped sweet gerkins, Miracle Whip, and s/p. On mushy white bread. Another of those my non-foodie mom would make that has become a guilty pleasure. Surely not fancy!

I've often found that while restaurants won't typically give out actual recipes, they will at least tell you what ingredients are in a given dish. It doesn't hurt to ask. Once you know what ingredients they use, you can play around a bit until you get it.

Cooking the eggs properly is important for egg salad. Rubbery eggs feel, well, rubbery, and overcooked eggs can have that sulfur odor.

I start my eggs in warm water, bring to a boil, simmer for 8 minutes and then quickly remove them and douse them in ice water to stop the cooking.

My ingredients can vary. Mayo and a bit of mustard, salt & pepper are standard. Celery, dill pickles, olives, green or sweet onions, apples, garlic, a touch of Worchestershire, capers, parsley/dill/savory/red pepper/curry powder....all depends on my mood and for whom I'm making sandwiches. I often toast the bread a bit for texture.

For me, it's brown bread, a little mustardy mayo and CRESS. There MUST be cress in an egg sarnie!

I love Starbucks egg salad sandwiches too. I definately think part of the appeal is the great whole grain bread. And I think they make them with watercress or maybe arugula. FRESH sprouts would be a good addition too. Not mixed in with the egg salad, just added to the sandwich.

This post made me do it...I made some egg salad yesterday afternoon, and served it this morning on a toasted croissant. It was good; I got a Thank You note for it, so thanks for the inspiration!

I've never been inside a Starbucks so know nothing about their sandwiches.

I like mine made with mayo, minced celery, fresh dill, salt and pepper. I would not object to a little minced onion. No tarragon for me.

My egg salad varies according to my mood. Always contains some onion, usually grated, always contains some mayo and mostly always contains some mustard, either Coleman's dry or Grey Poupon. Sometimes it has sweet pickles, sometimes dill, sometimes celery seed, sometimes crumbled bacon sometimes toasted pignoles.
Sometimes chopped fresh parsley, sometimes chives too. Sometimes a bit of curry powder. I think one of the clues to a good egg salad sandwich is to chop the egg, not mash it up.
Beverly you mean you REALLY have never been IN a Starbucks? Where do you get coffee at an airport? Starbuck is not one of my regular hangouts, I have never had a sandwich there, but I sure have had coffee and a scone or a cookie. in fact there is one in the grocery store I usually frequent and occasionally I succumb to the lure of a caramel latte. I'll have to try the egg salad.

Thank you all! I managed to make a fairly good sandwich by totally mashing all the cooked yolks with some cream until almost smooth and then adding a little mayo and mustard. I had to use dried dill since that's all I had. I finely diced celery and chopped-up the egg whites; then poured on most of the yolk mixture to give all a good texture. DH was happy with the results.... and that's what counts. He didn't even wait for the bread!

I'm glad I was able to inspire a few of you to make some for yourselves.
