What to do with a few ingredients for dinner

Hello all,

I have one red, green, and orange/yellow pepper, as well as a pound of asparagus. I've got lots of bison meat in different cuts (grounds, steaks primarily) or some pork chops and ground pork. I'm looking for an idea for dinner using these veggies that are going to go bad if I don't use them soon! Any ideas from anyone?

Slice the peppers and an onion add a couple of cloves of garlic, chopped, and sautee them gently in some olive oil....
From there you can go in any direction, put some cooked ground meat with it and perhaps a can of tomatoes ands erve it over pasta, grill some steaks ands erve it as a side...just put it over some angel hair pasta, add fresh grated parmesan cheese and serve with a steak or with grilled pork chops.
Steam the asparagus and serve it with a bit of lemon on the side....or oven roast the asparagus.
I see fried onions and peppers over pasta and steamed or grilled asparagus with a nice grilled bison steak.

How about stuffed peppers? You could use a mix of the ground meats - fry with some diced onion & garlic, mix with some cooked white rice and seasonings - stuff the peppers with the meat mixture - cook in a casserole with some marinara sauce and beef broth. Serve with mashed potatoes. Cook the asparagus until crisp tender, shock in ice water, drain and dress with a vinaigrette for a side salad????

I love stuffed peppers.

Hi Marti! Welcome to our little group. I love the pic frame you made in your blog... The glasses came from a Dansk store we used to have here in Southampton. Unfortunately, Dansk was bought out by Lenox, and after less than a year, they closed the store. It was a wonderful place to find lovely things, and they were generous with their discounts and coupons.. Did DH notice?...I do this almost every night so he usually says a word or two, and then complains I am taking too long with the pic of his dinner...but he is used to it by now! Turmeric root is generally sold fresh in the few markets that carry it. Most often, it is sold in dry, powder form. It is mostly used as a coloring agent, not for flavor. It colors things a bright yellow, and is the reason some curries are that color. Since it doesn't really impart much flavor, you could use the dry without worrying too much about quantities. A little goes a long way, if a recipe calls for an inch piece of root, I would start with an eighth to quarter tspn and go from there. A warning note...the yellow dye is quite strong, and can stain anything from rubber spatulas to hands to counters. Be careful with it. Yes, most things can be bleached clean, but some things take some time to lose the color. The rubber bands surrounding orthodontic braces will turn bright green, and it doesn't wear off. Candlenuts are an oily nut used in Indonesian foods, and are difficult to find. You can substitute macadamia nuts (a close substitute) or Brazil nuts, which are three times as big, so adjust amounts accordingly. You can also use raw cashews or almonds...I'd use about 2 cashews per candlenut called for. Dried shrimp paste is available in most Asian markets. It's quite strong and smells it. I can't really think of a substitute, but I suppose if I was really stuck, I'd try soaking dried shrimp, and then making a puree with it using enough soy sauce to get the puree going. Don't be put off by the smell, it won't make the dish taste/smell like that if you use the amount called for. Lemon grass is generally about as long as celery, and most recipes call for just the white part, which is usually about the bottom third of the whole stalk. Don't worry about the waste, because the rest of the stalk can be used to simmer a nice lemony flavor into soups or teas and then removed. Some dishes will call for large pieces to be simmered and then removed, you can use the green part of the stalk for that as well. The dried lemongrass you can sometimes find is so inferior that you'd be better off substituting lemon or lime juice (I have used a combo of both to best effect)as it is really fit for nothing except brewing into tea. You can freeze lemon grass, so if you find an Asian market that carries it (or decide to plant some of your own) that is a help.

Kathy this is a great go to dish. Easy peasy but good enough for company. It's Gina's recipe but I swear I make it more than she does! LOL Lemon Linguine With Scampi (Gina) Vegetable oil (Note: I omit the oil in the water) 1 TBSP kosher salt plus 1 1/2 teaspoons 3/4 lb linguine (Note: I use any long thin pasta) 3 TBSP unsalted butter 2 1/2 TBSP good olive oil 1 1/2 TBSP minced garlic (4 cloves) 1 lb large shrimp (about 16 shrimp),peeled and deveined 1/4 tsp freshly ground black pepper 1/3 cup chopped fresh parsley leaves (I omit if I don;t have any) Zest of 1/2 lemon 1/4 cup freshly squeezed lemon juice (2 lemons) 1/4 lemon,thinly sliced in half-rounds 1/8 tsp hot red pepper flakes Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package. Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine. When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

Mongolian BBQ In a wok, fork fry the sausage to break it up well as it fries. Add one chopped onion and one minced garlic clove or season with garlic salt. Drain off any excess grease. Add a 3 drops of chili oil, available in the Chinese food ingredients aisle of your grocery store. Now per person add to the wok one shredded carrot and a stalk of celery thinly sliced. Also add shredded cabbage, some sliced green or colored peppers, some snipped cilantro, and a little good soy sauce and cover the veggies with a large lid like from a frying pan if possible to steam the veggies in their own juices for a few minutes. Sometimes I add sliced mushrooms. Now add a handful of bean sprouts per person. When the bean sprouts are done to your preference, but still have some crispiness to them, your Mongolian BBQ is done. Serve a large spoonful inside some pita bread for a delicious but messy to eat meal. It can be served over rice, but the pita bread is better. This is a very forgiving recipe if you want to use more or less of anything or even substitute.

Pork and vegetable lo mein:

slice pork chops in thin strips, marinate in equal parts soy sauce and sherry ----- or not

slice peppers, asparagus and a large onion in pieces about the size of the pork strips - slice up a couple of cloves of garlic

make sauce: 3 parts soy sauce, 2 parts oyster sauce, 1 part toasted sesame oil, dash of sugar (the parts will depend on how many you are serving)

cook Chinese egg noodles or regular linguine pasta, enough for the number you are feeding - drain, do not rinse, keep warm

heat up wok/stir fry pan or large skillet or saute pan, add in 2 TB veg. oil or peanut oil, heat, add pork strips, cook for about 3 minutes or more until done, remove to a bowl

return pan to heat, add in another 1-2 TB oil, heat, put in vegetables, stir fry until crisp tender, add meat back into pan, heat, add in sauce, add in noodles, stir well and heat all together - serve hot

All the suggestions sound great!

I run into this problem more often that I'd like to admit because of my basic lack of planning. :) Allrecipes.com has a nice feature where you can enter some ingredients and it will bring up some recipes using those ingredients. It has come to my rescue a number of times.

So, we went with roasted asparagus, peppers, and onions served with medium rare steak and a penne pasta on the side with some chipotle cream sauce. It was all AMAZING. I hadn't really thought of just doing the veggies on the side, as much as I eat peppers raw, I have never roasted them.

The other suggestions sound delightful though, and I'll have to try some of them soon!
