Agave Nectar. I bought some today at Trader Joe's because it sounds delicious. I have to experiment with it, but was wondering how you all use it, if you use it?

It's a natural sweetner. I would suggest that you google it and you will find lots of info on how to use it, the benefits of using it. I know people hate that "goggle" answer but there is just too much to be said about it as it would take all day. There are lots of recipes available.

Ditto what Ruthieg said. Use it the same way you would use honey. You can use it in your morning tea or coffee. Put it in smoothies. Baking. Almost anything.

An average loam soil will have 4000 pounds of nitrogen, 4000 pounds of phosphorous, and 20,000 pounds of potassium per acre in the top eight inches most of it in forms that are unavailable to plants. Many minerals present in the soil are most available to plants if the soil pH is neutral to very slightly acid. Soil in my region is neutral. We do not run fertilizer through the irrigation system. If your irrigation water is alkaline, you will have to adjust it to increase soil fertility. Your county ag agent is your best source for information. We use organic mulches and green manure crops for soil fertility. We do use bone meal at planting time on our large dahlia crop. But, hey, I think we need to use alfalfa like LizaLily because we want 100 blooms per day on our Chilsean's Pride dahlia. In correcting deficiencies of minor elements, it is important to realize that the difference between a therapeutic dose and a toxic dose is pretty small for some of the nutrients. Essentially, what we use here in the Great Lakes Region is probably going to have no bearing on what someone uses in your area. Talk to growers in your area and your ag agent. We have received valuable information from both.

Black vinegar is not the same as soy sauce but can be used as a salt free substitute for soy sauce in many cases. It has a similarly complex flavor, but once you have it, you can decide how you want to use it. I use in in place of soy sauce for marinades, such as the one I made for Ahi tuna this afternoon. As noted above, it can be used in soups as a low salt alternative to soy sauce. It does have a small amount of sodium in it, but it is very minor compared to soy sauce. You can also buy salt-free soy sauce, but the black vinegar is a a much better substitute. I often add lime juice to the salt-free soy sauce to make the flavor better, but that is not necessary with black vinegar, although if you want to use black vinegar as a condiment at the table, adding a bit of lime juice to it may help. The flavor will not be identical to soy sauce, but it will be a flavorful option without so much salt. You just have to experiment with it to see what combinations you like. Lars

I use smell, but I think I use sight more. How can you "smell" when onions are transluscent? I suppose they might have a certain smell at that point, but I think I use sight more. I never really thought about it before I guess!! I usually taste at the end to adjust seasoning as Annie said. Now that I'm thinking about it, I guess I do use smell a bit more than I thought. When I'm making things like Cuban black beans or chili, I do smell to make sure I have enough spice - I can smell whether there's enough cumin for example. But in dishes that have to cook a long time, like gravy (spaghetti sauce), it doesn't make sense to taste until you're getting towards the end because the alcohol in the wine needs to cook out, the different ingredients need time to meld, etc. I guess whatever works for you is the right way to do it! The list is long. I have two freezers and two refrigerator-freezers, which I'm convinced is just a way for me to accumulate more stuff. Curry leaves, lime leaves, galangal, lemongrass, fresh noodles, fresh coconut and fresh coconut milk, delicate spices whole and ground - Vietnamese curry powder, pickling spice, cardamom, pink peppercorns, etc. Things preserved from the summer garden - corn, a variety of hot and sweet peppers, roasted peppers in olive oil and garlic, roasted tomatoes in olive oil with thyme, homemade glacÃ© cherries and strawberries, basil pesto, sundried tomato pesto, homemade sundried tomatoes with an olive oil and herb baste. Melon cubes in a honey syrup. Summer squash. Delicate herbs like tarragon. Freezer pickles (an experiment). Boysenberries, blueberries, wild blackberries, sour cherries, rhubarb, strawberries, raspberries, plums dried and fresh frozen, walnuts, wild pecans, hazelnuts, almonds and nut flours. Baked goods - pies, crisp topping, breads savory and sweet, cakes both bundt and loaf, cookies, dry mixtures for various recipes. Lemon curd and apricot curd. Seeded purÃ©es for berry curds and jams. Strained grape juice for jelly. Baking and cooking supplies - whole grains of many kinds, rices, yeast, backup sourdough starter. Butter (lots). A few cans of juice concentrate, a few vegan wraps and healthy frozen meals for desperation lunches. Soups, stuffed peppers, meatballs, special sausages and bacons. Elk and venison. Agave is much "wetter" than honey..and sweeter. I do agree that a little Internet search will give you more details.

I use it for quite a few things. But only use it place of other liquid sweeteners.

When I use it, I use about 1/4 the amount of agave nector as I would sugar. Please do google it for better info, tho.

Debi...here is a recipe that I have used it for:

The Salad dressing....
3 Tbsp Olive Oil
1 Tbsp Flaxseed Oil(or add another Tbsp. of Olive Oil)
1 Tbsp Vinegar (I like a champagne vinegar, but you can use red wine vinegar)
1 Garlic Clove
1/2 tsp Dijon mustard
2 Tbsp Agave Nectar

Mix all ingredients together and enjoy.

It is really tasty on salad with fresh cut apples or strawberries too. I usually double it, so I can have some left in the fridge for a little while.

I mix Agave Nectar 50-50 with water and drink it as any fruit juice.

I love Agave Nectar and use it like honey. It has a better glycemic index than other sweeteners.

It's new for me, and I've used it on oatmeal, to sweeten coffee and on pancakes so far. I really like it.

I love it- I use it in my tea, on cereal and as an added flavor to plain old tap water. I have not actually used in a recipe as of yet.
