Will pizza dough be okay?

If I go home today at lunchtime, probably between 1 and 2, and make pizza dough, will it be okay if I just let it rise until I use it for dinner? I make it with my Kitchenaid mixer and use the recipe that they have in the book that came with it. I let it rise by putting it in the oven with a casserole dish of warm water underneath. Thanks!

Jessi: Keep it in a cool place, in a bowl , covered
with a damp towel.

If it has risen when you come home shape it the way you want.

Stretch it out a little and it will warm up fast.

If you bake in an oiled pan, put it right in the pan.

Stretch a little and let it rest. keep doing this, until it
reaches the edge and up.
Pinch thru the dough with a fork, so it won't get any air pockets.

But will it rise if it's kept cool? I have tile contertops that stay very cool and it's probably 70 in the house. The recipe says to let it rise for an hour, punch it down and then shape it in the pizza pan. I'm not trying to be contradictory, just trying to learn :)

I love baby clams with my home-marinated artichoke hearts as a topping, which is strange, because I don't care for any other seafood on pizza. I also love my pickled jalapeno rings on a cheese pizza. When I worked in a pizza parlor as a teen, we used to make those pizzas and scarf on them, waiting to see whose eyes would start watering first. I also like to eat crisp, cold dill pickles with pizza (not on it)which is another thing I picked up working there...yeah, I know, salt on top of salt, but I love the combo.

Countrygal, I actually have to disagree with Azzalea. Your crust will be that much better, more developed flavour and improved texture if given a longer cold fermentation. I'd make the dough as early as possible on Saturday (Thursday or Friday would be okay too). After the first rise, knock it down, cover and refrigerate. Make sure you use a big enough container because the dough will continue to rise. You might have to knock it down more than once. I find that it takes two to three hours sometimes for the dough to come to room temperature and start to rise again. Of course this probably depends on the amount of dough. I took a double batch of dough (over 8 cups flour) that I made Monday out of the fridge in stages yesterday - three hours apart. The first batch netted two loaves of bread and a pizza which we had for lunch. And the second batch three loaves. I make bread most weeks and often plan to bake a pizza intentionally with dough that was made 3 to 5 days earlier.

Thanks, Ann T, your nice and reassuring comment. I really was at least a little bit obnoxious. I'm usually pretty pleasant, but I guess I do have my giddy moments. Participating is so much more fun, though I don't know how much I have to offer. I'm someone who needs help. I thought I was a decent cook until I came here. So many experts -- which is wonderful. Thanks, Chase for the nice welcome and for posting that recipe. I've been out all day and haven't had chance to check back. I hope you and June try it and let me know what you think. I think it's very good, but it's really hard to compare a few good recipes when you taste them a few weeks apart. The last may just SEEM like the best. I'm sure this pizza dough controversy will never end, but that's what makes it so fun ;).

Then you know the "sell by" date is when the store needs to move it off their shelf, so it's not outdated for using it, you still have time to make pizza (probably weeks). If it said Sept. 23 or had green fuzzy things growing on it, I'd toss it.

Jessi, just leave it at room temperature. Pizza dough will only improve if allowed to ferment longer than most recipes suggest.

If your tile countertops are cold, place it in the oven (as you originally planned), but without the warm water, and just let it sit all day. It'll be fine.

Sol: Thanks !!!

Jessi: I forgot to mention , Coat the top of the Dough ball with oil.
This will help to keep it from drying, or you could spray it with Pam.
You could also put it in the Frige but it will take longer to rise.

You can't go by a recipe for the amount of time, for to dough to rise.
It depends on the ambient temperature, humidity,etc.

Put the dough (in the bowl) under a window when you leave.
Note, how it is, when you come home. If it is OK, do it like that again.
If not compensate for the temperature.If it is cold out side, usually it will be
colder under a window (without heat), because of the cold air dropping.
I don't know if you are in a cold zone or in Florida,
This wil make a difference.

If you decide to put it in the refrig. it will take a long time to rise.
I usually turn my oven on for a few minutes, to warm it.
NOT HOT !!! Then shut it.
Then I'll out the put the dough bowl in, covered with a damp towel.

I have forgotten to shut the oven a few times, and it Baked in the Bowl.

It makes a beautiful Round Italian Bread with a rough top,
because the dough stuck to the towel, when I took it off.

If this don't help, bring the dough to my house and I'll do a hands on Demo.

You snuck in before me. I forgot to mention the pan of warm water; in the oven, for a forced rise.

If I knew you were going to help out, I could have went to the PO, for my mail.
