LOOKING for: soft + chewy breadsticks/pizza dough

The recipe I use for pizza dough/bread sticks is:

2 tsp yeast

1 tsp sugar

2 T oil

3/4 tsp salt

about 2 1/2 c flour (I use 1/2 c bread flour + 2 or more c all purpose)

1/4 c wheat germ

1/4 c wheat bran

7-8 oz warm water

It's an okay dough but I'd like something that has a little more chewiness to it. Any suggestions for substitutions or another recipe all together?
