LOOKING for: Chewy Pralines

I bought ten of these babies at the Hatch Chile Festival and wish I'd bought 100. I loved these and plan to write to the Las Cruces Candy Company of Mesilla NM for more. But since I have pecans, I wonder if anyone has a T&T creamy, no sugary grit, chewy recipe. The ingredients list: brown sugar, corn syrup, pecans, whipped cream, evap milk, butter, lecithin,vanilla, salt.

I am jonesin' for those candies!! Oh they were good, and I didn't let dh have any of them!!

Here's the recipe I make:

CREAMY PRALINES (about 18)
1 cup packed brown sugar
2 cups granulated sugar
3 TBL light corn syrup (Karo)
1 cup milk, whole or evaporated (use evaporated for richer)
4 TBL butter
2-3 cups pecan halves
2 tsp vanilla

In a heavy pot, combine the sugars, corn syrup & milk. Cook slowly, stirring constantly over moderately high heat. Add 1/2 the butter when the candy first comes to a boil, then continue to cook until it reaches 236Â° (soft ball stage) on a candy thermometer. Remove from the heat, add the remaining butter & beat, using about 15 vigorous strokes. Add the vanilla & pecans & continue beating until the candy becomes slightly lighter in color & is more creamy. This is most important. While the candy is still hot, drop onto buttered waxed paper so that it will form smooth creamy pieces about 2" in diameter. Allow to harden before serving.~~A Cook's Tour

Ginger that sounds just right. Is it going to a really stiff 'batter' to beat? My old arms!

This may be more like what you have had. It isn't twice baked like the previous recipe and has a little less sugar and a little less flour making it less dense. One of the secrets of this kind of cookie is to chop the almonds..not to a powder or teeny pieces, but enough to release some of the nut oils which makes for a dough that is easier to mix. I'm not a big fan of almond extract, so I have cut back some, this recipe called for more...and you may like that really almond-ey taste, so add another teaspoon or two. Linda C Almond Slices 3/4 cup sugar 2 cups all-purpose flour 1 cup brown sugar, packed 2 eggs -- beaten 2 teaspoons baking powder 1 teaspoons almond extract 3 cups almonds -- chopped 1/3 cup oil 2 teaspoons water 1 teaspoon cinnamon -- optional Mix all together, shape into flattened logs, brush top with beaten eggs (not those included in recipe). Bake 350 degrees for 19 - 25 min. (watch carefully). Cut while warm.

Sure it's a little too late, but I've made this one before and it's delicious! Ooey Gooey Pumpkin Bars Makes 6-8 servings Cake: 1 (18 1/4-ounce) package yellow cake mix 1 egg 8 tablespoons butter, melted Filling: 1 (8-ounce) package cream cheese, softened 1 (15-ounce) can pumpkin 3 eggs 1 teaspoon vanilla 8 tablespoons butter, melted 1 (16-ounce) box powdered sugar 1 teaspoon cinnamon 1 teaspoon nutmeg fresh whipped cream, for serving 1. Preheat oven to 350 degrees F. 2. Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan. 3. To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey. Thank you Ginger. No it wasn't a cheesecake,closer to the second recipe. This was a sheet cake that you put first cooked the brown sugar, butter and pecans, spread it out and then added the cake batter, flipping it over after it was cooked. Topping with real whipped cream. I made it last week without the recipe in front of me, but had several requests for the recipe. I hesitate giving one that I only have from memory.

I'm glad I reread that recipe above. It should be 150 vigorous strokes, not 15. So sorry.

Ok, having recovered from that jump in strokes, I am wondering if I can do any of this in the food processor or with the KA mixer on the dough paddle? 150...geeze, that's daunting.

I bet you could with the Kitchenaid. It's important to beat them enough & is sure worth a try.

I haven't forgotten these..I just haven't had the energy to do them, tho let me tell you they are on my mind. (Not my hips yet tho)

I'm wondering if pouring the hot mixture into the cold KA steel bowl will mess up the recipe at all? The mixture is sure to go down in temp.
