Adjusting sugar for meyer lemons

Someone gave me a bunch of meyer lemons, and today I plan to juice them and freeze the juice and cores for zesting later.

I know that meyer lemons are sweeter than others so if I want the same tart lemony taste as in recipes calling for non-meyer lemons, I'd want to adjust the sugar accordingly. Or, I could use a similar recipe calling for oranges instead, and use the amount of sugar in that recipe for a slightly tart lemony taste.

Does anyone know if there's a rule of thumb to determine how to adjust the sugar when using meyer lemons in place of others?

They are not so much sweeter as they are lower in acidity.

I use from 1/2 to 3/4 of the original amount of sweetening called for, when subbing Meyer juice for Eureka/Lisbon types.

Like all citrus, the older the tree, the better the flavor profile of its fruit. Meyers take about 8-10 years to mature and live about 75 years.

You never know with any fruit just how sweet it will be....apples, strawberries, oranges, lemons tomatoes etc etc.
I just taste as I go...if it needs more sugar I add some....but mostly I just go by the recipe (but for apples!) and a little sweeter or sourer is fine with me.

I will give you the link below. I encourage you to read Al's whole opening explanation to understand why he makes the mixes they way he does. But, here are the recipes quoted directly from that post: The 5:1:1 mix: 5 parts pine bark fines, dust - 3/8 (size is important 1 part sphagnum peat (not reed or sedge peat please) 1-2 parts perlite (coarse, if you can get it) garden lime (or gypsum in some cases) controlled release fertilizer (if preferred) Big batch: 2-3 cu ft pine bark fines 5 gallons peat 5 gallons perlite 2 cups dolomitic (garden) lime (or gypsum in some cases) 2 cups CRF (if preferred) Small batch: 3 gallons pine bark 1/2 gallon peat 1/2 gallon perlite 4 tbsp lime (or gypsum in some cases) 1/4 cup CRF (if preferred) I have seen advice that some highly organic (practically speaking - almost all container soils are highly organic) container soils are productive for up to 5 years or more. I disagree and will explain why if there is interest. Even if you were to substitute fir bark for pine bark in this recipe (and this recipe will long outlast any peat based soil) you should only expect a maximum of two to three years life before a repot is in order. Usually perennials, including trees (they're perennials too) should be repotted more frequently to insure they can grow at as close to their genetic potential within the limits of other cultural factors as possible. If a soil is desired that will retain structure for long periods, we need to look more to inorganic components. Some examples are crushed granite, fine stone, VERY coarse sand (see above - usually no smaller than BB size in containers, please), Haydite, lava rock (pumice), Turface, calcined DE, and others. For long term (especially woody) plantings and houseplants, I use a superb soil that is extremely durable and structurally sound. The basic mix is equal parts of screened pine bark, Turface, and crushed granite. The gritty mix: 1 part uncomposted screened pine or fir bark (1/8-1/4") 1 part screened Turface 1 part crushed Gran-I-Grit (grower size) or #2 cherrystone 1 Tbsp gypsum per gallon of soil (eliminate if your fertilizer has Ca) CRF (if desired) I use 1/8 -1/4 tsp Epsom salts (MgSO4) per gallon of fertilizer solution when I fertilize if the fertilizer does not contain Mg (check your fertilizer - if it is soluble, it is probable it does not contain Ca or Mg. If I am using my currently favored fertilizer (I use it on everything), Dyna-Gro's Foliage-Pro in the 9-3-6 formulation, and I don't use gypsum or Epsom salts in the fertilizer solution. Hi malcolm manners Well since you gave me some numbers to go by i used my Ph meter to get a reading. Im not happy...My tree is still in the 3 gallon pot I bought it in and it gave me a reading of 4.5 Ph. You would think the people who grew them out would at least have the soil at the right Ph. Its not like I need any help screwing my tree up LOL It would have been nice to at least get a good start. I have had it now for about 2 weeks and it hasnt really put on any new growth at all,guess I now know why. Do you think when I repot into a 5 gallon it will balance its self out? Do you have any suggestions to get it back on track?

Annie, Colleen's recipe is also in my "to try" file. Not sure why I chose the longer cooked recipe this time... Yes, I could definitely eat it out of the jar with a spoon! LOL I may try some in some tarts, It will be delicious on toast or english muffins, I will probably also make a batch of these. I've made them with store bought LC in the past, I bete they'll be over the top delicious with home made! Lemon Curd Bars Source: Midwest Living December 2006 1 c unsalted butter, softened 1 c sugar 2 c all purpose flour 1/2 tsp baking powder 1 10-12 oz jar lemon curd 2/3 c flaked coconut 1/2 c sliced or slivered almonds, toasted Preheat oven to 375F. In large mixing bowl, beat butter with electric mixer 30 seconds. Add sugar and beat until combined, scraping sides of bowl occasionally. Add flour and baking powder, beat until combined and mixture resembles coarse crumbs. Reserve 2/3 cup of crumb mixture, and set aside. Press remaining crumb mixture into bottom of a 9x13 pan. Bake 5-8 minutes, or until golden. Remove from oven, spread lemon curd over crust, to within 1/2 inc of edges of pan. In bowl, mix reserved crumb mixture with coconut and almonds. Could be salt buildup due to insufficient amount of water added at each watering. Make sure that some water comes out of the drain hole each time you water. To get rid of the salts, add water until water drains out. repeat twice more.

I cannot think of anything sweet that I make with Meyer lemons except for lemonade, and of course I sweeten that to taste. I do tend to freeze the leftover rinds for use later - mostly for chicken - as my tree only produces lemons for abotu 6-8 month of the year, and then I have a 4-6 month dry period. When making lemonade, you will get a smoother flavor if you dissolve the sugar with the lemon juice before adding water. I don't know why this is the case, but it makes a a very noticeable difference. Right now I have more limes than lemons, and I do make lime pie with the limes.

What sweet dishes were you planning to make?

Meyer Lemon sorbet would use sugar. Good stuff!

Lars, there are recipes for sweet things using meyer lemons... just one example is Blueberry Meyer Lemon Muffins. I want to experiment with others.

Rob, I've seen that recipe and would like to try it.

I made meyer lemon marmalade yesterday. They've been on sale the past few weeks at my supermarket and I couldn't resist. Of course, I was left wondering what I was going to do with 3# of them....What with the pot of boiling lemons and the boiling water bath, I was able to comfortably heat my kitchen until noon. It's been in the -30C range this week, and doing up preserves seems so unseasonable...

Jenn, it looks like Meyer lemons are now ubiquitous from the link that you posted. However, I am still happy that I get them for free from my tree. I wonder when Walmart started selling them.

The lemon sorbet looks good, but I would mix the lemon juice with the sugar before adding the water. The sugar dissolves much more easily in the juice and eliminates the need for making a syrup. It would be nice to use the sorbet for making lemonade also, as suggested.

The marmalade looks good too, but it would take me a very long time to use it.

It is good sorbet. It's my one thing that I MUST make when I find Meyers. I really liked it with a black sesame seed cake (not overly sweet). Anita serves it with honey ice cream and I bet it's good too, but I haven't tried it yet. Both recipes are below.

I think I do dissolve it first. Certainly the way to go, I also do it when I make my lemonade in the summer.
