Thank you all, my dear, dear friends. Yesterday we had one of those days here at our house -- no water for 36 hours, Freya sneaking a pizza off the kitchen counter, and the smell of fresh polyurethane pervading the cold, damp house.... On the other hand, I had the loving affection of Tom and my DS Jacob, calls and cards from family, and greetings from all of you. And tonight we're going out to dinner to try celebrate again. Carla, Luanne, Jon, Anita, Lori, Ingrid, Sue, Carolina, Pamela, and Carol -- each one of your messages brought smiles and memories to my mind. I just realized that with the exception of Ingrid, I know each one of you in the Real World (as opposed to online) -- Ingrid, we'll just have to correct that soon. Death Valley is a very good vacation place, and so far we've seen lots of French, German, and Japanese tourists, as well as a few Canadians. Saturday we went to Zabriskie Point, Golden Canyon (drive through), and Dante's view - all before lunch. Then we met my friends from Utah, who had to wait to get into their room, and after lunch we went to Rhyolyte and Beatty NV with Mark and Greg. Yesterday we got an early start to go to Ubehebe Crater and decided to stop by Scotty's Castle on the way. We could not get a tour for the inside for an hour an a half, and so we only did the outside self-guided tour, which I felt was enough. Then we went on to the craters, which Kevin and I had explored before, but Mark and Greg made quick work of hiking down and back up the 500 feet of elevation change in the crater. Kevin and I went toward the smaller craters. Next we went to the racetrack on a very bad gravel road that took three times as long as it should have, but we got some great photos there of the "floating" rocks. After that, we decided to make a loop across Hunter Mountain to have dinner in Panamint Springs, instead of turning around and going back the way we came. The six mile road from Teakettle Junction (where we had lunch) was a dead end, but we decided to take the other road, which Kevin and I had taken 12 years ago and almost got stranded in mud from melting snow at the top of the mountain - and we got lost along the way at a "Y" in the road that went to a dead-end at a cliff where there was a dilapidated building and a rusted out 1920s car. To be continued - computer and internet service acting up! Lars ETA: The road we chose to cross Hunter Mountain was closed due to damage from rock slides, floods, and landslides, which removed or covered parts of the road. There was no warning of this from the Teakettle Junction end of this road. Thanks for the warning to stay safe, but it came perhaps a bit too late! Thanks all! Just working today and a meeting I was dreading turned out quite well, so that's my birthday present I guess. Aside from that, a package arrived with some snowshoes I ordered. I told my wife I'd consider it my birthday present from her even though she had nothing to do with it, LOL. Not sure about dinner yet, being as I haven't shopped yet I'm leaning towards take-out so that I can get the kids to bed early and go out snowshoeing with a friend.

Spicy Shrimp and Andouille Over Charleston-Style Grits

Ingredients

2 pounds medium shimp, peeled and deveined
Essence, recipe follows
Salt
8 ounces andouille sausage
1 tablespoon vegetable oil
1 cup finely chopped yellow onion
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped green bell pepper
1 teaspoon minced garlic
1 1/2 cups chicken broth, or canned, low-sodium chicken stock
1/4 cup heavy cream
2 tablespoons finely chopped green onions
2 tablespoons minced parsley
Charleston-Style Grits, recipe follows

Directions

Season the shrimp with Essence and salt. Heat a large, heavy saute pan over medium-high heat and sear the andouille, cooking for about 3 minutes. Remove the andouille to a plate, and add the shrimp to the pan, and cook for 2 to 3 minutes. Remove the shrimp from the pan, and heat the oil. Add the onion and bell peppers and cook until soft, 3 minutes. Add 2 tablespoons Essence to the pan, stirring well, then add the garlic and cook 1 minute. Add the chicken broth to the pan and cook until reduced slightly, 5 minutes.

Stir the cream, green onions and parsley into the sauce and return the andouille and shrimp to the pan. Return sauce to a simmer and continue to cook until reduced slightly. Stir well and season to taste with salt and pepper. Serve over Charleston-Style Grits.

Charleston Style Grits:
6 cups water
Salt to taste
1 1/2 cups quick cooking or old-fashioned grits (not instant!)
2 cups milk
1 cup heavy cream
8 tablespoons butter
Freshly ground black pepper, to taste
In a large, heavy sauce pan bring the water to a boil. Add a generous teaspoon of salt and the grits and stir with a wooden spoon to combine. When grits thicken add milk, cream and butter and return to a boil. Reduce heat to a simmer, cover sauce pan and cook for 45 minutes to one hour, until grits are tender, smooth and creamy. Taste and season with salt and pepper. Keep covered and warm until ready to serve.

Yield: 4 to 6 servings

Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly and store in an airtight jar or container.

Yield: about 2/3 cup
