What to make with cubed steak?

Because of an order mix-up, we ended up with 8 pounds of grass-fed cubed steaks. The only dishes I know how to make with them are chicken fried steaks and Salisbury steaks, and I don't cook either one of those too often. So, what would you guys do with them?

Back in the 70's I remember the ice maker in our standard refrigerator/freezer making essentially cylindrical ice cubes. If I remember right it had 5 molds that filled with water and the bottom of the mold would move up to push the ice cubes up and then a rake would sweep them off an into the bin. I would love to find one of these if anyone knows where to find one. I know that is what we had, but I have asked many people and nobody can even remember anything like that. As a sanity check can someone else confirm? I have searched the internet and cannot find anything at all. Thanks.

Ohh! that looks good. You can still make the Marlboro Man sandwich, but use lots less butter. Especially if you have waterless cookware! I just dices and cooked three large onions with no butter or oil. Just a tiny bit of water. You can do the same with the meat, just use a bit of oil, get some color on it, and put a lid on it. Need a bit of liquid for the 'sauce'? Use some broth with a little butter or cream, just a little. I won't use the hot sauce, but I did finally find some worchestershire sauce without garlic, so would add just a little for flavor. Still would taste great. I'll have to remember this one for the RV. Does marinating really make a tougher steak cut more tender?

Marinating does not really tenderize meat; simply because the Marinade cannot get into the meat deep enough, unless you soak the meat for many days as in corned beef. By that time the outside of the meat will turn into mush. Chemical meat tenderizers or enzymes also give meat mushy texture and funny taste. How else do you tenderize meat? First, what do you mean by tender? You can pound the heck on the meat using a mallet, stab it with a jaccard cutter, or grind it up into burger, but you are not making the meat tender, you are in fact making the meat more chewable. If you cook the meat long enough, like braising and stewing, you can turn the meat quite soft, however, all meat shrinks and becomes dry if you cook meat at near boiling temperature to beyond well done. Therefore for these kinds of recipes you need to provide a lot of sauce and liquid to make the soft dry meat "juicy" and delicious. The key to tenderize meat without drying is fairly simple in concept. Cook the meat at very low temperature for a very long time. You can get a tough brisket cut into juicy medium rare that is almost tenderloin tender. At this point, the two appliances which can most reliably produce this end result is a sous vide cooker and a high-tech smoker, both offer precision digital temperature control for the entire cooking process. dcarch

Grainlady, I make something very similar to the Beef with Pea Pods, only I use chicken (tenders, cut into narrow strips) and Asian-style vegetables. The sauce is very similar. Edie, I agree that cube steak is a little bland on its own. I think I'll add tomatoes and peppers, along with onions. (Such a simple idea. Why didn't I think of tomatoes?!) Then, taking a cue from Grainlady, I'll serve it with Mexican rice. Hmmm, I'm getting hungry. Time to head into the kitchen. Thanks for the suggestions! Sue

I slice them with a knife while semi-frozen, or cut them with my kitchen scissors if they are fresh from the store, and stir-fry them with a sprinkle of McCormick's Montreal Steak Seasonings.

They can be used in:

-Stir-fry

-Added to a dinner salad.

-Used in a wrap or on a sandwich bun along with fresh spring greens or shredded lettuce, red onion rings, sweet bell pepper and Chipotle Mayo or salsa.

-Chopped a little finer (I use my kitchen scissors for this) and added to some leftover cooked rice along with some mushrooms and celery sauteed in butter with a dash of soy sauce.

-Hubby likes to take them in his lunch. Heats them in the microwave along with a shot of bbq sauce. Sometimes he makes it into a wrap with a flour tortilla. Sometimes he puts it on a bun. Mostly he just eats the meat with a tossed salad.

I make up several pounds at once when I find them on sale. Quick-freeze the cooked meat pieces on a shallow tray, and then vacuum-seal the frozen meat in a FoodSaver bag for freezer storage. Take out what I want and reseal the bag. A great "convenience" food.

Cut up and use in soups or stroganoff.

I brown them up, add lots of onions and bell peppers, and a can of tomato-something (crushed, diced, sauce, etc) and just simmer away till tender. Like to put the "sauce" over rice or noodles.

klseiverd, that sounds really good too!

I found another way to use them, decided to make Rouladen for lunch and the cubed steaks worked really well. They also did not take as long to cook than because they are tenderized.
