Aw rats! I was going to suggest Chicken Fried Steak...... Maybe you could slice it into strips and make a stir-fry? I bet it would soak up a marinade really quickly.

Steak Ranchero?

There are lots of recipes online to use as a guideline. Basically it's sliced browned beef simmered in tomatoes, green chilies and bell peppers, onions, garlic, etc until tender. Most of them call for browning in oil but I would brown it in some Pam-type spray and go from there. Now I want some!

I've made that marlboro man sandwich too - they are delish but definitely not waist friendly...:-)

MMM Swiss steak.Dredge the meat in flour, salt and pepper then brown and put in a roaster add A can or two of tomatoes, plenty of sliced onions and peppers and simmered in the oven at 350 for several hours. Make mashed potatoes and serve the sauce over it.

I second the Marlboro Man Sandwich - probably what clogged DH arteries & sent him to surgery - just kidding...I only made it a few times---but OMG is it to die for, almost quite literally with all the butter. Even subbing OLIVIO for the butter it is still a big NO-NO.

No other suggestions -sorry- I have some cube steaks in the freezer also.

I occasionally just sprinkle the powdered ranch dressing mix on them and coat them in olive oil (or spray with Pam), and let them sit in this for several hours, then grill with onions and bell peppers. This would be pretty weight watcher friendly, I think.

Have it semi-frozen and slice in thin strips and it works well in pepper steak over rice. Slightly more healthy than Ree's sandwiches but those sound darned good.

Interesting. I had cube steak yesterday.

With the exception of one teaspoon of tapioca starch to make the gravy, I say it's a very healthy dish.

Hubby often uses cube steak in stir-fry. It slices easily if it's slightly frozen. He seasons the sliced cube steak with Montreal Steak (McCormick Grill Mates) before he cooks the meat.

Cubed steak is the only beef i have ever been forced to eat

Well it was pretty darned good. I sprinkled dry ranch mix over it, drizzled some olive oil, salt/pepper and let it marinate for a few hours. Then I sauteed onions and red peppers......added the cube steaks and browned them. (I sliced them into strips)

Served on low carb flour tortillas and it was very tasty.

Glad you liked it. I started doing it that way for my kids when they were little (didn't want to waste money on expensive cuts of meat for them), and I found that it was pretty tasty and low-cal, so I began eating it too. I like it done on the grill outside, also. I buy the dry Ranch mix in a big container at Sams, so I always have some on hand. I've done it with chicken, and it's good that way too.

I went to the Market because I wanted to really make this 2 markets had NO CUBE STEAK!! Ill try again next food shop!

Next time, ask the butcher at your local store. They'll run the meat thru the tenderizer for you while you finish your shopping. My store also does not routinely have out cube steaks. I always have to ask.

This thread made me hungry for diner food so tonight we had chix fried steak (cube steaks), smashed taters, buttermilk gravy w/bacon, & corn with basil butter. Quick apple tart using red box pasty for dessert. Gooood dinner. We are so stuffed. We'll not be doing that again soon!

I made the Marlboro Man hoagie tonight--very good. I have had shaved beef in the freezer so I thought this would be a perfect opportunity to use it. Topped with provolone. Turned out great. I had some hoagie rolls from Aldi's; to my surprise the rolls were good too (soft, sweet) so all in all it was a fine sandwich.

Ohh! that looks good. You can still make the Marlboro Man sandwich, but use lots less butter. Especially if you have waterless cookware! I just dices and cooked three large onions with no butter or oil. Just a tiny bit of water. You can do the same with the meat, just use a bit of oil, get some color on it, and put a lid on it. Need a bit of liquid for the 'sauce'? Use some broth with a little butter or cream, just a little. I won't use the hot sauce, but I did finally find some worchestershire sauce without garlic, so would add just a little for flavor. Still would taste great. I'll have to remember this one for the RV.
