Vollrath Cookie sheets, think I bought the wrong ones,need item #

I stopped by my local Retaurant supplier and I asked for the Vollrath cookie sheets.

The ones on Cooks Illustrated were 14x17, and the ones this place had were 13x18. No Big deal I thought.

When I arrived home to open the box, I noticed that these Vollrath sheets had a lip all away around and were not completely flat (except for the handles) as the sheets were on the Cooks Illustarted review.

Does this matter? will this cook cookies the same way? or is this better served for something else?

The part # on the sheets are 68371. They were really cheap and only about 8.50USD as compared to over $20 online for the ones review on Cooks Illustrated.

Can anyone confirm what the part # is for the sheets review on Cooks Illustarted.

gldnol: I'm in the same boat you are with the heaviness of some of the fry/saute pans. I sure wish we didn't lose what muscles we have as we grow older. Unfortunately, sometimes you have only one hand to use to to lift the pan to pour out the contents and the first time I did this the handle of the pan rotated in my hand due to the weight and I narrowly averted a big time disaster with hot liquid splashing over everything, including me. I did call the wonderful place where I had mailordered the pan and asked for advice. They sent me, free of charge, several heavy rough suede handle covers that were stitched in such a way that they kept the handle from rotating. I still don't take anything for granted when I pour hot stuff from the pan, and try to stabilize the handle on my arm, grabbing the handle as close to the pan as I dare. As far as the iridescence and discoloration: I just try not to look at it until I have the time and inclination to get out the BarKeepers Friend.

A jelly roll pan is 10x15 give or take a half inch. A 1/2 sheet pan is larger as posted above. We often call the 1/2 sheet a 'jelly roll' referring to the high sides. Most jelly roll recipes call for a true jelly roll pan, 10x15. (ish) We also just call them cookie sheets but a 1/2 sheet is used more often for baking of savories like roasted potatoes, etc. as the high sides keep the items in the pan. If we have them, we have 1/2 sheets as they are more available. My restaurant supply has them. When i called and asked for a 'true' jelly roll pan, they said yes, they have the one that is smaller than a half sheet and knew what i meant. phew. Now i need a new roasting pan, lol. My new wall oven is european sized and a bit smaller than what it replaced...same issue with exterior dimensions because of the big side handles but i found one easily. I do read reviews and toss out the odd ones but when it comes to wrong info i'm a bit surprised that the supplier does not correct it (unless it is intentionally deceitful) It does create unnecessary returns and unhappy customers. Especially when one is highly recommended and says USA made but is now made in China with poorly rolled edges that are sharp. And warps, and arrived with dents.

Have to agree with the above - it looks on my monitor that all of the backsplash tiles read green/blue and the countertop reads grey/brown and none of them seem to work together. The fireclay tiles posted by eam44 would look to be a much better match. I disagree above that you need some kind of focal point. I think it's a smallish kitchen and has lovely pendants, and windows and island and a bold backsplash is just competing with that. Keep it simple! In fact, i was the above writer who earlier said they pretty much always dislike the inset backsplash and i think your current BS is a perfect example of how those insets rarely look good. Even when the underlying colors are similar, as yours are, there's just something "off" about them. I think the only exception is when they are using almost the same tile (like, carerra subway tile BS with a carerra herringbone pattern inset). I still think this is busier than i like, but isn't an eyesore as so many other insets are. I think this inset mistake is actually a good opportunity to replace the whole thing!

I found the Eggnog Snickerdoodles on the cooking forum years ago. I made them last night and they were very good! I couldn't find Brandy extract so I just used cognac instead. I also added a little bit of cinnamon. Eggnog Snickerdoodles 2 3/4c flour 1 1/2c sugar 1 c butter, softened 2 eggs 2 tsp cream of tartar 1 tsp baking soda 1/4 tsp salt 1/2 tsp brandy extract 1/2 tsp rum extract 1/8 tsp nutmeg Sugar mix: 1/4c sugar 1tsp nutmeg Mix butter and sugar. Add eggs and beat. Add flour, cream of tartar brandy and rum extract, salt, soda and nutmeg. Mix well. Chill. Shape into 1 tsp sized balls. Roll in sugar mix. Bake 8-10 minutes at 350Â° or until cookies are lightly browned. Yields 2 dozen. Recipe easily doubles with no problem.

I **think** the one in CI is Vollrath product #68085 (natural aluminum finish). The article, which appeared in the May-June 2005 CI issue (#74), identified the sheets as being made of steel, but this appears to have been in error; they are aluminum, according to the Vollrath website. I don't know if CI issued a correction in later issues. The same pan is available in a "SteelCoat x3" (i.e., brand name for Vollrath's nonstick) finish -- #68084, but I think the natural one is what CI tested, based on the article.....

Thank you, you are 100% right and I disovered it myself the other day.

What I bought from the store was the Jelly roll trays, or Bun pans as Vollarath calls them.

I'm still going to keep them as I'm sure they will come in handy, I would have like to see a review of them, but I couldn't find any reviews of Jelly roll trays on cooksillustrated.

I called back the store and had them order the Volrath #68085. I hard to order a case of 6, I'll just give some to family.

The whole steel/aluminum confused me too, but I figured it had to be the Aluminum ones as the review did not mention anything about Steelcoat nonstick and did say that it was important for the colour to be light.

Glad it worked out for you. After you've had a chance to try both styles, do post back your impressions.

Based on info from Vollrath's site, the 68371 "bun" pans (jelly roll style w/ four raised sides) are the same gauge aluminum as the 68085 sheets. The raised sides **shouldn't** make much difference in baking quality, even in convection mode.

The CI article tested one jelly roll-style pan in the issue #74 article. It was a WearEver Commercial pan in tinned steel. The only dun seemed to be the fact that it had four raised sides -- CI felt it was easier (& resulted in more intact cookies) to remove liner sheets (parchment or silicone) when the long sides of the sheet are flat, like on the #1 rated Vollrath. Otherwise, the baking & durability ratings for the WearEver were the same as Vollrath -- three stars.

Actually, when I realize what I bought weren't actual cookie sheets, the first thing I checked was the guage of the aluminum, and I told myself that if they were the same, then I could just live with the Jell roll sheets as my cookie sheets.

I compared the two on the Vollrath site and the cookie sheets are a 10 guage and the jelly roll are 18, it was a big enough difference for me to buy the cookie sheets as well, to tell you the truth my wife wouldn't let me return the Jelly roll ones, she was more than happy to add them to our collection.
