Comments (23)As I wrote, many fine French restaurants use copper, which is very heavy. Julia Child used a lot of copper and Descoware (Belgium made cast iron). Anyway, it's good to hear that you seem self satisfied. It also begs the point that you have high BTU burners, but "manage my heat". Ah well, that's the funny contradictions of life! By the way, pans can reach 500 degrees deceptively easily. Good housekeeping did some tests on this subject as well as several other research groups. And the manufacturing of the stuff isn't very healthy either. I refer here to article from S.F. Gate.... "DuPont says that off-gassing from nonstick pans does not occur until the pans are heated to over 400 degrees, in which case, at worst, fumes can lead to brief flulike symptoms in humans, called polymer fume fever. DuPont scientists point out that birds can die from many different types of fumes, including those produced by burning onions or butter.".... "The Environmental Working Group has collected data from several industry, government and academic studies that have been done on off-gassing of PTFE- coated pans heated to various temperatures. The tests revealed that more than a dozen types of potentially toxic particulates -- including hexafluoropropene, hydrogen fluoride and difluoroacetic acid -- are released. But whether the fumes occur in enough quantity to harm humans has not been determined. "DuPont says that gasses aren't released in normal use, but academic and peer-reviewed studies show that pans get hot enough to release toxic gases at normal cooking temperatures," Sucher says. But pan fumes are nothing compared to the heat DuPont has gotten over environmental contamination (see story, above). Comments (35)We built our home ten years ago. We have been visiting San Miguel de Allende in Mexico every year for about 20 years. When it came time to finish off our interior details we went to a local shop in SMdA named Counter Cultures. We purchased a big and deep two-well copper sink for the kitchen (heavy and unsealed), a small copper sink for the powder room, a ceramic-coated cast iron bar sink, a stove backsplash of hand cast bronze tiles and some other copper and bronze stuff. After ten years, everything has held up well and the kitchen sink is still getting comments, many of which are envy laden (Yup - I love it!). It turns out Counter Cultures is actually a branch of a place by the same name in southern California. Comments (31)Unless you seal it and scrupulously maintain the sealant, the copper will definitely turn a mottled dark brown, like an old penny, regardless of whether it's splashed on; just a natural effect of oxidation. It's gorgeous but whether you like it for your space all depends on the effect you're after. Aliceinwonderland is my idol (waves!), and here are the copper countertops I made that are modeled after her incredible island. Don't know how dark your cabinets are; these are a medium-dark 15-yr-old cherry with a 'fruitwood' stain, whatever that was in the '90's (we recycled them from the ReStore). Comments (2)We love, love, love our copper sink by Rachiele. We did a ton of research before investing. These sinks are made in the USA in Florida by a small custom company. The attention to detail is amazing. Most other companies have you dry the sink after each use. The properties of these sinks make them maintenance and worry free. Our sink is bullet proof. No maintenance and it looks amazing even after our teens have tried to abuse it. We could not be more pleased. The owner even wrote a personal note to us on the bottom of the sink. It is the jewel of our kitchen remodel. We have a large copper apron sink with a custom rustic patina on the apron. Even the plumber was impressed. He said he had installed plenty of apron sinks and had never seen such a well made sink. If you get the right copper sink it will be the easiest sink you have ever used.
