WANTED: My Bad...My Bad...But it's here, it's really here!

I got my swap package...but I don't remember if it was yesterday or the day before that. I worked 60 hours this week, not counting going in again today. When I got home from worked I fell asleep in the car, and came inside to a phone call from Ann T., the Royal Keeper of the Addresses, making sure I got my swap! Forgive me Linda (in Connecticut) for not posting, but I don't even know what day it is...I must have gotten it Thursday (I didn't get home Thursday until 9:00 pm), and didn't open it until I got home from work on Friday.

Anyway, Linda got me a gorgeous bottle of red raspberry wine. We have some very good friends who only drink sweet wine, so this will be opened when we entertain them in two weeks. She also sent some gorgeous homemade jams and preserves and marmalades: apple pie jam, blueberry/lemon jam, blackberry jam, Mineola tangerine marmalade, apricot preserves (which I ate on my bagel this morning before rushing in to work: dee-licious!)), and watermelon rind pickles. She also got me a subscription to Cook's Illustrated, which I have been considering subscribing to since I dropped Bon Appetit and Gourmet, but just kept putting it off. She said that we have a lot in common, and it was her favorite magazine, so she hoped I would also love it. Well, Linda, you are right. It's a keeper! The entire package was awesome and the jams were packed in the cutest hard neon yellow box, that I will re-use for something cause it is too cute not to keep it.

Anyway, Linda, please accept my deepest apologies for not posting immediately. I have had very few minutes in this last week, especially since Tuesday, to even have access to a computer. I have one more week of wildness, and then I do believe that my life will be back to "normal." (Although few people think of me as normal) Linda, I loved everything, and so much appreciate the time, effort, and love that goes into those homemade items...and they look pretty special in my collection of jams!

Maggie I'LL tell you about me and frogs. During a swap, our little Miss Cheater Pants, aka JESSY, got my name. I was a little new to the group so Jessy researched my name here on the forum and she found some old posts over on the Reptile/Amphibian Forum, I had posted asking for help in getting rid of all the frogs that were all over our porch. They were pooping everywhere and peeing everywhere and it was just horrible!!!! So Jessy took off with this frog idea and she sent me the funniest swap package; it had frog shaped pasta, an apron with frogs on it, rubber frogs that were threaded on shish kabobs, Gosh I can't even remember all of it. But I laughed so hard I had to go change. So that's where the frogs came from.

3/4 lb. penne or other short tubular pasta (1 pound) 1/4 tsp. salt 3tbsp. olive oil 2 tbsp. red onion (finely chopped) 1 tbsp. garlic (finely chopped) 2 tsp. roasted chili paste 1 tbsp. chili powder 1 cup coconut milk 1.5 tbsp. Thai fish sauce 1 cup whipping cream 4 sundried tomatoes, packed in oil drained and cut into 1/4 inch strips 4 sprigs fresh basil (optional) Cool pasta in abundant boiling salted water until al dente, about 7 minutes. Drain. Heat olive oil in heavy saucepan over high heat. Add onion and garlic and stir until lightly browned, about 2 minutes. Add chili powder and chili paste and stir 1 minute. Add coconut milk and fish sauce and bring to a boil. Add cream and return to boil. Reduce heat to low and simmer 5 min., sirring. Increase heat to medium, add cooked pasta and stir until well coated with sauce. Transfer to platter and top with sundried tomatoes. garnish with basil and serve. 4 servings.

Welcome back! I do remember you and your house and I'm so sorry for the health woes. You have a great attitude though. My college friend in her late 30's have been battling this too and she was stage 3 as well. She's now in remission, but still recovering from her treatments. I think your attitude is going to help you a lot too in this battle. I've been here on and off since the late 90's. Depends on how busy life is and also if I need to escape. I'm not a big poster though. I mostly read unless I feel like I have something to add that hasn't already been said or I'm one of the earlier posters. I think the last of your posts I remember is from your bathroom remodel. I still wonder what you ended up doing there. Maybe you posted it and it was during the time I wasn't around.

What a nice package Linda put together for you. That sounds like a tasty collection of jams, and the wine sounds interesting, too. I glanced through a Cook's Illustrated just the other day while waiting in line at the grocery store, and it looked like a very good magazine. Good Job, Linda. Get some sleep, Sherry! (Your bed might be a little more comfy, though.)

I love the box! It is a really cute yellow box, and I would reuse it too.

Enjoy your magazine subscription - a gift that will keep on giving. Nice collection of jams - that's quite a variety and a very generous selection.

Let us know how the wine tastes - I've never had raspberry wine. Is it good for cooking as well?

Linda you packed my favorites. We also subscribe to CI, I like sweet wines, and whats not to enjoy about all those canned goodies!

Enjoy Sherry, CI is very different from Gourmet etc.

Sherry, I can just see Linda's jams in your collection. Where will you expand to? Blackberry jam...mmmmm...The wine sounds yummy, too. And CI...put your feet up, relax and enjoy it!

I love my CI! I even get the annuals so I have it all nicely bound to keep! What an assortment of deicious food goodies! Lucky you! Red raspberry wine? Sounds great! Enjoy!

Sherry, that's a perfect gift for you, more jam to add to your collection, you can always use more wine (we were down to what? 11 bottles at Canning Camp? LOL) Plus CI, put your feet up, pour that wine and rest, woman. Geez, you're as bad as I am.

I hope this week is easier for you so you have time to enjoy those sweet treats. I love watermelon pickles and the jams wouldn't last too long around here. Ah but you'll have a monthly treat to remind you of Linda when the new CI arrives at your door.

Wow, that is definitely some package. The jams/preserves/marmalades sound delish, and...hello?...I've never had watermelon pickles. How is that possible?

Relax and enjoy the wine, and I know you'll love CI. It's one of my favorites.

Nice gifts, Linda!! Watermelon pickles are my absolute favorite!! Lucky you! "Cook's Illustrated" is a great magazine and you will be able to access their online site. Sherry, I hope you are enjoying your gifts and finding some time to relax and sip the raspberry wine!

Sounds like a fabulous box of wonderful stuff! Sherry you will love Cook's Illustrated. I recently subscribed and it is a good magazine, very informative!

That is a wonderful package. Good thing you got wine, it can replace some of the ones you opened when Jessy sent you the new opener.

Cooks Illustrated and a huge variety of canning, wow. I love mineola tangelos so that marmalade sounds wonderful, and a great idea.

riverrat1 - this is one of the few places where people could understand someone having a jam collection!

That is one delicious sounding package. I'm pretty sure no one else here would appreciate the tangerine marmalade as much as I would. Or the blackberry jam. So if you would be so kind, just put them back in the box, stuff a little newspaper in there (you know, to keep them from breaking - wouldn't want them bouncing around like bb's in a boxcar, now would we?) and ship them on over here.

Oh, and I tasted pickled watermelon rind for the first time this past June asn LOVED it. You can put that one in there too, just to balance out the box.

Another clever little swap box here. Lucky you Sherry! I love,love, love pickled watermelon..YUM! That's a great varitety of jam too. I'm like this idea of amagazine subscription too. If keeps on giving long after the swap is over. Great box Linda!
