Tramontina pro knives vs. ??

Hello--

I've done a forum search and haven't found anything that addresses these kinves. They are rated well by CR (#6 behind various Henkels and Wusthorf models --which I take with a grain of salt.)

I realize that a knife is a personal thing, and that these, made in China most likely would be inferior to a Wusthorf or German/Japanese knives. I just want to upgrade my knives and don't know that I want to spend the green on the Wusthorf if I am unlikely to be able to tell the difference. I do want something decent, forged not stamped, but I am not doing serious prep for a cast of thousands either.

I am now using a cheap, stamped carbon steel set purchased and TJ Maxx 100 years ago, which still take an edge but not for long.

Has anyone used the Tramontina Professional series knives? Thoughts? Opinions? Total dream object would be the Wusthorf.

I had some of these because they were highly rated by CR. I did like them, I have small hands and they fit great. However, they did fall apart rather quickly. My favorite one literally came apart in two pieces! The customer service is also non-existant. I mean actually non-existant. I finally found a website for them out of Brazil, but never received a reply. I gave up and gave the ones that did not fall apart to my mother-in-law.

Thank you so much for the info! Still shopping and seriously considering the Wusthof Ikon knives. They feel great in hand. I've got some tramontina tri-ply cookware pieces that work well and seem well made. Sounds like the quality doesn't translate to the knives.

Yes the cutters all have a natural slope to them by design but all my chain cutters had two slopes. I removed the chain as nothing seemed to work to get the chips to fly. I showed the chain to the guys who sold me my saw. They said I would never get the chain to cut as the "second" slope was due to a rock. They reground the chain and it works fine. Yeah...I know...I swore I never hit anything. After my chain was ground I washed it in kero to remove any fine grains of metal that could wear out my bar prematurally. I dried and dunked it in bar oil before replacing. The rakes are supposed to set a cut depth of .026". I ordered a depth gauge along with a guide and plenty of files both flat and round for my chain. I also bought a second chain (yellow) cause I need a backup the way things are going. Upon further examination of the stump I was cutting close to the ground I noticed weeds growing out of the side of the stump. Digging with a screwdriver revealed dirt and rocks in a 2 inch hole. Chalk it up to inexperience. I placed my 13/64 file in the cutter of my new chain to see how it fit. Now I can see what I have to aim for when touching up a chain. I would need a bar or bench jig to get it that perfect. I also realized that it is important to check the automatic oiler on the MS361 once in a while. Packed sawdust causes the oiler to put out only a minimum amount of oil. Cleaning make a huge difference in oil output.

I have both Tramontina Tri-Ply and Cuisinart MultiClad. They perform exceptionally well on my professional gas stove and clean up is a breeze. I don't think you'll have any problems with either type on your stove. I like the handles on both; the weights and balance are similar. However, I'd recommend that you pick up one piece of each to see which one works better for you. Amazon.com sometimes has good prices on Cuisinart MultiClad. Sometimes they are individual pieces or sets. Keep checking them out. Their prices for Tramontina are absurd! Tuesday Morning has decent prices on Tramontina Tri-Ply.

I had a knife-fest last summer after going to a Cutco presentation (and doing enough research to know that if I ever bought Cutco, it would just be for the scissors). Then I began to research knives, what fun! I imagined all sorts of glamorous knives in my kitchen! Then, common sense stepped in. For the finale, I went through my drawers of knives and had a cutting party. Turns out I had some Globals, some beautiful full-tanged stuff from Amway (mom's), assorteds of all sorts, including some old beat-up looking knives that turned out to be Forschners with rosewood handles. So I put them to the test. Cutting boards and dismembered vegetables and pieces of bread littered the counters as if a veggiecidal maniac was on the loose. Guess what? The old Forschners won my cutting test, hands down. They went through veggies as though they were butter! My MIL and I were laughing as we tried the different knives, and whenever we used the Forschner I would say "Do it again!" over and over. They was SO fun to cut with! Then I sharpened them all and tried again. Those old Forschners were STILL the best, by a landslide, even though they weren't the prettiest, by far. I got rid of lots of knives, got a proper holder for the remaining knives, and I now use the Forschners almost every day. Check your knife drawers, everyone, you may have a hidden treasure!

Wow! That is totally unacceptable rusting!! I just re-read the warranty (I have read so many over the last several days that I can no longer keep them all straight), and am surprised that it is so short compared to other units. One year. Period. That's all, folks! You did not happen to purchase it with an American Express card, did you? I ask, because not everyone knows that AE doubles the manufacturer's warranty for free, in which case, you would still be under warranty. Well, if I keep this unit, I will definitely keep a sharp eye on this as it gets closer to the 1 year period, and if I still have this unit, the 2 year period when the AE warranty extension runs out. Mine is the W3 vs your W1. Perhaps they corrected your issues. I am only on my second load so far. The first was a king sized comforter that it did a great job on. This load is the linens that I used to have to split into two loads with my old unit. It just finished, and everything is far less twisted than with my old agitator unit. So far, no unbalance situation, and so far, so good. Would you mind telling me how you defeated the lid lock? I tried putting my magnets on top of the switch, but it did not work. The latch came out and did not stay out. When I held the latch with the magnets still on top, this did not work either. Kristi, below is a link to the 6200's manual. Look at the picture on page 12 and you will see a Load Size selection option offering Small, Medium, Large, Super and Auto, so that is to me how you select the water level. You might want to read through the manual and make sure you are happy with the other features it has or perhaps does not have. Best of luck to you! An inexpensive knife is always rated among the top choices by Cook's Illustrated magazine. It is the Victorinox Forschner Fibrox chef's knife. Working cooks use these, they are light, slim, comfortable, no slip handles, made in Switzerland, and inexpensive. You can get a set including 10" chef's knife in a roll for $100, or a set including block and steak knives but only a 8" chef's for about $140. The 10" chef's alone is about $30. Check out Amazon or similar websites. I have two that are over 20 years old, and I use them more than my more expensive knives. No connection to the company.

I began to appreciate good cutlery when I married a butcher. LOL. A good knife doesn't have to be exorbitant, but they'll be a substantial investment and worth it. A good quality knife holds it's sharpening, doesn't rust or nick easily, won't pit, and is well balanced for handling. I've seen too much really inferior steel anymore coming from China. I'd want to be sure the blades are made with domestic, high carbon steel, or made by an established company (like many of the better grade German firms who guarantee their steel quality).

Butchers buy their own tools, and I just went over to see if there were any brand stamps on his, and sorry there aren't.......but I've been using his knives since he retired and they sit in the blocks next to the crappy ones I had before were were married. My old knives rust just from the ambient moisture in the air.

I have purchased some knives from the firm I'm linking to. I've watched them being manufactured and they're still produced by hand, individually. Hard to find that anymore.
