Fisher Paykel oven temp problem

I posted a few months ago about my oven's noisy broiler which was recently fixed by replacing a fan and about my oven's failure to preheat in a reasonable time which has also been fixed. I still have a problem though. This was the tech's 5th visit and he stayed long enough to finally see this problem. If the oven is set at 350, it is 400 inside. If I set it at 330, I get about 340. If I set it at 340, it gets to be about 370. I simply can't get my oven at 350. The tech has called Fisher Paykel numerous times about various things. They told him the oven cannot be calibrated. If anyone has had and solved this problem, please tell me how.

I have a similar problem with my Bosch HBL645, though mine seems to be off the same amount at various settings (which leaves me with the option of not repairing). Mine also cannot be calibrated. I was told that replacing the termostat (at about $385) was the only solution.

Attention KRISZ!
My brand new F&P double oven had to have both fans replaced because of the noise, now neither oven will preheat or heat up to temperature. Krisz, what did they replace on your oven to fix your preheating problem?
Does anyone else know what might be wrong?

I have the FP, but I know all about the Monogram's tempting racks! But I love the features of the FP. We use the Roast setting (sear and then drop to a preset temp) oftem for pork loin and chickens. I don't eat beef, but even I can see that setting would be great for a roast beef. For those large pieces of meat I always use the probe so there's no guessing or hovering with an instant read thermometer- just wait for the beep! I reguarly use true aero, aerobake, broil, maxibroil, convection broil (perfect for crispy breaded things and meatballs), and regular bake. I use warm and pastry bake occasionally. I proof dough by setting the oven to bake at 80 degrees, turning the oven off and setting the dough in there. It stays that temp for the entire proof period. The convection fan and cooling fan are both quiet and the cooling fan does not run for an exorbitant amount of time after oven use. It bakes 3 sheets of cookies evenly. I can set it at 5 degree increments. It gives real time preheat temps reading to a single degree. It is a really, really nice oven. But you guessed it- the only thing it doesn't have is the Monograms sliding racks. Once FP learns from it's stepchild DCS and introduces the glide racks it will be the PERFECT oven in the upper-midpriced class. Have you seen the famous Monogram vs FP oven thread? $4100 surprises me for the F&P. The older version was $3899 and when this one first came out, it was cheaper. I have had bad experience with JennAir... but that was before they were Whirlpool. I haven't heard much that good about them since, and if it's their new oven design, I'd still be wary about the new, unproven technology they're trying. My first F&P was a discounted model with full warranty I got through Ebay. It was a great deal and worked wonderfully, and the store backed me up really well, even though it was in Alabama and I'm in Washington... And I had no problems with F&P honoring the warranty for it. I can't speak for all online retailers, though, and didn't see that particular post. I will say that Elux has had some very good reviews here by people whose opinion I trust. Also, in my last oven hunt, one of the salesmen I spoke to used to work for Wolf and he called Wolf for me, mostly about the high heat pizza baking I do, with the oven door opening often, which was a huge problem for the Monogram oven. The engineer at Wolf said that Wolf would handle that job best, but as a more affordable-level 2nd choice (because of the testing of other brands they do there), he'd recommend Electrolux. (At that time, I didn't go that route, because Elux was just coming of electronic board problems which they claimed were fixed, but it wasn't long enough to know for sure. But I haven't heard about any board problems since then, so I guess they were right.) I really believe that either of these would probably perform pretty well.

The buttons were a problem, not because of how they look, but because they don't really 'seat' in anything behind the panel, so they tend to shift a little, so don't necessarily 'catch' and control things on the first try. Like spinning it and not getting any changes. Or the main button sticks and then the rest don't respond. If you try it a couple times, it will eventually work, but that shouldn't have to be the case. Just not a great design...Unless they've made a change. The one I had was one of the first of that style. As for 'clean'...It's a clean looking design, but mirrored black glass only stays that way with some work and constant attention. With the amount of baking we do and the number of kids working in my kitchen who don't pay that much attention to 'detailing' the appliances, I wasn't a fan. I can recommend it as having great baking performance, and the racks work nicely. I wouldn't recommend self-cleaning unless you don't mind the pits and chipping in the porcelain that may occur. I have to say they were great about replacing my first oven for that, and not all F&P ovens seem to have that problem, but having it happen twice to me, I'd just avoid self-cleaning. That's disappointing, since it should work and not damage the oven...but I think it's a risk. At least it didn't seem to fry the electronics as it did with earlier F&P ovens and other brands, which makes me think they learned from that and did something to make sure the electronics were protected during the high heat. I would buy the old F&P oven again (stainless front, blue interior), but one experience with the black mirror finish doors was enough for me. Too many finger prints and smears, and it doesn't take much of that to make it look yucky.

Oven cleaners will not physically damage the interior finish of a self-cleaning unit, which is a normal porcelain finish like manual-clean ovens. The reason chemical cleaners are not to be used on self-cleaners is that it's largely impossible to fully rinse away the cleaner, and the chemical residue can generate noxious/toxic fumes when a high-temp self-clean cycle is next run (the temp gets over 900F). Technically you can use oven cleaner, but a self-clean cycle should *never* be run again. The reports you've run across regarding damage to the finish after self-cleaning likely involved a factory flaw on the finish and should not occur as a matter of normal course. The electrical problems involve overheating in cases of electronic controls not being properly cooled, causing a thermal safety fuse to blow. Overheating also, of course, should not occur under normal usage and cleaning conditions. At least one brand had the overheating problem caused by the cooling blower being of insufficient capacity. Other instances could be caused by improper installation, particularly when wall ovens are involved since the unit is installed into a wall cavity. I've rarely heard of such problems with free-standing ranges.

boy, guys, I don't have a F&P oven, but I'm not so sure that there would be a problem. Temperature fluctuates over time within an oven, every oven. There is no single degree that an oven stays at all the time. Ovens heat up and then they cool down. To get the most stable temperature an oven has to be preheated so that all the metal elements are at approximately the same temperature as your target. This takes at least thirty minutes and no earlier, from what I've read on the board here. I don't know that I would be worrying too much about a ten degree difference at all.

Anyways, I've also gone back to using an analog thermometer because digital thermometers keep me watching too closely in my ovens. Warm up cycle, I can see a 25-50 degree difference. Once my oven is warm, the fluctuations around the middle shelf really aren't that significant. When you open the door, it will take any oven 5-10 minutes to recover temperature.

I've also come to believe that a lot of recipes don't have their times right for the approximate temperatures. Just read different recipes for the same type of cookie.

But again, using an analog thermometer gave me the chill pill I needed.

Preheat your oven at least 30 minutes.
The middle rack is going to have the median temp. High rack will be hotter, low rack will be much lower.
Expect heating & cooling cycles.
Watch your food cook - not all recipes gauge the cooking times accurately.

Sorry I can't help with a noisy fan or anything.

cfulton, I am sorry that I am just now reading your message. Do you still want to know? I think replacing the oven sensor took care of that. Andrea, I do know that oven temps fluctuate and that it takes time to preheat. But I still have a problem.

Just thought I should probably say that my oven is fixed.
It was something to do with the self cleaning element. The company paid for it, and the oven is working fine.

I have a problem with the oven fan starting by itself even with fan switch in the off position. F&P customer service tells me this is to keep the control panel cool.
Then why have a switch? Sounds like a fish story to me.
