30" or 36" induction cooktop???

I can't wait to ditch my 36" gas cooktop (see photo) for induction! Better cooking and a sleek, easy-to-clean surface! I'm looking at the Bosch models, including the new flex-induction line. As I don't think I have ever used all 5 burners at once, should I try to save some $ and gain a few more inches of counter space by choosing the 30"? Or, is it better to have more space on the cooktop itself? I have room for either and currently have a 36" cooktop. Thanks to all of you out there for advice!

If it isn't already pre wired, the new induction cooktop will need a new dedicated 220v/240v line run to it from your circuit breaker panel. That assumes there is room for the additional breaker the cooktop requires in the panel.
The next hurdle: will a 36" unit easily go into the space now occupied by the present cooktop or is some reworking or a new counter involved?
A little secret: need some more temp prep space sometimes before cooking starts? Just lay a Silpat over the part of the induction cooktop surface not in use at the moment to protect it.

You can also use the cooktop for extra counter space- I just put a silicone mat on top when I need space

The key is burner configuration on the 30 or 36

I've got a 27" electric oven beneath a 36" gas cooktop. My GC said the oven didn't actually need a cabinet at all, as long as the base it sits on is level and strong. He built a platform base, on which the oven stands. Then he mounted a panel on the front, with a cut-out exactly the size required in the oven installation instructions. This was sprayed to match my cabinets exactly. The oven just slid into the hole. The panel idea should answer both 1) and 2). However, my GC did suggest that if I wanted to make the whole thing look more integrated, he could cover the visible pieces of the panel with stainless steel (my oven is SS). It wasn't the look I wanted, so we didn't do it, but it could look good. 3) you need to check clearance distances carefully for each appliance: we ended up raising the countertop by about a half-inch in order to ensure the correct gap beneath the cooktop. Not an issue for me, but you need to check the clearance requirements, which will be in the installation instructions or the manufacturer's website.

Because of this board I bought a DeDetrich 5 burner and I couldn't be happier. I had to add a whole 60 amp circuit to my kitchen, but I've had the cooktop about 15 months and I love it. It has a sleek, shallow rim of stainless, which is very unobtrusive and looks great on my flamed black granite countertops (modern and Japanese kitchen, very minimal). I would never have found DeDetrich without you guys, or probably even have seriously considered induction, so thanks. When we remodeled I put in a gas line in the island just in case I regretted the induction decision, but fortunately I won't be needng it. I always do water-boiling demos for my fascinated friends at dinner parties. Puts a new spin on 'a watched pot never boils'.

Miele Induction Cooktop 30' or 36'

I had wanted 6 hobs so it was easy for me to choose the 5 hob over the 4 hob. Last summer when I was canning with my 21 qt. stainless steel water bath canner I called Miele directly to ask if it was ok that the bottom of pan was about 1" larger than the hob outline and they said it was not a problem. I've never asked about the smaller pans. I have a 30" oven under the 36" cooktop so the cabinet maker adjusted the top drawer fronts on either side of the oven so you cannot tell they are reconfigured on the inside. I had posted pics last year but if you'd like to see them, it's no problem for me to post them again. What other appliances or cabinets/drawers are on your 9' counter/cabinet run? Are you considering not centering it over the 30" and aligning one edge and having the other edge 6" past the cabinet below? I definitely understand your statement about not getting "swept away" by the bigger size - so easy to do. But with Miele, at least in my experience thus far, you can't go wrong and in my case, bigger was better because I'm like cotehele and many times use all the burners.

Don't forget the electrical requirements of what you are proposing. A 36" hob will need a new 50 amp circuit, while two 30" ones will need 2 circuits. Add in the two circuits for the wall ovens, and you are talking 4 brand new circuits that pull a LOT lot of power? How big is your current breaker box? Would you have to upsize the service to the home to be able to do this? You're talking at least 160 amps out of a standard 200 amp service here if the wall ovens only need 30 amp circuits. That's borderline doable even in a new home. In an older home, you'll probably need all new panel, and maybe even a new service drop from the pole.

Yes, double check for correct wiring and the correct amperage for the cooktop you want. They range from 30-50 amp requirements. I was very lucky that someone came out with a cooktop that required only 30 amps, since that's what I had!

I went from a 36" radiant to a 31" induction (Bosch) and don't miss the cooktop space, at all. For what it's worth, I cook at least one meal a day for a family of 5. So far, the most hobs in use at one time have been 3.

I replaced the countertop, so didn't have to work with the existing cut-out.

Love my cooktop and love how much cooler my kitchen is during meal prep! The hob configuration works very well for me, but that isn't a big deal if you go with Flexinduction.
