I went with the Profile double-oven gas: here are my reasons. I like the smaller-size top oven for daily use, and the lower oven will only be used on occasion, so I'm ok with its location. (There's no room for a wall oven in my tiny kitchen -- and I have no plans to tear out cabinets and rearrange.) I'm a good cook, and I honed my skills on low-end domestic ranges because that's what was available: I don't need a commercial range to cook what I like, and I'm too busy with other aspects of my life to change my cooking style now. I also prefer not to deal with "pro" level BTUS and the ventilation complications they might add. I also am not willing to give up self-cleaning ovens -- which puts many pro-style ranges out of contention. I liked the slide-in setup and the angled control-knob location on the Profile, so that, and the price advantage, led me to choose it over the Cafe. Re: price, I bought mine from a local dealer, and I got the price down a bit by asking them to meet the ajmadison.com price. They didn't quite get there, but I was willing to pay a little extra for local sales/delivery/service reliability. Everyone's situation is a little different, but I found that the Profile slide-in fits best with my kitchen and the way I use it.

Boopsie, Have you visited each cooktop in person? I ask because seeing appliances in person, pretending to cook, taking them apart and really going over them helped me when I finally chose our own. Is cleaning a huge priority for you? I ask because you might consider an induction cooktop. If I were buying a cooktop it would be an induction. They are SUPER easy to clean. If nothing more read up on this kind of cooktop to get a feel for how they work cleaning wise. This may be my own experience but I was not happy with the GE Profile cooktop gas on glass. I may have had an older version than what you are looking at. The burners were not sealed so food got into them and it was horrible to keep clean. Gas on Glass is usually easy to keep clean but I had to scrub with steel wool. The cooktop would click and click and click when no one was near it. It was a danger. Again mine was an older version but the entire nightmare of that cooktop has turned me off GE appliances. Which is a shame because GE does make some nice products. I have a GE induction range and an Electrolux single oven. Both ovens work well. Best to go to an appliance store and try a few. Many stores in my area have them ready for a trial. In MD, Bray and Scraff do as well as some smaller places in PA.

I have a Bosch dual fuel range (slide in) that is about 1" away from the wall/backsplash. I have never noticed it sticking out until I read this and then went to look, lol. It does, but if I've never noticed it, it doesn't bother me. The range itself is about 2 1/2" out from the base cabinetry. But I know what you mean if you want the 24" deep Thermador look. Personally, I would invest in an integrated refrigerator, using money saved from the Thermador and/or GE. The refrigerator is a much larger appliance and it's "sticking out" is more obvious than the counter height range. ("Counter depth" refrigerators also stick out; only fully integrated are flush.) I have 18" between the range and the next full height bank of cabinetry which includes a flush Thermador microwave/convection oven. The cabinetry sticks out 1" from the countertop and 2" from the 18" base cabinet farther than it should, a custom construction error I don't want to talk about. But that would be about the same as the space between your refrigerator and range if both "stick out." That 18" is good enough for my small Keurig and that's about it. It also has wall cabinetry above it because I used a hidden Zephry Pisa undercabinet range hood, so I don't have the "open" look you'll get from your range hood. That 18" of usable space is the same, however. We don't cook much at all (I hate it). I've had a Thermador dual fuel range and now this Bosch. Years ago, when I did have to cook, I had GE Monogram wall ovens and glass cooktop. Other than much preferring the gas, I can't think of major differences between all of them, or being unhappy with any of them.
