Need cooking advice for my new Wolf R364C charbroil/gas range
Comments (1)Have had Wolf with Charboiler for 7 years. I assume the design hasn't changed. Don't know if the "reverberator plate" is the same as my "blank off" plate, which is a small SS plate that you put on the IR honey comb to reduce the heat. For what we grill, usually don't use it to get a full sear (and does it ever sear). But, curiousity led me to buy another plate and cut it into about a 4" and 7" plate to give different heat levels and by putting one of the shorter ones towards the back for a two stage, front sear and rear cooler finishing part. Works pretty well. As for cleaning, we used to follow manual and put damp cloth over grid to soften it up, but saw in a Wolf cooking demonstration where they just put a shallow aluminum throw away backing pan right over the grid for about a 10" burnoff after grilling, and that pretty much vaporizes residue to a white dust. Then every few times just pop out the whole liner and get it with Bar Keepers Friend and a SS scrubbie in the sink. Hope this helps . . ....See MoreWolf cooktop/oven or Wolf 36" range

The main problem I'm having is I have to decide ASAP since the cabinetmaker will not start until I nail this down - he's supposed to start Monday and we're already 8 days behind schedule. The original plan was the Viking+Electrolux, and wiring has been done already. My original original plan was a cooktop + double ovens, but that didn't work out since there was no other place for the MW. So it was suggested to put the second oven under the cooktop. I convinced myself this was better in case either broke, I could replace each easier/cheaper - this may not be true. A couple days ago I thought, why not a Wolf range (since I was revisiting the whole thing) --- but with them being so expensive, and having to redo electrical --- I thought maybe it's easier just to go with the original plan. I'm glad you sent the info on the Bertazzoni since it looks like that cooktop would actually work with my oven -- I was worried I'd be limited since the Wolf cooktop plus some others will NOT work above the Electrolux oven. Comments (9)Do you use a griddle now? I would consider an overlay griddle instead of a built in. The one I have(Royal industries)is 15”x23” and is about 50% bigger than a 2 burner built in. I have a Wolf range. It can be bigger because it is made of heavy aluminum which has much better heat transfer properties than steel so heats more evenly. It comes in bare aluminum which seasons over time and nonstick. With a built in you have about half of the power, somewhere around 15K BTUs. You can set the griddle anywhere you want or you have the flexibility of using all six burners. I have picked up my griddle and put it in the oven. You can take it to the sink to clean. With the built in, you have a thermostat so you can repeatedly turn it in to a certain temperature and get that amount of heat. If you go this way, look how the different brands are built. Wolf uses an infrared burner to get a more even heat. The steel is twice as thick as BlueStar. BlueStar uses this burner on the RNB griddle. Comments (1)It is unclear what your cost limitations are, and whether you recognize that hood costs include ducting, a blower (internal or external), and an ability to meet flow rate (CFM) requirements for cooking plume containment. Further, the level of flow rate you need will likely require a source of make-up air (MUA) of minor or major complexity depending on myriad factors, starting with your existing combustion appliance configuration. Review of 'hood' and 'MUA' threads here is suggested. Ventilation out and in is not secondary to cooking unit acquisition, and can easily cost as much even on a budget. You might tour first the Wolf Design Guide for information on typical hood styles and sizes, and then offerings from Broan/Best/NuTone for lower cost counterparts. Keep in mind you will seldom get more than you pay for, and sometimes less, so a lower cost hood may have thinner sheet metal, less lovely welds, less effective baffles, and even potentially a less optimal grade of stainless steel.
